Este masa perfecta pentru serile in care vrei ceva satios, aromat si rapid, fara carne si fara produse de origine animala. Eu am facut varianta vegana de lo mein cu legume, ciuperci si tofu, pentru un plus de proteine. Face parte din <a href=\"https:\/\/gourmandelle.com\/ro\/tur-culinar-vegan-prin-bucatariile-lumii\/\"><strong>provocarea de a veganiza retete populare din diverse colturi ale lumii<\/strong><\/a>, iar rezultatul e o farfurie pe care o poti pune pe masa mai repede decat comanzi la restaurant.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Lo mein sau chow mein: care e diferenta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ambele preparate pornesc de la aceiasi taitei chinezesti din faina de grau, iar diferenta sta in tehnica de gatire. La <strong>lo mein<\/strong>, taiteii se fierb complet, apoi se amesteca usor cu legumele si sosul, asa ca ies moi si bine imbracati in sos. La <strong>chow mein<\/strong>, taiteii se prajesc mai agresiv in tigaie, ca sa capete margini crocante. Reteta de mai jos merge pe stilul lo mein, cu taitei moi si un sos generos, dar poti prelungi timpul in wok daca ii vrei mai rumeniti.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele si de ce conteaza fiecare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta se sprijina pe doua parti: sosul si stir fry-ul. Iata cateva lucruri de stiut inainte sa te apuci:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Taiteii<\/strong> &#8212; poti folosi taitei chinezesti de grau sau, la nevoie, spaghete obisnuite. Fierbe-i exact cat scrie pe ambalaj, pentru ca vor mai primi cateva secunde de caldura in wok.<\/li><li><strong>Sosul<\/strong> &#8212; combinatia de sos de peste vegan (sau sos de soia), zeama de lime, sirop de artar, usturoi si ghimbir da echilibrul acru-dulce-sarat. Pentru sos, am urmat aceasta reteta si am facut un sos de peste vegan.<\/li><li><strong>Faina de tapioca<\/strong> &#8212; rolul ei este sa lege sosul si sa il ingroase usor, ca sa se prinda de taitei in loc sa lase o balta pe fundul tigaii.<\/li><li><strong>Ciupercile shiitake<\/strong> &#8212; aduc gustul umami adanc, tipic bucatariei asiatice. Un sfat ar fi sa adaugati legumele in ordine, atunci cand faceti un stir fry, de la cele mai tari la cele care se gatesc mai usor. Asa, morcovul si prazul apuca sa se inmoaie, iar ardeiul gras ramane crocant, fara sa se transforme totul in aceeasi textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tine wok-ul bine incins inainte sa adaugi legumele si nu il aglomera: daca pui prea multe deodata, temperatura scade si legumele fierb in loc sa se saleze. Pastreaza ardeiul iute si verdeturile pentru final, presarate deasupra, ca sa isi pastreze aroma proaspata si sa poti doza cat de picant iese preparatul.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce se serveste lo mein-ul<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Lo mein-ul este suficient de consistent cat sa fie fel principal de sine statator, dar merge minunat intr-un meniu asiatic mai amplu. Cel mai bine se reincalzeste tot in tigaie, la foc mediu-mare, cu un strop de apa sau supa de legume, ca sa se desprinda taiteii si sa isi recapete textura. Evita microundele daca poti, pentru ca taiteii tind sa se lipeasca si sa devina cauciucosi.
