Se face usor acasa, iar tot secretul sta in echilibrul dintre acru, sarat, dulce si iute &#8212; exact ce iti aduce aminte de bucataria asiatica. Toate retetele lor sunt bogate in arome si pline de ingrediente interesante, iar banh mi chay este una dintre cele mai cunoscute retete de street food. Traditional, acest sandvis vietnamez se face cu carne de porc, insa eu l-am facut vegan folosind tofu, care preia superb marinada. Mie imi place foarte mult pentru ca este si nutritiv, dar are si relativ putine calorii pentru bogatia de nutrienti pe care ne-o ofera.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce pui in banh mi chay: ingredientele care conteaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un banh mi bun se sprijina pe cateva ingrediente-cheie, iar fiecare are rolul lui:<\/p>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Tofu extra-ferm, bine scurs<\/strong> &#8212; este proteina sandvisului. Cu cat scoti mai mult lichid din el, cu atat absoarbe mai bine marinada si se rumeneste mai frumos in tigaie.<\/li>\n<li><strong>Marinada<\/strong> din suc de lime, sos de soia sau tamari, sirop de artar, usturoi si boia dulce afumata &#8212; aici se construieste tot gustul: acru de la lime, umami de la soia, un pic de dulce de la sirop si nota afumata de la boia.<\/li>\n<li><strong>Muraturile rapide<\/strong> de morcov, ridiche Daikon si jalape\u00f1o, tinute in otet de vin alb si otet de orez cu putin zahar si sare &#8212; ele aduc aciditatea si crocanta care taie din bogatia tofu-ului.<\/li>\n<li><strong>Maioneza vegana cu sriracha<\/strong> &#8212; stratul cremos si iute care leaga totul.<\/li>\n<li><strong>Ierburile proaspete<\/strong> &#8212; coriandru si ceapa verde, plus castraveti feliati, pentru prospetime si aroma.<\/li>\n<li><strong>Bagheta proaspata<\/strong> &#8212; eu am folosit o bagheta simpla, iar cand am vrut ceva mai interesant, o bagheta cu seminte de in.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum marinezi si prajesti tofu ca sa iasa crocant<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Primul pas este sa scurgi si sa presezi tofu-ul, ca sa iasa cat mai mult lichid din el. Un tofu uscat prinde mai bine marinada si nu mai lasa apa in tigaie, asa ca se rumeneste in loc sa fiarba. Taie-l apoi in felii potrivite pentru sandvis si lasa-l la marinat peste noapte sau macar 15-20 de minute &#8212; cu cat sta mai mult, cu atat gustul patrunde mai adanc.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Incalzeste o tigaie de gratar la foc mediu si prajeste feliile de tofu aproximativ 4 minute pe fiecare parte, pana cand marginile devin un pic crocante si capata culoare. Nu le misca prea des in tigaie: lasa-le pe loc ca sa se formeze crusta, apoi intoarce-le o singura data. Intr-un castron combina otetul de vin alb si otetul de orez cu putina sare, un praf de zahar si, optional, un praf de turmeric pentru culoare. Adauga morcovii si ridichea Daikon date pe razatoare in fasii subtiri, impreuna cu jalape\u00f1o feliat, si lasa-le la murat cel putin 15 minute, de preferat peste noapte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De ce functioneaza: otetul inmoaie usor legumele si le patrunde cu aroma acrisoara, dar le pastreaza crocanta pentru ca stau la rece, nu la fiert. Zaharul echilibreaza aciditatea, iar sarea scoate putin din apa legumelor, asa ca raman fragede si vii. Acest contrast intre muraturile reci si acrisoare si tofu-ul cald si sarat este exact ce cauti intr-un banh mi reusit.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum asamblezi sandvisul vietnamez<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Intr-un castron mic amesteca maioneza vegana cu sriracha, pana obtii un sos cremos si iute. Taie bagheta proaspata in 4 bucati si apoi pe lung, si unge fiecare bucata cu sosul de maioneza. Asambleaza cele 4 sandvisuri adaugand, pe rand: tofu, legumele murate, castraveti proaspat feliati, ceapa verde si coriandru maruntit.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ordinea conteaza mai mult decat pare: maioneza ca prim strat izoleaza painea de umezeala muraturilor, asa ca bagheta ramane crocanta mai mult timp. Pentru varianta fara gluten va recomand Ciabattini de la Schar, care merg de minune si tin bine umplutura. Daca vrei un sandvis mai iute, mareste cantitatea de sriracha in maioneza sau lasa mai mult jalape\u00f1o in muraturi; daca il faci pentru copii, poti reduce sau scoate complet ardeiul iute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta se leaga foarte bine si de alte preparate din bucataria asiatica pe care le gasesti pe blog. Daca esti in cautare de mai multe preparate cu tofu, arunca o privire peste <a href=\"https:\/\/gourmandelle.com\/ro\/retete-cu-tofu\/\">colectia de retete cu tofu<\/a> sau invata baza in ghidul despre <a href=\"https:\/\/gourmandelle.com\/ro\/cum-sa-gatesti-cu-tofu\/\">cum sa gatesti cu tofu<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cat se pastreaza si cum il pregatesti din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Banh mi chay este perfect pentru meal prep, pentru ca aproape toate componentele se fac inainte. Tofu-ul marinat si prajit se pastreaza la frigider 3-4 zile intr-un recipient inchis, iar muraturile rezista bine cateva zile in borcan, in propria lor zeama &#8212; de fapt, devin si mai gustoase dupa o zi. Maioneza cu sriracha o poti amesteca din vreme si o tii la rece.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un singur sfat: asambleaza sandvisul abia inainte sa il mananci. Bagheta se inmoaie daca sta umpluta, asa ca pastreaza componentele separat si le combini pe loc. Astfel ai mereu un sandvis crocant, chiar si intr-o zi aglomerata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca incerci acest banh mi chay, spune-mi in comentarii cat de crocant ti-a iesit tofu-ul si cat de iute ai indraznit sa faci maioneza &#8212; si nu uita sa lasi si o nota retetei, ca sa stiu cum ti-a placut versiunea ta de sandvis vietnamez.<\/p>\n\n\n<div id=\"recipe\"><\/div><div
