Aceasta varianta vegana inlocuieste carnea cu cuburi de texturat de soia si sosul de iaurt cu o pasta cremoasa de caju, pastrand toate aromele clasice de garam masala, turmeric si cardamom.<\/p>\n\n\n\n<p class=\"has-text-align-center wp-block-paragraph\"><em>Aceasta reteta de orez biryani are o textura cremoasa si o combinatie unica de condimente. Eu am testat varianta vegana de orez biryani, iar aceasta a devenit destul de populara pe blog. Sosul de iaurt l-am inlocuit cu o pasta de caju crud, iar carnea cu cuburi de texturat de soia, asa ca restul ingredientelor au ramas cam la fel ca in reteta originala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place mult texturatul de soia pentru ca imita foarte bine carnea &#8212; prinde aromele condimentelor si ramane cu o muscatura satisfacatoare, nu se faramiteaza ca alti inlocuitori. Singurul meu sfat ferm aici este sa aveti grija sa cumparati soia nemodificata genetic. Pune-l la inmuiat minim 2 ore inainte de fierbere; pasul acesta ajuta bobul sa se gateasca uniform si sa ramana pufos. Daca preferi o varianta integrala, orezul brun functioneaza la fel de bine, dar vei avea nevoie de putin mai mult timp de fierbere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Caju crud<\/strong> &#8212; inlocuieste sosul de iaurt si da textura cremoasa intregului preparat. Pune-l la inmuiat in apa pentru ca sa se inmoaie si sa se proceseze intr-o pasta fina. Cauta caju crud, nu prajit si nesarat, pentru ca pasta sa ramana neutra si sa preia aromele condimentelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Texturat de soia (cuburi)<\/strong> &#8212; este inlocuitorul de carne din aceasta reteta si imita foarte bine textura ei. Pune cuburile la inmuiat in apa pana se hidrateaza complet, apoi stoarce-le inainte de gatire. Important: alege soia nemodificata genetic si citeste eticheta inainte de cumparare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimente intregi (scortisoara, cuisoare, cardamom, dafin)<\/strong> &#8212; sunt sufletul unui biryani autentic. Se prajesc in ulei la inceput pentru ca grasimea sa extraga uleiurile aromatice, lucru pe care condimentele macinate nu il pot oferi in aceeasi masura. Foloseste un baton de scortisoara intreg si boabe de cardamom, nu pudra, pentru o aroma mai profunda.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Garam masala si turmeric<\/strong> &#8212; garam masala da caldura si complexitate, iar turmericul aduce culoarea aurie caracteristica si o nota usor pamantoasa. Cumpara-le din loturi cat mai proaspete; condimentele macinate isi pierd aroma in cateva luni, asa ca un borcan vechi va da un rezultat plat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos<\/strong> &#8212; rezista bine la temperaturile de prajire a condimentelor si adauga o nota subtila care se potriveste cu profilul indian. Daca nu ai, poti folosi un alt ulei neutru rezistent la caldura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa, usturoi si ghimbir<\/strong> &#8212; baza aromata a oricarui curry indian. Usturoiul si ghimbirul intra in pasta de caju, iar ceapa se prajeste separat pana devine aurie, ceea ce ii scoate dulceata naturala.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Prajeste semintele de chimion fara ulei intai.<\/strong> Le incingi pe tigaia uscata un minut, pana incep sa miroasa intens si capata o nuanta mai inchisa &#8212; asa stii ca aroma s-a activat. Abia apoi adaugi uleiul si restul condimentelor.<\/li>\n<li><strong>Nu lasa condimentele intregi prea mult pe foc.<\/strong> Greseala comuna este sa le arzi: cardamomul si cuisoarele devin amare daca stau peste un minut la foc mediu. Le rumenesti scurt, doar pana isi elibereaza parfumul.<\/li>\n<li><strong>Lasa orezul sa absoarba lichidul acoperit.<\/strong> Dupa fierbere, opreste focul si tine-l acoperit inca 10 minute. Asa bobul se termina de gatit la abur si ramane separat, nu lipicios. Daca a ramas lichid in exces, scurge-l printr-o strecuratoare.<\/li>\n<li><strong>Proceseaza pasta de caju fara apa, daca poti.<\/strong> O pasta densa da o textura mai cremoasa. Adauga 1-2 linguri de apa doar daca blenderul nu reuseste sa o macine fin.<\/li>\n<li><strong>Pastreaza cajul rumenit pentru final.<\/strong> Il adaugi la sfarsit, alaturi de orez, ca sa pastreze crocanta. Vei avea nevoie de putin mai multa apa si timp de fierbere.<\/li>\n<li><strong>Texturat de soia inlocuit cu naut sau ciuperci<\/strong> &#8212; daca vrei o varianta fara soia, nautul fiert sau ciupercile taiate cubulete aduc tot o textura satioasa.<\/li>\n<li><strong>Pasta de caju inlocuita cu iaurt vegetal<\/strong> &#8212; daca te grabesti, un iaurt vegetal natural simplifica pasul cu blenderul, desi pasta de caju da o crema mai bogata.<\/li>\n<li><strong>Ajusteaza pudra de chili<\/strong> &#8212; pune mai putina pentru un biryani bland sau mai multa daca iti place picant. Aroma de baza ramane neschimbata.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Orezul biryani se pastreaza foarte bine la frigider, intr-un recipient inchis etans, 3-4 zile. Aromele condimentelor se intensifica peste noapte, asa ca a doua zi este adesea chiar mai gustos. La reincalzire, adauga un strop de apa si acopera vasul, ca orezul sa nu se usuce &#8212; caldura cu abur il readuce la textura pufoasa initiala. Poti sa il congelezi portionat pana la 2 luni; lasa-l sa se dezghete la frigider inainte de reincalzire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu orez, mai am cateva pe
