Bulgurul absoarbe tot lichidul si devine pufos, cu fiecare bob separat si aromat. Pentru pilaf se foloseste bulgur mediu sau grosier &#8212; bobul mai mare tine mai bine forma la fierbere si da o textura mai satisfacatoare. Bulgur fin se foloseste mai mult pentru tabouleh. Bulgurul nu necesita inmuiere in aceasta reteta &#8212; se gateste direct. Nu confunda cu grisul de grau sau cu couscous-ul, care sunt produse diferite cu timpi de preparare diferiti.<\/p><p><strong>Supa de legume<\/strong> &#8212; Lichidul in care fierbe bulgurul ii da cea mai mare parte din aroma. Foloseste supa de legume cu gust bun, fie facuta acasa, fie din cub de calitate. Raportul: 1 parte bulgur la 1,5-2 parti lichid (bulgurul absoarbe mai putin decat orezul). Supa sarata elimina nevoia de a sara suplimentar la final.<\/p><p><strong>Rosiile<\/strong> &#8212; Rosii proaspete taiate cubulete sau pulpa de rosii din conserva. Rosiile dau pilafuluii culoarea caracteristica si o aciditate usoara care echilibreaza ceapa sotata. Vara, rosii proaspete coapte in sezon. Iarna, conserva e varianta practica si consistenta ca gust.<\/p><p><strong>Condimentele<\/strong> &#8212; Chimionul si boia afumata sunt condimentele de baza ale pilaful turcesc. Chimionul da aroma terasa si calda specific Orientului Mijlociu; boia adauga culoare si dulcete. Scortisoara (un varf de lingurita) este optionala dar traditionala in pilaful turcesc autentic &#8212; da o nota calda si complexa care surprinde placut. Exact ca la orezul pentru pilaf &#8212; sotarea sigileaza suprafata boabelor, previne lipirea si adauga o aroma de nuca caracteristica.<\/li>\n<li>Adauga lichidul fierbinte, nu rece. Supa de legume incalzita in prealabil adaugata peste bulgur sotat scurteaza timpul de fierbere si previne socul termic care poate face boabele cleioase.<\/li>\n<li>Nu amesteca in timp ce fierbe. Dupa ce ai adaugat supa si ai adus la fierbere, da focul mic, pune capacul si nu mai deschide. Aburul face treaba &#8212; amestecatul elibereaza amidon si face pilaful lipicios.<\/li>\n<li>Repaus 5 minute dupa fierbere cu focul stins si capacul la loc. Aburul ramas termina de gati boabele de la suprafata. Dupa repaus, afaneaza cu furculita &#8212; nu cu lingura, care zdrobeste boabele.<\/li>\n<li>Gusta supa inainte de a o adauga si ajusteaza condimentele. Daca supa e bine condimentata, pilaful va fi bine condimentat fara sa mai trebuiasca sa adaugi sare la final.<\/li><\/ul><h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2><p><strong>Cu naut<\/strong> &#8212; Adauga o conserva de naut scursa si clatita in ultimele 5 minute de fierbere. Naut + bulgur este o combinatie clasica in bucataria turca si libaneza &#8212; proteine complete, satietate ridicata, fel principal complet fara alt efort.<\/p><p><strong>Cu legume coapte<\/strong> &#8212; Serveste pilaful sub legume coapte la cuptor: dovlecei, vinete, ardei, rosii. Pilaful absoarbe sucul legumelor si devine si mai aromat. O masa completa dintr-un singur cuptor.<\/p><p><strong>Cu verdeata abundenta<\/strong> &#8212; Adauga patrunjel tocat, menta proaspata si ceapa verde la servire pentru o varianta mai apropiata de tabbouleh cald. Zeama de lamaie stoarsa deasupra ridica intregul preparat.<\/p><p><strong>Pilaf turcesc cu vermicelli<\/strong> &#8212; Varianta clasica turceasca include vermicelli (taitei subtiri) prajiti in unt pana se rumenesc, apoi adaugati cu bulgurul la sotat. La reincalzire adauga 2-3 linguri de apa sau supa de legume si incalzeste la foc mic cu capacul pe oala, sau la microunde cu un capac. Fara lichid adaugat, bulgurul se usuca si devine sfarimicios la reincalzit.<\/p><p>Se congeleaza bine pana la 3 luni. Portioneaza inainte de congelare. Dezgheat la frigider sau direct la microunde cu putina apa adaugata. Pilaful de bulgur este o optiune excelenta de meal prep &#8212; isi mentine textura si aroma mai bine decat orezul dupa congelare si reincalzire.<\/p><p>Ca baza de bowl: prepara pilaf duminica si foloseste-l in combinatii diferite toata saptamana &#8212; cu legume coapte, cu naut condimentat, cu tofu la tigaie sau cu o salata de rosii si menta.<\/p><div id=\"recipe\"><\/div><div
