Se servesc alaturi de orez sau taitei si sunt complet vegane.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ador vinetele si cred ca ati observat deja asta din multitudinea de retete cu vinete de pe blog. Asa ca atunci cand am facut documentarea pentru retetele asiatice de luna aceasta si am descoperit aceasta reteta de vinete chinezesti cu sos de usturoi, am zis ca este obligatoriu sa o incerc. A urcat direct in topul retetelor mele preferate cu vinete, iar asta spune ceva, pentru ca am gatit vinete in zeci de feluri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A iesit perfect, de la textura vinetelor la sos si arome &#8212; totul mi-a placut la aceasta reteta. Metoda de gatire a fost un pic diferita fata de cum procedam eu la alte retete cu vinete: vinetele se sareaza inainte, ca sa iasa din ele lichidul acela amarui, iar apoi se tamponeaza cu un prosop de hartie ca sa se usuce. Mie nu mi s-au parut niciodata amare vinetele, dar poate fi si pentru ca mereu cumpar vinete mici si tinere, care sunt mai bune la gust si au putine seminte. vinetele sunt panate doar cu faina de tapioca.<\/li>\n<li>O idee buna de a folosi vinetele cand le gasesti mici si tinere in piata, in plin sezon.<\/li>\n<li>Un fel de mancare de post, fara produse de origine animala, perfect pentru cina sau pranzul de la birou.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Textura aceea cremoasa la interior<\/strong> &#8212; vinetele prajite corect se topesc pur si simplu, iar sararea dinainte si tamponarea fac toata diferenta.<\/li>\n<li><strong>Sosul lipicios de usturoi<\/strong> imbraca fiecare felie si capata luciu si consistenta de la faina de tapioca, exact cum gasesti la restaurantele asiatice.<\/li>\n<li><strong>Echilibrul perfect<\/strong> intre usturoi, ghimbir, sosul de soia sarat si dulceata fina a zaharului brun sau de cocos.<\/li>\n<li><strong>Ingrediente simple<\/strong>, pe care le ai probabil deja in casa, plus vinete proaspete din piata.<\/li>\n<li><strong>Se face complet vegan<\/strong>, fara compromisuri la gust &#8212; Eu prefer sa cumpar vinete mici si tinere &#8212; au coaja lucioasa, sunt grele in mana fata de marimea lor si au putine seminte, deci aproape ca nu sunt amare. Cele mari si vechi, cu coaja mata si zbarcita, au mai multe seminte si un gust mai amarui, motiv pentru care sararea dinainte conteaza si mai mult la ele. Pentru aceasta reteta ai nevoie de 3 vinete taiate felii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de tapioca<\/strong> are doua roluri aici: paneaz\u0103 feliile de vinete inainte de prajire, ca sa se rumeneasca frumos, si ingroasa sosul la final. Daca o gasesti greu, amidonul de porumb se comporta foarte asemanator. Important este sa acoperi cat mai uniform fiecare felie cu un strat subtire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul si ghimbirul<\/strong> sunt baza aromatica a sosului. Ai nevoie de 4 catei de usturoi presati si o lingurita de ghimbir presat. Sfatul meu: preseaza-le proaspete chiar inainte de gatit, pentru ca aroma lor se estompeaza repede daca le pregatesti din timp. Ghimbirul proaspat se curata cel mai usor cu marginea unei lingurite, nu cu cutitul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sosul de soia<\/strong> da savoarea sarata si umami a felului. In reteta intra 2 jumatate de linguri de sos de soia, plus o jumatate de lingura de sos de soia gros, optional, pentru o culoare mai inchisa si o textura mai catifelata. Daca vrei varianta fara gluten, alege un sos de soia tip tamari.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul brun sau de cocos<\/strong> echilibreaza sosul. Cele 2 lingurite nu fac mancarea dulce &#8212; doar rotunjesc gustul sarat si ajuta sosul sa capete acel luciu lipicios la final. Zaharul de cocos da o nota usor caramelizata, foarte placuta aici.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Semintele de susan, ceapa verde si patrunjelul<\/strong> sunt finisajul. Semintele de susan aduc o nota de prajit si putina crocanteala, iar ceapa verde si patrunjelul, presarate la final, dau prospetime si culoare. Scapi de lichidul amarui si, mai important, de excesul de apa &#8212; asa vinetele se prajesc, nu se fierb in propria umezeala, si capata textura aceea cremoasa la interior.<\/li>\n<li><strong>Prajeste vinetele intr-un singur strat.<\/strong> Daca aglomerezi tigaia, temperatura scade si feliile lasa apa in loc sa se rumeneasca. Lucreaza in transe daca e nevoie. Stii ca sunt gata cand sunt aurii pe ambele parti si moi cand le apesi usor, dupa aproximativ 10 minute.<\/li>\n<li><strong>Pregateste sosul inainte.<\/strong> Stir-fry-ul merge repede, asa ca amesteca toate ingredientele sosului intr-un bol mic inca de la inceput. Cand pui sosul peste vinetele calite cu usturoi si ghimbir, totul se leaga in cateva clipe.<\/li>\n<li><strong>Lasa sosul sa se ingroase.<\/strong> Dupa ce adaugi sosul peste vinete, amesteca usor pana cand faina de tapioca isi face treaba si sosul devine lucios si lipicios, imbracand fiecare felie. Acela e momentul sa opresti focul.<\/li>\n<li><strong>Serveste imediat.<\/strong> Vinetele chinezesti sunt cele mai bune calde, direct din wok, peste un bol de orez aburind. Pe masura ce stau, isi pierd din textura.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fara gluten:<\/strong> inlocuieste sosul de soia clasic cu tamari fara gluten. Daca iti raman, pastreaza-le intr-un recipient inchis ermetic la frigider, 2-3 zile. La reincalzire, foloseste o tigaie incinsa cateva minute, nu cuptorul cu microunde &#8212; asa recapata putin din textura. Tine cont ca, pe masura ce stau, vinetele se inmoaie si pierd din crocanteala panarii.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans, poti sara si tampona vinetele cu cateva ore inainte si poti amesteca sosul dinainte, ca sa nu mai ai decat de prajit si calit la momentul servirii.
