Se face in 15-20 de minute, din ingrediente putine. Regula esentiala: pasta miso nu se fierbe niciodata &#8212; se adauga dizolvata intr-un polonic de dashi fierbinte, dupa ce ai luat oala de pe foc. Fierberea distruge bacteriile benefice din miso si ii altereaza aroma. Dashi vegan se face din alge kombu (kelp uscat) lasate la infuzat in apa rece 30 minute, apoi incalzite la foc mic pana aproape de fierbere &#8212; nu fierbi algele, scoate kombu-ul inainte sa fiarba lichidul. Rezultatul este un lichid clar, cu gust subtil de mare, usor sarat. Fara dashi, supa miso isi pierde caracterul japonez autentic. O alternativa rapida: cuburi de dashi granulat vegan, disponibile in magazinele asiatice.<\/p><p><strong>Pasta miso<\/strong> &#8212; Produs fermentat din soia si cereale (orz sau orez), cu gust <a href=\"https:\/\/ro.wikipedia.org\/wiki\/Umami\"><strong>umami<\/strong><\/a> intens, sarat si complex. Exista trei tipuri principale: miso alb (shiro) &#8212; mai dulce si mai bland, fermentat mai scurt; miso galben (shinshu) &#8212; echilibrat, cel mai folosit in supa miso de zi cu zi; miso rosu (aka) &#8212; intens, sarat, fermentat mai lung, potrivit pentru supele mai robuste de iarna. Incepe cu miso alb sau galben daca e prima oara. Nu inlocui cu sos de soia &#8212; sunt produse complet diferite ca textura si profil de gust. Pasta miso se gaseste in magazinele de produse asiatice sau in sectiunile bio ale marilor supermarketuri.<\/p><p><strong>Tofu silken<\/strong> &#8212; Tofu cu textura cremoasa si moale, care se taie in cuburi mici direct in supa fara sa se sfarame. Nu folositi tofu ferm sau extra-ferm &#8212; se vor faramita si vor schimba textura supei. Tofu silken se gaseste in cutii de carton (nu necesita refrigerare pana la deschidere) sau in forme cu apa in sectiunile bio sau asiatice. Se adauga in supa fara gatit &#8212; tofu silken este gata de consumat, are nevoie doar sa se incalzeasca in lichidul cald.<\/p><p><strong>Algele wakame<\/strong> &#8212; Alge marine uscate care se rehidrateaza rapid in lichidul cald &#8212; 1-2 minute si isi tripleaza volumul. Foloseste o cantitate mica &#8212; wakame uscata arata putin, dar se extinde mult. O lingurita rasa de wakame uscata per portie este de obicei suficienta. Se gasesc in magazinele asiatice sau online. Daca nu gasesti wakame, poti omite sau inlocui cu nori (alge pentru sushi) taiat fasii.<\/p><p><strong>Ceapa verde<\/strong> &#8212; Taiata rondele subtiri si adaugata direct in bol la servire, nu in oala. Adauga-o dupa ce ai luat oala de pe foc, dizolvata intai intr-un polonic de dashi cald. Fierberea distruge bacteriile benefice si altereaza aroma &#8212; supa devine mai plata si mai amara.<\/li>\n<li>Dizolva pasta miso complet inainte de a o adauga in oala. Pune 2-3 linguri de dashi cald intr-un polonic mic, adauga pasta miso si amesteca pana se omogenizeaza complet, fara cocoloase, abia apoi toarna in oala.<\/li>\n<li>Adauga algele wakame uscate direct in dashi-ul fierbinte &#8212; se rehidrateaza in 1-2 minute. Nu le inmuia separat in apa inainte, se pierde din aroma lor marina.<\/li>\n<li>Gusta dupa ce ai adaugat pasta miso inainte de a adauga mai multa sare &#8212; miso este deja sarat. Ciupercile shiitake intensifica gustul umami si se potrivesc perfect cu miso. Lichidul de la rehidratarea ciupercilor uscate se poate adauga si el in supa pentru aroma extra. Inspiratie: <a href=\"https:\/\/gourmandelle.com\/ro\/tag\/retete-asiatice\/\"><strong>retete asiatice Gourmandelle<\/strong><\/a>.<\/p><p><strong>Cu spanac sau varza<\/strong> &#8212; Frunzele de spanac sau varza tocata marunt se adauga in dashi-ul fierbinte cu 2-3 minute inainte de a lua oala de pe foc. Se inmoaie rapid si adauga culoare verde si nutrienti suplimentari.<\/p><p><strong>Cu daikon sau morcovi<\/strong> &#8212; Radacinoasele se fierb separat pana sunt moi, apoi se adauga in supa. Nu le adauga crude direct in supa miso &#8212; dashi-ul nu fierbe suficient de lung ca sa le inmoaie.<\/p><p><strong>Fara tofu<\/strong> &#8212; Supa miso simpla, doar cu dashi, pasta miso, wakame si ceapa verde este si ea completa si traditionala. Adauga muguri de fasole sau ceapa verde in plus pentru textura.<\/p><p><strong>Supa miso de iarna<\/strong> &#8212; Foloseste pasta miso rosie (aka miso) in loc de miso alb sau galben, adauga ciuperci shiitake, daikon si tofu ferm (nu silken). Daca ai ramas cu supa, pastreaz-o la frigider maxim 2 zile intr-un recipient inchis si incalzeste-o la foc mic fara sa o fierbi.<\/p><p>Pentru preparare eficienta: fa dashi in avans (se pastreaza la frigider 5 zile sau se congeleaza 3 luni) si pastreaza-l separat de pasta miso. Cand vrei supa, incalzesti dashi-ul, adaugi ingredientele, iei de pe foc si dizolvi pasta miso proaspat in fiecare portie.
