Se prepara rapid intr-o singura tigaie si se serveste cu orez. Este o reteta vegana, satioasa si plina de arome calde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ador dal-urile si curry-urile, si chiar daca imi place nautul la nebunie, pana acum nu stiu cum de am ratat ocazia sa fac aceasta mancare minunata. Chana masala a fost una dintre acele retete care imi statea pe lista de mult, dar pe care tot o amanam fara motiv. Acum, ca am facut-o, regret ca am asteptat atat: e exact genul de mancare care iese gata in mai putin de jumatate de ora si umple toata bucataria de un miros de condimente prajite care iti deschide pofta de mancare instant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Chana inseamna de fapt naut, asa ca numele retetei spune totul: e o mancare in care nautul e vedeta. Acest fel de mancare a aparut prima oara la granita dintre India si Pakistan, insa rapid s-a extins in ambele tari, iar astazi este cunoscut peste tot pentru explozia de arome pe care o ofera. Poti folosi naut din conserva, spalat si scurs bine sub jet de apa rece ca sa scapi de lichidul tulbure si sarat, sau naut fiert in casa. Daca alegi varianta fiarta, lasa-l sa fiarba pana e cu adevarat moale: un naut tare nu va apuca sa se patrunda de sos in cele 10 minute de gatit. Spala-l mereu inainte de a-l adauga, indiferent de varianta aleasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Semintele de chimion<\/strong> se prajesc uscate in tigaie, inainte de orice altceva. Acesta este pasul care face diferenta intre o mancare buna si una excelenta: caldura activeaza uleiurile aromatice din seminte si le scoate la suprafata gustul. Le vei sti gata cand incep sa se rumeneasca si sa pocneasca usor, iar mirosul devine cald si nucos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbirul proaspat<\/strong> ras face mult mai mult decat pudra uscata: aduce o nota picanta si vie pe care nimic altceva nu o inlocuieste. Cumpara o radacina ferma, cu pielita neteda si lucioasa, fara zbarcituri. Poti curata coaja foarte usor razand-o cu o lingurita, fara sa pierzi din miez.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoiul<\/strong> presat se adauga impreuna cu ceapa si ghimbirul. Foloseste catei proaspeti, nu pasta din borcan, daca vrei o aroma curata. Atentie sa nu il arzi: usturoiul ars devine amar si strica tot sosul, asa ca tine focul mediu si amesteca des.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mixul de condimente chana masala<\/strong> este sufletul retetei. Il gasesti in magazinele cu specific indian sau asiatic si in unele supermarketuri la raionul de condimente. E un amestec gata facut, echilibrat, asa ca nu trebuie sa dozezi zece condimente separat. Alaturi de el, coriandrul macinat si turmericul completeaza profilul aromatic si dau culoarea aurie caracteristica.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile decojite<\/strong> formeaza baza sosului. Eu folosesc rosii decojite feliate, care se desfac frumos la caldura si dau un sos catifelat. Daca folosesti rosii proaspete, oparit-le un minut si curata-le de coaja, ca sa nu ramana bucati tari in mancare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos<\/strong> da o nota subtila si se potriveste bine cu condimentele calde din reteta. Daca pui uleiul prea devreme, nu mai obtii acelasi gust intens.<\/li>\n<li><strong>Nu te grabi cu sotatul cepei.<\/strong> Cele 5 minute de sotat conteaza: ceapa trebuie sa devina moale si translucida, nu doar incalzita. Aici se construieste dulceata de baza a sosului.<\/li>\n<li><strong>Tine focul mediu cand adaugi condimentele.<\/strong> Condimentele macinate se ard repede pe foc mare si devin amare. Cateva minute pe foc potrivit, amestecand, sunt suficiente ca sa isi elibereze aroma.<\/li>\n<li><strong>Lasa mancarea sa fiarba lin macar 10 minute dupa ce adaugi rosiile si nautul.<\/strong> Mai mult e si mai bine. Stii ca e gata cand sosul s-a ingrosat, nu mai e apos, iar nautul a luat culoarea si gustul sosului.<\/li>\n<li><strong>Potriveste piperul cayenne treptat.<\/strong> Adauga putin, gusta, mai adauga. E mult mai usor sa faci mancarea mai picanta decat sa salvezi una in care ai pus prea mult dintr-o data.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Orezul:<\/strong> reteta foloseste orez rosu, dar merge la fel de bine cu orez basmati, asa cum se serveste in mod traditional chana masala. Basmatiul fiert si pufos absoarbe perfect sosul.<\/li>\n<li><strong>Mai cremos:<\/strong> daca vrei un sos mai catifelat si mai bogat, adauga spre final cateva linguri de lapte de cocos. Ba chiar devine mai gustoasa a doua zi, pentru ca aromele au timp sa se lege intre ele. Reincalzeste-o pe aragaz, la foc mic, cu putina apa daca s-a ingrosat prea tare. Sosul singur (fara orez) se poate si congela pana la 3 luni; orezul e mai bine sa il faci proaspat la servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele indiene, serveste chana masala alaturi de <a href=\"https:\/\/gourmandelle.com\/ro\/paine-naan-vegana\/\">paine naan vegana<\/a>, perfecta pentru a sterge tot sosul din farfurie.
