Este saracioasa la cost, satioasa, complet vegana si gata in mai putin de o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am incercat prima oara aceasta reteta la un restaurant libanez si mi-a placut la nebunie. Nu prea sunt eu mare fan al lintei verzi, o prefer pe cea rosie, insa am cumparat linte verde special pentru reteta asta si ma bucur mult ca am facut-o. Cand am cautat-o ca s-o reproduc acasa, am gasit numai retete proaste care sigur nu aveau gustul autentic, si mi-am dat seama de asta numai din lista de ingrediente: lipseau condimentele care fac, de fapt, toata diferenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Asa ca am ajustat-o putin cat sa fie pe placul meu, iar rezultatul a fost exact asa cum mi-am dorit: ceapa dulce-afumata pe deasupra, lintea moale dar cu putin caracter dedesubt si orezul parfumat de scortisoara si ienibahar. lintea si orezul sunt printre cele mai accesibile ingrediente, iar reteta hraneste o familie intreaga la un cost mic.<\/li>\n<li><strong>O sursa buna de proteine vegetale<\/strong> &#8212; combinatia de linte si orez ofera un profil de aminoacizi mai complet decat fiecare ingredient luat separat.<\/li>\n<li><strong>O reteta de post<\/strong> &#8212; nu contine niciun produs de origine animala, deci se incadreaza perfect in zilele de post.<\/li>\n<li><strong>O mancare care se reincalzeste excelent<\/strong> &#8212; gusturile se aseaza peste noapte, asa ca este ideala pentru meal prep si pranzuri la pachet.<\/li>\n<li><strong>O introducere blanda in bucataria din Orientul Mijlociu<\/strong> &#8212; condimentele sunt calde si parfumate, nu iuti, deci place si copiilor.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Ceapa caramelizata crocanta<\/strong> face toata diferenta &#8212; trucul cu amidonul de porumb presarat peste ceapa inainte de prajit ii da o crusta aurie care ramane crocanta si dupa ce o pui peste linte.<\/li>\n<li><strong>Condimentele autentice<\/strong> &#8212; chimionul, coriandrul, scortisoara, ienibaharul si turmericul sunt exact ce lipsea din retetele false pe care le-am gasit online; ele dau gustul libanez adevarat.<\/li>\n<li><strong>Un singur fel de mancare complet<\/strong> &#8212; ai si carbohidrati, si proteine, si legume intr-o singura farfurie, fara garnituri suplimentare.<\/li>\n<li><strong>Texturi care se completeaza<\/strong> &#8212; lintea moale, orezul pufos si ceapa crocanta in acelasi os; este vedeta retetei tocmai pentru ca isi tine forma. Spre deosebire de lintea rosie, care se desface in pasta, cea verde si cea maro raman intregi dupa fierbere, exact ce iti trebuie aici. Cand cumperi, alege boabe uniforme ca marime, fara cele sparte, ca sa se fiarba in acelasi ritm. Nu este nevoie sa o lasi la inmuiat peste noapte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orez alb cu bob lung<\/strong> &#8212; bobul lung (basmati sau orez lung obisnuit) ramane separat si pufos, in timp ce un orez cu bob rotund s-ar lipi si ar deveni cremos. Clateste-l sub jet de apa rece pana cand apa iese limpede, ca sa scapi de amidonul de la suprafata care l-ar face cleios.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> &#8212; ai nevoie de patru cepe medii, taiate julienne (fasii subtiri). Cu cat o tai mai uniform, cu atat se caramelizeaza mai egal. Ceapa galbena obisnuita este alegerea ideala pentru ca are zaharuri suficiente cat sa se rumeneasca frumos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimion si coriandru boabe macinat<\/strong> &#8212; acestea sunt baza aromatica. Daca le ai sub forma de seminte intregi, prajeste-le scurt si macina-le proaspat; vei simti imediat diferenta de intensitate fata de cele cumparate deja macinate de luni de zile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara, ienibahar si turmeric<\/strong> &#8212; acest trio cald este semnatura mancarii. Scortisoara si ienibaharul aduc dulceata parfumata, iar turmericul da culoarea aurie discreta. Foloseste cantitatile din reteta cu incredere &#8212; par multe, dar impreuna sunt echilibrate, nu coplesitoare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Amidon de porumb<\/strong> &#8212; nu este pentru ingrosare, ci pentru ceapa: il presari peste fasiile de ceapa inainte de prajit ca sa formeze invelisul crocant. Asigura-te ca acoperi ceapa bine si uniform inainte sa o pui in uleiul incins.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Nu fierbe lintea complet.<\/strong> O fierbi 15-20 de minute doar pana se inmoaie, dar ramane putin ferma &#8212; urmeaza inca 15 minute de gatit alaturi de orez, iar daca o gatesti deja perfect acum, se va destrama in final.<\/li>\n<li><strong>Ceapa cere rabdare si foc mediu spre mare.<\/strong> Amesteca des cu o lingura de lemn ca sa nu se arda. Stii ca e gata cand fasiile sunt aurii si crocante, nu maro-inchis; ceapa arsa devine amara si strica tot vasul.<\/li>\n<li><strong>Sareaza ceapa imediat dupa ce o scoti din ulei,<\/strong> cat e fierbinte &#8212; asa prinde sarea cel mai bine si ramane crocanta intr-un bol separat pana o folosesti la final.<\/li>\n<li><strong>Rumeneste condimentele 1 minut inainte de orez.<\/strong> Caldura din tigaie le elibereaza uleiurile aromatice; daca le pui peste apa direct, gustul ramane plat. Merge la fel de bine ca gust.<\/li>\n<li><strong>Mai mult sau mai putin condimentat<\/strong> &#8212; daca iti plac aromele mai pronuntate, creste putin chimionul si scortisoara; pentru o varianta mai blanda, redu ienibaharul.<\/li>\n<li><strong>Cu un strop de aciditate<\/strong> &#8212; o lingura de suc de lamaie stors peste farfurie inainte de servire taie din dulceata cepei si inviorerza intregul fel.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Linte cu orez se pastreaza foarte bine: pune-o intr-un recipient inchis si tine-o la frigider 3-4 zile. De fapt, gustul se aseaza si devine mai bun a doua zi, deci este o reteta excelenta pentru meal prep. Tine ceapa caramelizata separat, intr-un alt recipient, ca sa ramana crocanta, si presar-o peste mancare abia la servire. Reincalzeste portia cu un strop de apa, la foc mic sau la microunde, ca orezul sa nu se usuce. Se poate si congela pana la 2 luni; decongeleaz-o in frigider peste noapte inainte de a o incalzi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti place sa gatesti cu linte, arunca o privire si peste <a href=\"https:\/\/gourmandelle.com\/ro\/dhal-mancare-de-linte\/\">reteta de dhal, mancare de linte<\/a>, sau peste <a href=\"https:\/\/gourmandelle.com\/ro\/pate-cremos-de-linte-rosie\/\">pateul cremos de linte rosie<\/a>.
