Este desertul perfect de inceput de vara: arata spectaculos pe felie, are textura aerata si gust proaspat de capsuni, dar se face mai usor decat pare. Capsunile liofilizate sunt secretul aici: dau crema de un roz natural si o aroma intensa de capsuni, fara sa o subtieze cu apa asa cum ar face fructele proaspete. Rezultatul e o rulada de sezon, perfecta pentru zilele insorite.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie si de ce conteaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Blatul se bazeaza pe <strong>oua mari, cu albusurile si galbenusurile separate<\/strong>. Galbenusurile batute cu zahar dau structura si culoare, iar albusurile batute spuma sunt cele care fac blatul pufos si flexibil, suficient cat sa se ruleze fara sa crape. <strong>Faina pentru prajituri (cake flour)<\/strong> are continut mai mic de proteine decat faina obisnuita, deci blatul iese mai fraged si mai elastic. Daca nu gasesti, poti aproxima inlocuind o lingura de faina obisnuita din fiecare 8 linguri cu amidon.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praful de sfecla<\/strong> coloreaza usor blatul natural, fara coloranti artificiali. <strong>Extractul de migdale<\/strong> aduce o aroma fina care se potriveste superb cu capsunile, dar daca nu il ai poti folosi extract de vanilie. Motivul e simplu &#8212; cand blatul e cald, e flexibil si &#8220;isi aminteste&#8221; forma de rulou pe masura ce se raceste asa. Daca incerci sa rulezi un blat deja rece, glutenul si structura s-au fixat deja, iar blatul va crapa. Lasandu-l sa se raceasca complet rulat in prosop (aproximativ o ora), il &#8220;antrenezi&#8221; sa stea rulat, astfel incat la final, cu crema inauntru, sa nu se desfaca si sa nu plesneasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Zaharul pudra de pe prosop are un rol practic: impiedica blatul sa se lipeasca de material. Nu sari peste el, altfel risti sa rupi blatul cand desfaci prosopul.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca rulada sa iasa perfecta<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Bate albusurile doar pana la varfuri moi<\/strong>, nu mai mult. Daca le bati prea tare, blatul devine sfaramicios si crapa la rulat.<\/li><li><strong>Incorporeaza albusurile in trei reprize, cu miscari blande de jos in sus.<\/strong> Adaugi mai intai o treime ca sa &#8220;relaxezi&#8221; aluatul, apoi restul, ca sa pastrezi cat mai mult aer.<\/li><li><strong>Nu coace prea mult blatul.<\/strong> Zece minute sunt de obicei suficiente &#8212; e gata cand partea de sus e elastica la atingere si marginile incep abia sa se rumeneasca. Un blat uscat se rupe.<\/li><li><strong>Intinde crema in strat subtire si uniform<\/strong>, lasand circa 2 cm liberi la margini. Diferenta fata de capsunile proaspete e esentiala: <strong>liofilizatele nu contin apa<\/strong>, deci nu lasa frisca sa se inmoaie sau sa se separe, si concentreaza aroma de capsuni la maxim. De aceea crema iese roz natural si gustoasa, dar isi pastreaza textura ferma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gelatina hidratata si topita usor stabilizeaza frisca suplimentar. Trucul ca sa nu se faca cocoloase: <strong>amesteci mai intai o lingura de frisca batuta in gelatina topita<\/strong> ca sa egalezi temperaturile, apoi adaugi totul inapoi in bolul cu restul de frisca, cu mixerul pornit la viteza mica. Asa gelatina se distribuie uniform, fara sa se intareasca in fire.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum o pastrezi si pentru cat timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Dupa ce ai rulat-o cu crema, <strong>infasoara rulada strans in folie alimentara si tine-o la frigider cel putin 2 ore<\/strong>, ideal peste noapte. Acest pas nu e optional: racirea ajuta crema sa se fixeze si rulada sa se taie frumos, in felii curate. Se pastreaza la frigider 2-3 zile, mereu acoperita ca sa nu prinda mirosuri si sa nu se usuce blatul. Pentru servire, taie cu un cutit ascutit, sters intre felii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa o pregatesti din timp, rulada se preteaza foarte bine la make-ahead: o poti face cu o zi inainte si o scoti din frigider cu cateva minute inainte de servire.
