Se prepara din 3 oua, faina, mascarpone si coaja de lamaie, iar secretul unei rulade care nu crapa este sa o rulezi cat este inca fierbinte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta reteta a pornit dintr-o vacanta recenta in Grecia, de unde m-am intors cu pofta de arome de vara, luminoase si acrisoare. Voiam un desert care sa aduca prospetimea aceea estivala direct in bucatarie, asa ca am combinat un blat aerat de pandispan cu o crema cremoasa, intens parfumata cu lamaie proaspata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru mine, aceasta este rulada pe care o fac atunci cand vreau ceva care arata impresionant, dar nu cere ingrediente complicate. Coaja fin rasa de lamaie face toata diferenta &#8212; de aici vine aroma vibranta, nu doar din zeama. blatul se coace in doar 10 minute.<\/li>\n<li>O prajitura cu aspect impresionant pentru musafiri, fara ingrediente exotice sau tehnici complicate.<\/li>\n<li>Un final aromat si proaspat dupa o masa mai consistenta, cand vrei dulce, dar nu greoi.<\/li>\n<li>Un desert pe care il poti pregati din timp si pastra la frigider peste noapte.<\/li>\n<li>O ocazie de a folosi lamaile proaspete cat sunt in sezon, atunci cand aroma lor este la apogeu.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Blat aerat si elastic<\/strong> &#8212; albusurile batute spuma dau pandispanului structura care se ruleaza fara sa se rupa.<\/li>\n<li><strong>Crema fina de mascarpone<\/strong> &#8212; combinatia de mascarpone si frisca bate spre varfuri tari foarte repede si tine bine umplutura intre straturi.<\/li>\n<li><strong>Aroma intensa de lamaie<\/strong> &#8212; coaja rasa in blat si in crema aduce parfumul, iar zeama aduce aciditatea echilibrata.<\/li>\n<li><strong>Se face rapid<\/strong> &#8212; blatul are doar 10 minute de cuptor, restul timpului prajitura doar se raceste.<\/li>\n<li><strong>Ingrediente accesibile<\/strong> &#8212; folosesti 3 oua mari, cu albusurile si galbenusurile separate. Separa-le cat sunt reci, pentru ca albusurile se desprind mai curat de galbenus, dar bate-le la temperatura camerei, pentru ca asa incorporeaza mai mult aer si cresc in volum. Chiar si o urma de galbenus in albusuri le impiedica sa se bata spuma, asa ca lucreaza cu un bol curat si uscat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina cernuta<\/strong> &#8212; cele 70 g de faina se cern peste aluat ca sa nu ramana cocoloase si sa se incorporeze usor. Adaug-o cu blandete, fara sa amesteci excesiv, altfel dezvolti glutenul si blatul iese tare in loc de elastic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coaja de lamaie<\/strong> &#8212; aici sta aroma adevarata. Razi doar partea galbena, externa, a cojii, nu si stratul alb de dedesubt, care este amar. Alege lamai cu coaja parfumata, ferme la pipait, si spala-le bine inainte, mai ales daca nu sunt tratate special. Folosesti coaja atat in blat, cat si in crema.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mascarpone<\/strong> &#8212; cele 180 g de mascarpone dau cremei corpolenta si textura catifelata. Scoate-l din frigider cu putin timp inainte ca sa fie maleabil, dar nu il bate prea mult dupa ce l-ai adaugat, pentru ca mascarpone se poate taia daca este mixat excesiv.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Smantana pentru frisca<\/strong> &#8212; cele 100 g de smantana pentru frisca trebuie sa fie bine rece inainte de a o bate, altfel nu prinde volum. O bati pana la varfuri moi inainte sa adaugi mascarpone, lamaia si coaja, apoi continui pana la varfuri tari. Cardul noteaza ca se intampla destul de repede, asa ca stai aproape de mixer.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zeama de lamaie<\/strong> &#8212; o folosesti atat in crema, cat si in glazura. Aciditatea ei echilibreaza dulceata si scoate in evidenta aroma. Daca il lasi sa se raceasca intins, fibrele se fixeaza si crapa cand incerci sa il rulezi mai tarziu.<\/li>\n<li><strong>Nu coace prea mult blatul.<\/strong> Cele 10 minute sunt suficiente &#8212; stii ca este gata cand partea de sus este elastica la atingere si marginile incep sa se rumeneasca usor. Un blat supracopt devine uscat si fragil si nu se mai ruleaza.<\/li>\n<li><strong>Bate albusurile doar pana la varfuri moi.<\/strong> Adauga restul de zahar dupa ce albusurile au facut spuma si opreste-te cand varfurile se indoaie usor la varf. Daca le bati prea tare, devin granuloase si se incorporeaza greu in aluat.<\/li>\n<li><strong>Incorporeaza albusurile in trei reprize, cu miscari de jos in sus.<\/strong> Mai intai o treime, ca sa mai lasezi aluatul, apoi restul. De fapt, este unul dintre acele deserturi care castiga din odihna la rece &#8212; crema se aseaza, aromele se intrepatrund, iar feliile se taie mai curat a doua zi. Tine-o intr-o cutie inchisa sau invelita in folie, ca sa nu prinda mirosuri din frigider si sa nu se usuce blatul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, poti coace si rula blatul cu o zi inainte, lasandu-l rulat in prosop pana cand esti gata sa il umpli. Glazura o adaugi ideal cu cateva ore inainte de servire, ca sa arate proaspata.
