Are o iuteala placuta si o textura mai consistenta decat humusul simplu, gata in cateva minute la robot.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Humus Beiruti este reteta mea preferata de humus si recunosc ca am un mic slabiciune pentru tot ce e picant. Are o iuteala usoara si imi place foarte mult ca e plin de patrunjel proaspat tocat, care ii aduce un plus de prospetime si de textura. Spre deosebire de humusul simplu, aici fiecare lingura are mici bucatele de ardei si verdeata, asa ca nu e doar o pasta uniforma, ci ceva cu mult mai mult caracter.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">L-am facut prima data intr-o zi in care aveam chef de o adevarata masa libaneza: in aceeasi zi am pregatit si baba ganoush, si falafel in lipie, asa ca am organizat o petrecere mezze in toata regula pentru mine si Costin. Bucataria Orientului Mijlociu e de departe preferata mea, iar acest humus a fost vedeta mesei. Daca vrei un humus cat mai cremos, merita sa freci bobitele intre degete sub jet de apa si sa indepartezi pielitele subtiri: sunt cele care dau senzatia de granulos. Daca pleci de la naut uscat, lasa-l la inmuiat peste noapte si fierbe-l bine, pana se striveste usor intre degete.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tahini (pasta de susan)<\/strong> &#8212; e ingredientul care da humusului cremozitatea si gustul acela usor amarui, caracteristic. Cauta un tahini facut doar din susan, fara adaosuri, si amesteca-l bine in borcan inainte sa il masori, pentru ca uleiul se separa la suprafata. Un tahini de calitate, neamar, face toata diferenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Suc de lamaie<\/strong> &#8212; folosesc sucul de la o jumatate de lamaie, stors proaspat. Aciditatea lui echilibreaza grasimea din tahini si deschide gustul intregului humus. Te sfatuiesc sa storci lamaia chiar in momentul prepararii, nu sa folosesti suc imbuteliat, diferenta de aroma e mare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; trei catei dau o aroma frumoasa, fara sa acopere restul. Daca il pui crud direct in robot, asa cum fac eu, alege catei fermi, fara coltul verde din mijloc, care amaraste si lasa un gust intepator.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimion macinat<\/strong> &#8212; doar o jumatate de lingurita, dar e nelipsit din humus. Da acea nota calda, usor afumata, specifica bucatariei din Orientul Mijlociu. Daca ai chimion intreg, prajeste-l usor in tigaie uscata si macina-l pe loc &#8212; aroma e mult mai intensa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjel proaspat<\/strong> &#8212; cele cinci linguri de patrunjel tocat fin sunt sufletul acestui humus Beiruti. Foloseste doar frunzele, nu si codite, si toaca-le marunt cu un cutit bine ascutit, ca sa nu zdrobesti verdeata si sa o faci sa lase apa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardei gras rosu<\/strong> &#8212; o jumatate de ardei tocat foarte marunt aduce culoare, dulceata si textura. Conteaza foarte mult sa fie tocat fin, in bucatele mici, ca sa se distribuie uniform si sa nu ai colti mari de ardei crud in pasta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de chili<\/strong> &#8212; aici controlezi iuteala. Eu am pus doar o lingurita, dar poti pune mai mult in functie de preferinte si de rezistenta ta la iute. Eu l-am tinut chiar 5 minute. Stii ca e gata cand devine o crema neteda, fara bobite vizibile.<\/li>\n<li><strong>Adauga apa rece si cuburi de gheata.<\/strong> Cele 2-3 linguri de apa plus 2 cuburi de gheata procesate impreuna cu nautul fac humusul mai pufos si mai deschis la culoare. E micul truc care il transforma dintr-o pasta densa intr-o crema aerata.<\/li>\n<li><strong>Toaca patrunjelul si ardeiul cat mai fin.<\/strong> Aceasta e partea care iti ia cel mai mult timp, asa ca ai rabdare. Conteaza foarte mult sa fie tocate marunt, ca sa se integreze frumos si sa nu ai bucati mari intr-o lingura si nimic in alta.<\/li>\n<li><strong>Incorporeaza tahiniul la final, doar cu functia Pulse.<\/strong> 2-3 impulsuri scurte sunt suficiente cat sa il amesteci. Daca il bati prea mult, humusul se poate ingrosa si capata o textura usor lipicioasa.<\/li>\n<li><strong>Gusta de sare si lamaie inainte sa servesti.<\/strong> Nautul din conserva variaza ca sarare, asa ca potriveste la final. De fapt, gustul se imbunatateste dupa cateva ore, cand aromele de usturoi, chimion si chili apuca sa se lege intre ele &#8212; asa ca e perfect de facut in avans. Daca vrei sa il pregatesti din timp pentru o masa, fa baza de humus si pastreaz-o la rece, apoi incorporeaza patrunjelul, ardeiul si fulgii de chili chiar inainte de servire, ca verdeata sa ramana cat mai proaspata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca observi ca s-a ingrosat la frigider, amesteca-l cu putina apa rece sau cu un strop de ulei de masline ca sa revina la o textura cremoasa. Il poti si congela, in portii mici, pana la o luna, insa textura va fi putin mai granuloasa dupa decongelare. Inainte de a-l servi, lasa-l 10-15 minute la temperatura camerei si presara deasupra ulei de masline, ardei maruntit, fulgi de chili si patrunjel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca te-ai indragostit de humus la fel de tare ca mine, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/humus-simplu\/\">reteta de humus simplu<\/a> ca punct de plecare, apoi exploreaza si alte variante, precum <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-ardei-gras-copt\/\">humus cu ardei gras copt<\/a>.
