Se face la wok in mai putin de jumatate de ora si iese plin de culoare si arome.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Calatoria mea prin bucataria asiatica continua, iar Pad Thai a fost una dintre opririle pe care le asteptam cel mai mult. Reteta traditionala de Pad Thai contine si carne, insa varianta asta vegana mi se pare mai buna &#8212; legumele raman crocante, sosul are mai mult loc sa straluceasca, iar masa nu te lasa greu dupa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ce imi place cel mai mult la stir-fries e ca se fac extrem de rapid: in 20-30 de minute e gata masa. Mie imi place foarte mult Pad Thai cu ciuperci de urechi de lemn uscate &#8212; nu imi lipsesc din camara, pentru ca dau acea textura usor crocanta si gustul adanc, pamantos, care face diferenta. Nu ii fierbi ca pe pastele obisnuite, ci doar ii inmoi in apa fierbinte pana se hidrateaza si devin flexibili, dar inca putin fermi &#8212; se vor gati pana la capat in wok. Cauta taitei mai latiti, specifici pentru Pad Thai; daca ii lasi prea mult in apa, se lipesc si se transforma in terci, asa ca scurge-i imediat ce sunt elastici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciupercile urechi de lemn<\/strong> sunt ingredientul meu preferat aici. Le gasesti uscate, in pungute, la raionul asiatic sau in magazinele bio, si se rehidrateaza in cateva minute in apa fierbinte. Dau acea textura usor crocanta si un gust pamantos pe care alte ciuperci nu il au &#8212; de aceea nu imi lipsesc din camara. Cumpara-le intregi, nu pulbere, si clateste-le dupa hidratare ca sa scapi de eventualele impuritati.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sosul de soia sau tamari<\/strong> da sarea si adancimea umami a felului de mancare. Daca vrei varianta fara gluten, alege tamari, care de obicei nu contine grau. Adauga-l in sos, nu direct in wok, ca sa se distribuie uniform pe taitei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sriracha<\/strong> aduce iuteala si o usoara nota dulce-acrisoara. O lingura da o picanteala moderata; daca gatesti pentru cineva sensibil la iute, pune mai putin in sos si lasa fiecare sa adauge extra la final. Verifica eticheta daca tii la varianta complet vegana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sucul de lime<\/strong> este cel care lumineaza tot sosul. Foloseste lime proaspat stors, nu din sticluta &#8212; diferenta de prospetime se simte imediat. Aciditatea lui taie din dulceata zaharului si echilibreaza umami-ul sosului de soia.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun<\/strong> rotunjeste sosul si echilibreaza sarea si aciditatea. Nu il sari, chiar daca pare contraintuitiv intr-un fel de mancare sarat &#8212; fara el, sosul iese plat. Se dizolva usor cand amesteci ingredientele pentru sos intr-un bol mic, inainte sa il torni in wok.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Legumele si mugurii de fasole<\/strong> &#8212; morcov, ceapa, ardei galben, mazare verde &#8212; se taie fasii subtiri ca sa se gateasca repede si uniform la foc mare. Mugurii de fasole si patrunjelul se adauga aproape la final, ca sa ramana proaspeti si crocanti.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Pregateste totul inainte sa pornesti focul.<\/strong> Stir-fry-ul se gateste foarte repede la foc mare, asa ca taie toate legumele, fa sosul si hidrateaza taiteii inainte. Odata ce wok-ul s-a incins, nu mai ai timp sa tai morcovul.<\/li>\n<li><strong>Tine focul mediu spre mare.<\/strong> Acesta este secretul oricarui stir-fry reusit: legumele trebuie sa sfaraie si sa se gateasca repede, ramanand crocante. La foc mic se inmoaie si lasa apa, iar mancarea iese fiarta, nu prajita.<\/li>\n<li><strong>Nu hidrata taiteii prea mult.<\/strong> Ii vrei flexibili, dar inca putin fermi, pentru ca se vor gati final in wok. Daca devin moi si lipiciosi inca din apa, se vor face terci cand ii amesteci.<\/li>\n<li><strong>Adauga sosul cand legumele sunt aproape gata.<\/strong> Stii ca e momentul cand legumele s-au inmuiat usor, dar inca pocnesc &#8212; atunci torni sosul si apoi taiteii, ca sa prinda toti aroma fara sa fiarba in lichid.<\/li>\n<li><strong>Pastreaza mugurii de fasole pentru final.<\/strong> Ii adaugi la sfarsit, doar cat sa se incalzeasca, ca sa ramana crocanti. Reincalzeste-l rapid intr-o tigaie incinsa, nu la microunde, ca sa nu se inmoaie taiteii prea tare; daca s-au lipit, stropeste cu putina apa sau suc de lime ca sa se desfaca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, taie legumele si amesteca sosul cu o zi inainte si tine-le separat la frigider &#8212; asa stir-fry-ul efectiv dureaza doar cateva minute. Eu evit sa hidratez taiteii dinainte; ii fac doar in momentul gatitului, ca sa nu se lipeasca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut, exploreaza si alte retete din <a
