Le-am gandit ca sa mearga la aproape orice combinatie de legume si proteine pe care o ai la indemana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ma intrebi pe mine, <strong>sosul de portocale si susan este preferatul meu<\/strong> &#8212; are exact echilibrul acela dulce-acrisor cu nota de susan prajit care face legumele simple sa para gatite la restaurant. Alege un mango care cedeaza usor la apasare si miroase dulce langa codita; daca e tare ca o piatra, lasa-l doua-trei zile pe blat sa se coaca, altfel sosul iese acrisor si fara dulceata aceea fina. Carnea coapta se paseaza la blender intr-o crema catifelata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbir proaspat<\/strong> &#8212; da nota vie si picanta sosului de ghimbir si usturoi. Cumpara o radacina ferma, cu coaja neteda si lucioasa; daca e zbarcita, e veche si fibroasa. Cel mai simplu o cureti razuind coaja cu marginea unei lingurite, apoi o razi fin &#8212; asa scapi de fibrele lemnoase care altfel raman in sos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sos de soia<\/strong> &#8212; baza sarata care apare in mai multe dintre sosuri. El aduce gustul &#8220;umami&#8221; care leaga totul; pentru ca e deja foarte sarat, gusta sosul inainte sa adaugi sare in plus. Daca tii la o varianta fara gluten, foloseste tamari in loc de sos de soia clasic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Seminte de susan prajite<\/strong> &#8212; ele dau aroma de aluna care face sosul de portocale si susan atat de bun. Daca le ai crude, prajeste-le cateva minute intr-o tigaie uscata, la foc mediu, scuturand des, pana incep sa miroasa si sa se rumeneasca usor &#8212; nu le scapa din ochi, trec foarte repede de la auriu la ars.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidon de porumb<\/strong> &#8212; e secretul sosurilor lipicioase, ca la restaurant. Cand il incalzesti in wok impreuna cu sosul, amidonul se umfla si ingroasa lichidul, asa ca acesta se prinde frumos de legume in loc sa curga pe fundul tigaii. Foloseste exact cantitatea din reteta: prea mult si sosul devine cleios.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de chili afumati (sau boia afumata)<\/strong> &#8212; inima sosului iute. Iuteala vine din ardeii iuti rosii curatati de seminte, iar nota afumata din fulgii sau boiaua afumata. Lasa-l sa se raceasca, apoi tine-l la rece.<\/li>\n<li><strong>La sosul iute, mixeaza fin, apoi adauga fulgii la final.<\/strong> Mai intai faci o pasta fina din usturoi, ardei iuti, suc de citrice si sos de soia, abia dupa aceea amesteci fulgii de chili afumat &#8212; asa pastrezi textura si aroma afumata distincta, fara sa o tocesti la blender.<\/li>\n<li><strong>La sosul cu ierburi nu mixa pana la pasta.<\/strong> Apasa pe Pulse de cateva ori, doar cat ierburile (menta, patrunjel, coriandru) se maruntesc.
