Dureaza maxim 30 de minute daca o faci de la zero si chiar sub 20 daca pornesti de la un mix de legume congelat. Eu recomand mixul pentru wok de la Mega Image si mereu am cateva pungi in congelator.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce pui in wok: ingredientele pe scurt<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Lista pare lunga, dar majoritatea sunt condimente si legume pe care le ai deja prin casa. Iata partile care chiar conteaza:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Soia cubulete<\/strong> &#8212; aceasta da proteina si &#8220;carnozitatea&#8221; felului de mancare. De obicei adaug texturat de soia bucati sau tofu pentru un plus de proteine, insa se poate face reteta si fara. Eu nu am o problema cu soia atata timp cat e nemodificata genetic, asa ca verific eticheta sa scrie &#8220;non-OMG&#8221;.<\/li><li><strong>Taiteii de orez<\/strong> &#8212; se rehidrateaza in apa calda, nu se fierb separat, ca sa nu se faca pasta. Daca nu gasesti, merg si taiteii din faina de grau pentru lo mein.<\/li><li><strong>Ciupercile urechi de lemn deshidratate si mugurii de bambus<\/strong> &#8212; aduc textura si nota autentica asiatica. Le gasesti la magazinele asiatice; daca lipsesc, poti folosi ciuperci proaspete feliate.<\/li><li><strong>Legumele crocante<\/strong> &#8212; broccoli, ardei gras, morcov, mazare pastai si porumb baby. Taie morcovul betigase subtiri si ardeiul fasii, ca sa se gateasca uniform si rapid.<\/li><li><strong>Sosul de soia<\/strong> &#8212; baza aromei sarate. E un pas pe care merita sa nu il sari: soia uscata are nevoie de timp ca sa se inmoaie la interior, taiteii de orez devin flexibili fara sa se lipeasca, iar ciupercile deshidratate isi recapata textura carnoasa. Daca le-ai arunca uscate direct in wok, ar ramane tari si ti-ar trage tot lichidul din vas. Cat se rehidrateaza, ai exact timpul sa tai legumele si sa pregatesti condimentele.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Secretul unui stir-fry reusit: focul mare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Un stir-fry bun se face pe foc mediu spre mare. Caldura puternica gateste legumele rapid, asa ca raman crocante si vii la culoare in loc sa se fiarba moi. Incinge bine uleiul inainte sa adaugi legumele, condimentele si amidonul de porumb, apoi amesteca des timp de 10 minute. Amidonul de porumb e cel care leaga sosul si ii da o textura usor lucioasa, catifelata, in loc sa lase un lichid apos pe fundul wok-ului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Greseala cea mai comuna e aglomerarea wok-ului: daca pui prea multe legume deodata, temperatura scade, ele lasa apa si se inabusa in loc sa se soteze. Verifica pe parcurs daca mai au nevoie de lichid si mai adauga apa daca s-a evaporat. Felul de mancare e gata cand soia este moale la interior si taiteii s-au gatit complet &#8212; asta mai dureaza inca aproximativ 5 minute. La final, scoate capacul, toarna sosul de soia si amesteca pe foc mare 2-3 minute, ca sa se reduca lichidul si aroma sa se concentreze. Taiteii de orez tind sa absoarba sosul peste noapte, asa ca la reincalzire stropeste cu putina apa si incalzeste rapid in wok sau in tigaie, pe foc mare, ca legumele sa nu se inmoaie prea tare. Nu il recomand pentru congelare, fiindca taiteii si legumele isi pierd textura la dezghetare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut combinatia de soia si legume, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/soia-kung-pao\/\">soia Kung Pao<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/snitele-de-soia-cu-verdeturi\/\">snitelele de soia cu verdeturi<\/a>.
