Aluatul dospeste pana se dubleaza, apoi fiecare bucata se intinde subtire si se coace cateva minute pe fiecare parte, pana apar bule aurii. Iese moale pe interior si usor crocanta pe margini.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dupa multe retete indiene de dal si curry pe care le-am gatit de-a lungul timpului, naan a fost prima paine indiana pe care am preparat-o cu adevarat de la zero. Mi se parea ceva complicat, rezervat doar restaurantelor cu cuptor Tandoori, dar adevarul e ca se face simplu acasa. Este similara cu reteta mea mai veche de parathas, doar ca naan contine si drojdie si are nevoie de ceva timp de dospire &#8212; exact pasul care ii da textura aceea pufoasa si usor elastica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Indienii le coc de obicei in cuptoare Tandoori, la temperaturi foarte mari, insa merge foarte bine sa le faci si intr-o tigaie cu fundul mai gros, pe aragaz. Eu am folosit coriandru proaspat, cimbru si chimion, dar acesta e exact momentul in care te incurajez sa experimentezi cu gusturile tale preferate. este ingredientul care transforma naan dintr-o simpla lipie intr-o paine pufoasa. Verifica intotdeauna termenul de valabilitate, pentru ca drojdia veche nu mai are putere de dospire. Testul cel mai sigur este chiar primul pas: amestecata cu apa calda si zahar, trebuie sa devina spumoasa in 10-20 de minute. Daca nu face spuma, drojdia e moarta si painea nu va creste &#8212; mai bine reiei cu un plic nou.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa calda sau lapte vegetal cald<\/strong> &#8212; temperatura este aici totul. Lichidul trebuie sa fie cald si placut la atingere, in jur de 37-40 de grade, nu fierbinte. Apa prea fierbinte omoara drojdia, iar cea rece o adoarme si dospirea nu mai porneste. Daca folosesti lapte vegetal, painea iese cu o miez ceva mai bogata si o crusta mai aurie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina alba<\/strong> &#8212; foloseste o faina alba obisnuita pentru paine sau cea universala, cu un continut bun de gluten, care da elasticitatea necesara. Adauga faina treptat la framantat: aluatul de naan trebuie sa ramana usor lipicios si moale, nu uscat. Daca pui prea multa faina, painea iese deasa si tare in loc de pufoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurt vegan natural<\/strong> &#8212; aciditatea lui frageziste glutenul si da painii o textura moale, catifelata, asa cum gasesti la naanul clasic facut cu iaurt din lapte. Alege un iaurt vegan natural, fara zahar si fara arome, ca sa nu modifice gustul painii. Cel pe baza de soia sau cocos functioneaza foarte bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimion praf<\/strong> &#8212; da aroma calda, usor pamantie, specifica painii indiene. Daca ai chimion intreg, prajeste-l cateva secunde intr-o tigaie uscata si macina-l proaspat &#8212; aroma este incomparabil mai intensa decat la cel deja macinat. Atentie sa nu il confunzi cu chimenul, sunt condimente diferite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Verdeturi, condimente si unt vegan<\/strong> &#8212; eu am folosit coriandru proaspat, cimbru si chimion, dar tu poti experimenta cu gusturile tale preferate. Verdeturile se presara pe blat inainte de a intinde aluatul, ca sa se lipeasca bine de el. Aceasta este dovada ca drojdia e activa; daca sari peste pasul asta, risti o paine plata.<\/li>\n<li><strong>Lasa aluatul sa dospeasca cat e nevoie.<\/strong> Cele 2-4 ore de dospire nu sunt o sugestie, ci momentul in care se formeaza textura. Aluatul e gata cand s-a dublat in volum si e pufos la atingere &#8212; intr-o bucatarie rece va dura spre limita superioara.<\/li>\n<li><strong>Foloseste o tigaie cu fundul gros, bine incinsa.<\/strong> Pe foc mediu, painea trebuie sa se umfle si sa faca bule aurii. Stii ca e gata sa o intorci cand marginile aluatului devin uscate si incep sa apara bulele la suprafata.<\/li>\n<li><strong>Stropeste cu putina apa la intoarcere.<\/strong> Putina apa pe partea pe care o pui in tigaie ajuta aluatul sa nu se lipeasca si creeaza un mic abur care pastreaza naanul moale.<\/li>\n<li><strong>Nu intinde aluatul prea subtire.<\/strong> Daca il faci ca pe o foaie de placinta, pierzi pufoseala. Lasa lipiile sa se raceasca complet, apoi tine-le intr-o punga sau intr-un recipient etans la temperatura camerei timp de 1-2 zile. Pentru a le inviora, incalzeste-le cateva secunde intr-o tigaie uscata sau in cuptor &#8212; vor redeveni moi si parfumate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Naanul se congeleaza foarte bine: aseaza lipiile racite intre folii de copt si pune-le la congelator pana la o luna. Le poti incalzi direct, fara dezghetare. Aluatul poate fi pregatit si in avans &#8212; dupa prima dospire, il poti tine la frigider cateva ore si il scoti la temperatura camerei inainte de a-l portiona si coace.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac painile facute in casa, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/lipii-fara-gluten-cu-susan-la-tigaie-parathas-vegane\/\"><strong>lipiile parathas vegane<\/strong><\/a>, ruda fara drojdie a acestui naan, sau <a href=\"https:\/\/gourmandelle.com\/ro\/paine-umpluta-cu-branza-verdeturi\/\"><strong>painea umpluta cu branza si verdeturi<\/strong><\/a> pentru ceva mai consistent.
