Sfatul meu este sa ii fierbi cu un minut mai putin decat scrie pe pachet si sa ii clatesti imediat sub apa rece. Asa nu se lipesc intre ei si raman cu o textura usor elastica, nu moi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Unt de arahide<\/strong> &#8212; cele 80 g de unt de arahide sunt inima sosului. Cauta o varianta cu un singur ingredient, doar arahide, fara zahar si fara ulei de palmier adaugat. Untul de arahide cu zahar va dezechilibra sosul, fiindca avem deja sirop de artar pentru dulceata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> &#8212; cele 250 g de tofu afumat aduc proteina si o aroma de fum care merge minunat cu sosul. Tofu afumat e deja ferm si condimentat, asa ca se rumeneste rapid. Daca il scoti din ambalaj umed, tamponeaza-l cu un servet de hartie inainte sa il pui in tigaie, ca sa se rumeneasca in loc sa fiarba.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sriracha<\/strong> &#8212; cele 2 linguri de sriracha dau iuteala si o nota acrisoara. Daca gatesti pentru copii sau pentru cineva sensibil la picant, incepe cu o lingura si gusta sosul inainte sa adaugi mai mult &#8212; e mult mai usor sa adaugi decat sa scoti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbir si usturoi<\/strong> &#8212; 1 lingura si jumatate de ghimbir ras proaspat plus 1 lingura de usturoi dau profunzime sosului. Ghimbirul proaspat, ras fin, face o diferenta uriasa fata de cel uscat. Cauta radacini ferme, cu pielea neteda si lucioasa, fara zbarcituri.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sirop de artar<\/strong> &#8212; cele 2 linguri de sirop de artar echilibreaza sarea din sosul de soia si iuteala din sriracha. Daca nu ai sirop de artar, merge si sirop de agave, dar artarul are o nota de caramel care se potriveste minunat cu arahidele.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Proceseaza sosul pana e fin<\/strong> &#8212; combina toate ingredientele sosului in robotul de bucatarie si continua sa le procesezi pana rezulta un sos omogen si cremos. Daca pare prea gros, adauga apa calda cate o lingura, pana curge usor de pe lingura.<\/li>\n<li><strong>Rumeneste tofu separat<\/strong> &#8212; prajeste tofu afumat intr-o tigaie aparte pana se rumeneste, apoi adauga-l la final peste legume. Daca il pui prea devreme, se faramiteaza in amestec si pierzi crusta crocanta.<\/li>\n<li><strong>Nu suprapuncta legumele<\/strong> &#8212; gateste ardeiul, ceapa si broccoliul la foc mediu si amesteca usor. Le vrei crocante, nu moi &#8212; stii ca sunt gata cand broccoliul a devenit verde aprins si inca scartaie usor sub furculita.<\/li>\n<li><strong>Clateste taieteii imediat<\/strong> &#8212; dupa ce ii fierbi, treci-i imediat prin apa rece ca sa opresti fierberea. Foloseste ce ai prin frigider, atata timp cat se taie subtire si se gateste repede.<\/li>\n<li><strong>Fara tofu<\/strong> &#8212; inlocuieste tofu afumat cu naut prajit sau edamame daca vrei alta sursa de proteine vegetala.<\/li>\n<li><strong>Alt sirop<\/strong> &#8212; in loc de sirop de artar poti folosi sirop de agave sau de curmale pentru dulceata.<\/li>\n<li><strong>Mai putin picant<\/strong> &#8212; redu sriracha la o lingura sau scoate-o complet si pastreaza doar ghimbirul si usturoiul pentru aroma.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Sosul de arahide se pastreaza la frigider intr-un borcan inchis pana la 5 zile, asa ca il poti face din timp &#8212; doar ca se ingroasa la rece, deci subtiaza-l cu putina apa calda inainte sa il folosesti. Taieteii si legumele se tin separat de sos, intr-o cutie etansa, 2-3 zile; asambleaza-le abia cand servesti, ca taieteii sa nu se imbibe complet.
