Secretul este aluatul rece si subtire, nu unul gros. Se serveste imediat, cu sos de chili dulce sau sos de soia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Dupa Vietnam si India, a venit vremea sa explorez retetele Japoniei! Imi place la nebunie luna aceasta cu retete asiatice, parte din provocarea de a explora marile bucatarii ale lumii, si am descoperit o multime de retete pe care le-am transformat in delicii vegane. Am mai mancat tempura cu legume pana acum, insa niciodata nu am facut reteta acasa. Stiati ca tempura este de fapt o reteta cu origini portugheze, importata mai apoi de cultura japoneza? Da, si pe mine m-a socat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta mea de tempura cu legume este de fapt vegana. Taie-le in sticksuri de aproximativ 1 cm grosime, ca sa se prajeasca uniform si rapid. Daca le faci prea groase, exteriorul se rumeneste inainte ca interiorul sa apuce sa se gateasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Aquafaba<\/strong>, adica apa din conserva de naut, este inlocuitorul de ou din aluat. Bine batuta cu telul pana devine spumoasa, prinde aer si da volum aluatului, exact rolul pe care l-ar avea galbenusul intr-o tempura clasica. Foloseste-o rece, direct de la frigider.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium rasnite<\/strong> sunt al doilea jumatate al trucului vegan. Psyllium leaga aluatul si ii da acea elasticitate care, altfel, ar veni de la ou. O singura lingura este suficienta, pentru ca psyllium absoarbe lichid si se umfla.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa minerala rece<\/strong> nu este optionala. Bulele de dioxid de carbon din apa carbogazoasa ajuta aluatul sa ramana usor si aerat, iar temperatura scazuta opreste glutenul din faina sa se dezvolte prea mult. Asa obtii crusta aceea fina, dantelata, specifica tempurei, in loc de un strat gros si lipicios.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina alba si amidonul de porumb<\/strong> formeaza scheletul crustei. Amidonul reduce cantitatea de gluten din amestec, ceea ce face crusta mai crocanta si mai usoara. Da faina prin sita inainte sa o folosesti, ca sa nu ramana cocoloase in aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul pentru prajit<\/strong> trebuie sa fie unul neutru, care suporta temperaturi inalte. Contrastul dintre aluatul rece si uleiul fierbinte este exact ce face crusta sa iasa crocanta.<\/li>\n<li><strong>Nu bate aluatul prea mult.<\/strong> Amesteca doar pana ajunge la o consistenta ca de aluat de clatite. Daca insisti, activezi glutenul din faina si aluatul se ingroasa prea tare, iar crusta iese tare in loc de fina.<\/li>\n<li><strong>Verifica temperatura uleiului cu o bucata de proba.<\/strong> Daca bucata cade la fund si apoi se ridica la suprafata, uleiul e pregatit. Daca ramane sus tot timpul, e prea fierbinte. Daca nu ai termometru, asta este metoda cea mai sigura.<\/li>\n<li><strong>Treci legumele intai prin putina faina, apoi prin aluat.<\/strong> Stratul subtire de faina ajuta aluatul sa se prinda de leguma, in loc sa alunece in ulei.<\/li>\n<li><strong>Nu aglomera tigaia.<\/strong> Prajeste cate 3 bucati deodata. Daca pui prea multe, scade temperatura uleiului, tempura iese unsuroasa si bucatile risca sa se lipeasca intre ele.<\/li>\n<li><strong>Stii ca e gata<\/strong> cand crusta e aurie pe toate partile, dupa 1-2 minute pe o parte si inca un minut pe cealalta. Pe langa dovlecel, vinete si ardei capia, merg foarte bine si broccoli, conopida desfacuta in buchetele mici, fasolea verde sau feliile de cartof dulce. Important este sa le tai aproximativ la aceeasi grosime, ca sa se prajeasca in acelasi timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca nu ai apa minerala, poti folosi apa plata foarte rece, dar crusta nu va iesi la fel de aerata. Pentru sosuri, eu raman la combinatia clasica de sos de chili dulce si sos de soia sau tamari, dar tempura merge si simpla, doar cu un strop de sare.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Tempura este o reteta care se serveste imediat. Crusta crocanta isi pierde textura in cateva minute, asa ca ideal este sa o mananci direct din tigaie, calda. Daca totusi iti raman bucati, pastreaza-le la frigider intr-un recipient si reincalzeste-le in cuptor sau in air fryer la temperatura mare cateva minute, ca sa redevina cat de cat crocante.
