Eu prefer fasolea alba in locul nautului pentru ca rezulta o textura mult mai fina, fara sa fie nevoie sa decojesti boabele. Se face in cateva minute si iese de fiecare data catifelat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu chiar prefer fasolea alba cannellini in locul nautului pentru humus, deoarece rezulta o textura mult mai buna cu efort minim. Gustul ramane aproape identic cu cel clasic, pentru ca tahiniul, usturoiul, lamaia si chimionul fac toata treaba la nivel de aroma, dar textura este alta poveste: catifelata, perfect cremoasa, fara procedeul enervant de decojire a boabelor pe care il presupune humusul clasic din naut. Eu folosesc doua conserve de 400g pentru ca este rapid si comod. Cand cumperi fasole la conserva, alege variantele fara zahar adaugat si cu cat mai putin sare; verifica eticheta sa contina doar fasole, apa si eventual putina sare. Scurge bine lichidul (aquafaba) inainte de blenduire, altfel humusul iese prea apos. Daca preferi fasole uscata, las-o la inmuiat peste noapte si fierbe-o pana e foarte moale, ca sa obtii aceeasi textura fina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tahini<\/strong> &#8212; pasta de susan care da humusului profunzimea de aroma specifica. Cumpara un tahini cat mai fluid, de culoare deschisa, facut din susan decojit; cel inchis la culoare poate fi amarui. Inainte sa il folosesti, amesteca-l bine in borcan, pentru ca uleiul se separa la suprafata si partea de jos ramane prea densa. Eu adaug tahiniul abia la final, ca sa controlez mai bine textura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; trei catei dau o aroma frumoasa, fara sa fie agresiv. Foloseste catei proaspeti, fermi, fara coltisori verzi in mijloc (acel germen face usturoiul iute si amarui). Daca vrei un gust mai bland, poti folosi doar doi catei sau ii poti oparri cateva secunde.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Suc de lamaie<\/strong> &#8212; jumatate de lamaie, doar sucul. Foloseste lamaie proaspat stoarsa, nu suc din comert; aciditatea ei echilibreaza grasimea din tahini si ulei si scoate in evidenta gustul fasolei. Stoarce-o la final, dupa ce gusti, ca sa dozezi exact cat ai nevoie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> &#8212; trei linguri in humus plus un strop deasupra la servire. Alege un ulei extravirgin de calitate, pentru ca aroma lui se simte direct. Cel de deasupra, turnat in momentul servirii, da luciu si bogatie pastei.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimion macinat<\/strong> &#8212; jumatate de lingurita aduce nota calda, usor afumata, tipica humusului. Daca ai chimion intreg, prajeste-l cateva secunde intr-o tigaie uscata si macina-l proaspat; aroma este incomparabil mai intensa decat cea din pudra veche.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mix de seminte pentru salata<\/strong> &#8212; eu folosesc mixul de la Solaris, care contine seminte de pin, in, susan, floarea soarelui, dovleac si chia. Rumenite usor si presarate deasupra, dau crocant si contrasteaza placut cu textura cremoasa. Poti folosi orice amestec de seminte ai la indemana.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Blenduieste fasolea cu condimentele inainte de tahini.<\/strong> Pune fasolea, sucul de lamaie, sarea, usturoiul si chimionul si proceseaza pana obtii o crema fina; adaugi tahiniul abia cand textura este perfecta, ca sa il incorporezi fara sa il blenduiesti excesiv.<\/li>\n<li><strong>Adauga apa cu lingura, nu deodata.<\/strong> Una-doua linguri de apa sunt suficiente pentru o textura mai cremoasa. Daca torni prea mult dintr-o data, humusul devine prea moale si nu mai poti da inapoi.<\/li>\n<li><strong>Gusta si ajusteaza pe parcurs.<\/strong> Inainte de tahini, gusta si vezi daca mai are nevoie de usturoi, sare sau suc de lamaie. Fiecare lamaie si fiecare conserva de fasole sunt putin diferite.<\/li>\n<li><strong>Rumeneste semintele la foc redus.<\/strong> Intr-o tigaie mica, fara ulei, prajeste semintele la foc mic si amesteca des. Pentru a-l preparara in avans, fa pasta de baza si tine semintele rumenite separat, intr-un borcanel; le presari deasupra abia inainte de servire, ca sa ramana crocante. Daca s-a ingrosat in frigider, amesteca-l cu o lingura de apa sau de ulei de masline si revine la consistenta cremoasa. Nu recomand congelarea, pentru ca textura fina se modifica la dezghetare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa explorezi si alte variante, incearca <a
