Reteta mea anterioara de <a href=\"https:\/\/gourmandelle.com\/ro\/sushi-vegan\/\"><strong>sushi vegan<\/strong><\/a> continea tot felul de legume, insa de aceasta data am vrut sa incerc altceva si ca ingrediente, si ca mod de rulare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este prima oara cand fac sushi uramaki \/ California rolls si iti spun sincer: mereu am crezut ca e un procedeu complicat, insa m-am inselat. E mai greoi prima oara, dar dupa te obisnuiesti si prinzi ritmul. Am folosit tofu silken, ca tot imi ramasese de la <a href=\"https:\/\/gourmandelle.com\/ro\/supa-miso\/\"><strong>supa miso<\/strong><\/a>, dar poti sa folosesti orice alt tip de tofu. Mi se pare insa ca acesta e mai potrivit, avand o textura mai apropiata de reteta originala cu carne de crab. L-am combinat cu maioneza vegana si avocado, iar rezultatul a fost un deliciu!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce este, de fapt, sushiul uramaki (California rolls)<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Spre deosebire de maki-ul clasic, unde nori-ul ramane la exterior, la uramaki lucrurile sunt intoarse pe dos: orezul ajunge afara, iar foaia de alge inauntru. De aici si numele, \u201eura&#8221; insemnand \u201einvers&#8221; in japoneza. Practic, dupa ce intinzi orezul pe nori, presari seminte de susan si intorci totul, astfel incat orezul sa fie in exterior si nori-ul in contact cu umplutura. Cel obisnuit, cu bob lung, nu se leaga si ruloul se destrama la taiere.<\/li><li><strong>Tofu silken sau firm<\/strong> &#8212; eu prefer silken pentru textura lui matasoasa, apropiata de reteta originala. Daca vrei sticksuri care isi tin mai bine forma la rulare, mergi pe tofu firm.<\/li><li><strong>Avocado copt<\/strong> &#8212; cauta unul care cedeaza usor la apasare, dar nu e moale-lax. Un avocado tare nu se taie in fasii frumoase, iar unul prea copt se face piure.<\/li><li><strong>Maioneza vegana<\/strong> &#8212; da cremozitatea si \u201eliantul&#8221; dintre tofu si avocado. E ingredientul care leaga totul.<\/li><li><strong>Otet de orez, zahar si sare<\/strong> &#8212; amestecul care condimenteaza orezul si ii da gustul caracteristic de sushi, usor dulce-acrisor.<\/li><li><strong>Nori, seminte de susan, sos de soia sau tamari<\/strong> &#8212; baza aromatica. Pentru varianta fara gluten, alege tamari in loc de sos de soia clasic.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Secretul orezului perfect pentru sushi<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Orezul e temelia oricarui sushi reusit, asa ca merita atentie. Clateste-l in mai multe ape, pana cand apa scursa devine limpede, ca sa indepartezi excesul de amidon de la suprafata &#8212; altfel orezul iese pastos si prea lipicios. Dupa ce a fiert si a absorbit tot lichidul, toarna peste el amestecul de otet, zahar si sare si amesteca bland, cat sa se distribuie uniform. Otetul nu doar aromeaza, ci ajuta si la textura, dand boabelor acel luciu si acea coeziune care tin ruloul legat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Un detaliu important: lasa orezul sa se raceasca inainte sa incepi rularea. Cald, se lipeste de maini si de folie si e aproape imposibil de intins uniform. Eu il bag putin la frigider ca sa se raceasca mai repede.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum rulezi uramaki pas cu pas<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aici e partea care parea complicata, dar nu e. Acopera covorasul de sushi cu folie de plastic si aseaza foaia de nori deasupra, cu partea mai abraziva in sus. Intinde orezul uniform peste nori, presara semintele de susan, apoi pune inca o folie de plastic peste orez. Ajutandu-te de covoras si de folii, intoarce totul pe partea cealalta, astfel incat nori-ul sa ajunga sus si orezul jos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Indeparteaza folia de pe nori, intinde un strat subtire de maioneza vegana si aseaza avocado taiat pe lung si tofu in partea inferioara a foii. Ruleaza strans, apasand usor ca sa se lege bine. Daca totusi iti raman rulouri, pastreaza-le la frigider, intr-un recipient inchis ermetic, maximum o zi. Nu le tine la congelator &#8212; orezul de sushi si avocado-ul nu suporta bine decongelarea si isi schimba complet consistenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cateva sfaturi ca sa iti iasa din prima: tine mereu langa tine un bol cu apa in care sa iti umezesti mainile si cutitul, taie tofu si avocado in fasii cat mai regulate ca ruloul sa fie uniform, si nu incarca prea mult cu umplutura &#8212; daca pui prea mult, ruloul crapa la rulare.
