Aromata si versatila, seamana cu o pizza si se serveste la mic dejun, pranz sau cina.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cautand inspiratie pentru retetele orientale de luna aceasta, am descoperit aceasta reteta de Manakish Zaatar &#8212; o lipie delicioasa si condimentata care seamana foarte mult cu bine-cunoscuta pizza. Pentru mine, mancarea cu specific arab e plina de arome si are un gust special, asa ca luna in care am explorat bunatatile bucatariei Orientului Mijlociu a fost o experienta culinara de neuitat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am facut aceasta reteta de manakish cu faina normala de grau, insa daca ai intoleranta la gluten poti sa folosesti cu incredere mixurile Schar &#8212; recomand Mix B sau MixIt Universal &#8212; pe care le-am testat de nenumarate ori chiar si la lipii fara gluten. Cauta-l sub forma de pudra fina, de culoare visiniu intens &#8212; daca a virat spre maro deschis, inseamna ca e vechi si si-a pierdut din aciditate. Doua linguri sunt suficiente cat sa echilibreze ierburile fara sa domine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cimbrul si oregano<\/strong> sunt baza ierboasa a amestecului. Le folosesc uscate, asa cum cere zaatarul autentic, pentru ca isi pastreaza aroma concentrata la copt. Freaca-le usor intre palme inainte sa le amesteci &#8212; caldura mainilor elibereaza uleiurile aromatice si simti imediat cum se intensifica mirosul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Susanul usor prajit<\/strong> aduce textura si o nota de nuca. Prajeste-l intr-o tigaie uscata, la foc mediu, amestecand continuu pana devine auriu si incepe sa miroasa &#8212; e gata in 2-3 minute si trece de la perfect la ars in cateva secunde, asa ca nu il lasa nesupravegheat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> apare in trei roluri: in amestecul de zaatar, in aluat si pentru uns bolul la dospire. Foloseste unul extravirgin de calitate, pentru ca aici aroma lui se simte clar &#8212; el este liantul care transforma condimentele uscate intr-o pasta lucioasa, gata de intins pe lipie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Drojdia uscata activa<\/strong> da pufosenia aluatului. Activeaz-o in apa calduta cu zahar si asteapta sa faca spuma &#8212; daca dupa 10 minute nu apare spuma, drojdia e moarta si merita sa o iei de la capat. Apa trebuie sa fie calduta, nu fierbinte: peste 40C omori drojdia inainte sa apuce sa lucreze.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina alba<\/strong> formeaza structura lipiei. Daca ai intoleranta la gluten, am testat de nenumarate ori mixurile Schar &#8212; Mix B sau MixIt Universal &#8212; si ies excelent. La aluatul fara gluten te astepti la o textura usor mai lipicioasa, asa ca nu te grabi sa adaugi faina in plus.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>Framanta aluatul cele 10 minute intregi &#8212; asa se dezvolta glutenul si lipia iese elastica, nu sfaramicioasa. Stii ca e gata cand devine neted, elastic si nu se mai lipeste de maini.<\/li>\n<li>Lasa aluatul sa creasca intr-un loc cald, ferit de curent. Trebuie sa isi dubleze volumul intr-o ora; daca bucataria e racoroasa, pune bolul langa cuptorul incalzit usor.<\/li>\n<li>Incinge cuptorul complet la 200C inainte sa bagi lipiile. Un cuptor insuficient incins lasa aluatul sa se usuce in loc sa se rumeneasca rapid, iar lipia iese tare.<\/li>\n<li>Nu fi zgarcit cu zaatarul &#8212; 2-3 linguri pe fiecare lipie, intinse pana la margini. Stratul de condimente cu ulei e ce face manakish-ul, nu il trata ca pe un sos timid.<\/li>\n<li>Scoate lipiile cand marginile sunt aurii, in jur de 10 minute. Daca iti raman lipii, pastreaza-le intr-o punga sau recipient inchis, la temperatura camerei, 1-2 zile, si reincalzeste-le cateva minute in cuptor ca sa isi recapete textura. Le poti si congela, separate cu hartie de copt, apoi reincalzite direct la cuptor. Amestecul de zaatar uscat se pastreaza luni intregi intr-un borcan inchis ermetic, ferit de lumina, asa ca poti pregati o portie mai mare si sa o ai pregatita oricand.<\/p>\n\n\n\n<p
