Sunt vegane, se pregatesc in doar 15 minute, iar restul muncii il face cuptorul. Imi place ca prepararea propriu-zisa dureaza un sfert de ora, dupa care pun tava in cuptor si ma ocup de altceva. E genul de masa la care nu trebuie sa stau cu ochii pe oala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru umplutura folosesc ciuperci pleurotus. Le aleg pentru ca au o textura mai carnoasa decat ciupercile champignon, asa ca umplutura se simte mai consistenta si mai apropiata de o tocanita decat de o garnitura usoara. Alege-i pe cei mici si fermi, de marime medie, pentru ca acestia au mai putine seminte si miezul mai compact. Dovleceii foarte mari sunt apososi si plini de seminte, iar barcutele se vor inmuia prea tare la cuptor. Cand ii scobesti, lasa un perete de aproximativ jumatate de centimetru, ca sa tina forma de barcuta si sa nu se rupa la coacere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile pleurotus<\/strong> &#8212; ai nevoie de 2 cani, tocate marunt. Le prefer pentru textura lor mai carnoasa, care da umpluturii consistenta. Cand le cumperi, cauta ciuperci cu palaria ferma, fara pete maro si fara zone umede sau alunecoase &#8212; acelea sunt deja trecute. Toaca-le marunt si uniform, ca sa se gateasca egal. Daca nu gasesti pleurotus, merg si ciupercile champignon, doar ca umplutura va fi putin mai moale.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Crema de cocos<\/strong> &#8212; ai nevoie de 1 cana de crema groasa, luata de la suprafata unei conserve de lapte de cocos racite peste noapte. Asta e cheia: la rece, grasimea se separa de apa si se aduna deasupra. Foloseste doar partea groasa, nu si apa de dedesubt, altfel umplutura va fi prea lichida si nu se va lega. Alege un lapte de cocos cat mai gras (cauta procentul de cocos pe eticheta), pentru ca dintr-unul subtire nu se aduna suficienta crema.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza vegana rasa<\/strong> &#8212; ai nevoie de un sfert de cana, presarata deasupra la final. Se adauga dupa coacere si se mai lasa doar 2 minute la foc mare, cat sa se inmoaie. Alege o branza vegana care se topeste bine (cele pe baza de ulei de cocos se comporta cel mai aproape de branza obisnuita). Daca esti lacto-vegetarian si nu tii post, poti folosi si o branza obisnuita rasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa, usturoiul si condimentele<\/strong> &#8212; o ceapa tocata si 2 catei de usturoi formeaza baza aromatica a umpluturii. La condimente folosesc oregano si cimbru, cate o lingurita din fiecare, plus sare si piper. Important: condimentele se adauga dupa ce opresti focul, ca sa isi pastreze aroma. Ardeiul rosu tocat si ceapa verde aduc culoare si prospetime.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Caleste ceapa pana devine translucida, nu rumena.<\/strong> Cand ceapa devine sticloasa si moale, e semn ca s-a indulcit &#8212; abia atunci adaugi usturoiul si ciupercile, ca sa nu se arda usturoiul si sa amareasca.<\/li>\n<li><strong>Lasa ciupercile sa-si elimine apa.<\/strong> Gateste-le aproximativ 10 minute la foc mic, amestecand din cand in cand. Stii ca sunt gata cand lichidul lasat de ele s-a evaporat si umplutura nu mai e apoasa &#8212; asa barcutele nu se vor inmuia.<\/li>\n<li><strong>Nu le tine mai mult de 35-40 de minute in cuptor.<\/strong> E greseala cea mai frecventa: lasate prea mult, dovleceii se usuca si pierd din suculenta. Verifica-le cu o furculita &#8212; sunt gata cand miezul cedeaza usor, dar barcuta isi tine inca forma.<\/li>\n<li><strong>Adauga branza la final, nu de la inceput.<\/strong> Daca o pui din start, se arde pana se coace dovlecelul. Reteta de baza ramane aceeasi, doar imbogatesti compozitia.<\/li>\n<li><strong>Cu rosii in umplutura<\/strong> &#8212; daca pui rosii tocate, mi se pare ca se potrivesc cel mai bine cu masline si busuioc sau patrunjel, in loc de cimbru.<\/li>\n<li><strong>Cu nuci pentru textura<\/strong> &#8212; o mana de nuci tocate da umpluturii crocant, iar putina nucsoara le scoate in evidenta aroma. E optional, insa ti-l recomand.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta asta merge de minune pentru meal prepping. Barcutele coapte se pastreaza la frigider, intr-un recipient inchis, 3-4 zile. Le reincalzesti cel mai bine in cuptor sau in air fryer, ca sa ramana ferme &#8212; la microunde se inmoaie putin, dar tot sunt bune. Poti pregati si umplutura din timp: o tii separat la rece 1-2 zile, iar in ziua mesei scobesti dovleceii, ii umpli si ii dai la cuptor proaspeti, ca sa nu lase apa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut reteta asta, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/vinete-umplute-cu-ciuperci-orez\/\">vinetele umplute cu ciuperci si orez<\/a>, care e cealalta reteta a mea preferata cand nu am chef sa gatesc. Pentru o varianta cu mai multe legume umplute, arunca un ochi peste <a href=\"https:\/\/gourmandelle.com\/ro\/ardei-umpluti\/\">ardeii umpluti<\/a>. Iar daca tot ai dovlecei in casa, <a href=\"https:\/\/gourmandelle.com\/ro\/musaca-de-dovlecei-cu-ciuperci\/\">musacaua de dovlecei cu ciuperci<\/a> foloseste aceleasi arome intr-un fel mai
