Are textura si gustul foarte apropiate de musacaua clasica cu carne, se face dintr-un kilogram de cartofi si un kilogram de ciuperci, iar varianta vegana se obtine usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta este una dintre retetele mele preferate de comfort food vegetarian. O fac atunci cand vreau ceva consistent, care satura intreaga familie, dar fara carne. Secretul aici sta in felul in care ciupercile, morcovul si ardeiul, maruntite la robot si sotate cu texturatul de soia, capata acea textura &#8220;carnoasa&#8221; care pacaleste chiar si pe cei mai mofturosi mancaciosi de la masa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti place sa experimentezi, incearca si reteta mea de musaca cu cartofi dulci: in loc de piure de cartofi obisnuiti, am folosit un strat de piure de cartofi dulci pentru o intorsatura unica a retetei clasice. Eu prefer aici cartofii cu coaja rosie pentru ca au un continut mai mare de amidon si dau un piure mai cremos si mai legat, exact ce vrei pentru cele doua straturi care trebuie sa-si tina forma la taiere. Cand ii cumperi, alege-i fermi, fara pete verzi si fara coltisori incoltiti. Foarte important: fierbe-i in cubulete si fa piureul fara sa adaugi apa, ca sa nu iasa apos &#8212; altfel straturile se inmoaie si musacaua nu se mai taie frumos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciuperci Champignon<\/strong> &#8212; tot 1 kg, inima acestei retete. Alege ciuperci cu palaria inchisa, ferma, fara zone maro umede sau lamele innegrite &#8212; acelea sunt deja trecute. Le tai in jumatati si le dai la robot impreuna cu morcovul si ardeiul. Ciupercile au foarte multa apa, asa ca, atunci cand le sotezi, lasa-le sa-si elimine lichidul si continua pana se evapora si incep sa se rumeneasca putin &#8212; aici se concentreaza gustul &#8220;umami&#8221; care da senzatia de carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Texturat de soia granule<\/strong> &#8212; 100 g. El aduce structura si &#8220;musculatura&#8221; umpluturii. Granulele se hidrateaza in timpul sotarii din lichidul eliberat de ciuperci si din condimente, deci nu trebuie inmuiate separat in aceasta reteta. Daca nu vrei sa folosesti texturat de soia, poti sa adaugi inca jumatate de kg de ciuperci plus 1 cana de pesmet &#8212; astfel inlocuiesti cele 100 g de granule.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Morcov si ardei gras rosu<\/strong> &#8212; un morcov ras si un ardei marunit. Acestea aduc dulceata naturala si culoare in umplutura. Le dau la robot impreuna cu ciupercile ca sa se distribuie uniform si sa nu ramana bucati mari care sa schimbe textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si verdeturile<\/strong> &#8212; 2 cepe medii taiate marunt, plus o legatura de marar si una de patrunjel tocate. Ceapa o adaug separat, taiata marunt, nu la robot, ca sa nu se faca pasta. Mararul si patrunjelul proaspete fac diferenta &#8212; le pun spre final, ca aroma sa nu se piarda complet la sotare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Oua sau substitutul vegan<\/strong> &#8212; 2 oua leaga umplutura. Pentru varianta vegana, le inlocuiesti cu 5 linguri de fulgi de drojdie inactiva (care adauga si gust umami) plus 4 linguri de tarate de psyllium, care absorb lichidul si leaga compozitia la fel ca ouale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; sare, 1\/2 lingurita piper macinat, 1 lingurita boia dulce, 1 lingurita cimbru si 2 linguri ulei de masline. Boia si cimbrul sunt cele care dau acel profil aromat de musaca traditionala, asa ca nu le sari.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fa piureul fara apa.<\/strong> Dupa ce fierbi cubuletele de cartofi, scurge-le bine si paseaza-le uscate. Cea mai frecventa greseala este sa lasi apa in piure &#8212; iese moale si straturile nu se mai tin la taiere.<\/li>\n<li><strong>Soteaza umplutura pana se evapora lichidul.<\/strong> Cele 10 minute de sotare nu sunt doar pentru gatire: vrei ca apa din ciuperci sa se evapore complet. Stii ca e gata cand amestecul nu mai &#8220;scuipa&#8221; lichid in tigaie si incepe sa se prinda usor de fund, capatand culoare.<\/li>\n<li><strong>Lasa musacaua sa se odihneasca.<\/strong> Nu o taia imediat ce o scoti din cuptor. Vei avea o umplutura si mai aromata de ciuperci.<\/li>\n<li><strong>Varianta vegana \/ de post:<\/strong> inlocuieste cele 2 oua cu 5 linguri de fulgi de drojdie inactiva plus 4 linguri de tarate de psyllium. Rezultatul leaga la fel de bine si aduce un plus de gust umami.<\/li>\n<li><strong>Cu cartofi dulci:<\/strong> inlocuieste o parte sau tot piureul de cartofi obisnuiti cu piure de cartofi dulci, pentru o nota usor dulce si o culoare frumoasa &#8212; asa cum fac in reteta mea de musaca cu cartofi dulci.<\/li>\n<li><strong>Mai multa textura:<\/strong> poti folosi un mix de ciuperci (Champignon plus pleurotus) pentru un gust mai intens si o muscatura mai consistenta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Musacaua se pastreaza foarte bine la frigider, intr-un recipient inchis, 3-4 zile, si chiar se intareste si capata mai mult gust a doua zi. O poti reincalzi in cuptor sau la tigaie pe foc mic. Pentru meal prep, o portionezi dupa ce s-a racit complet si o tii la rece &#8212; portiile isi pastreaza forma mult mai bine asa. Se poate si congela, taiata felii, pana la o luna; o dezgheti la frigider peste noapte inainte de reincalzire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele de comfort food cu cartofi si ciuperci, mai incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/placinta-ciobanului-cu-cartofi-dulci\/\">placinta ciobanului cu cartofi dulci<\/a>, <a href=\"https:\/\/gourmandelle.com\/ro\/musaca-de-dovlecei-cu-ciuperci\/\">musacaua de dovlecei cu ciuperci<\/a> sau <a
