Varianta de mai jos este 100% vegana: aluat simplu cu drojdie si o umplutura savuroasa de ciuperci, rosii, usturoi si boia afumata. Daca iubesti pizza, pide e modul perfect de a-ti varia rutina, cu un aer de bucatarie turceasca si fara niciun produs de origine animala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Este reteta de pide pe care am facut-o eu, dupa pofta de ceva nou. Practic, e ca un calzone desfacut: aluatul cu drojdie se ruleaza intr-o forma alungita, se pune umplutura la mijloc, iar marginile se impaturesc spre interior si se rasucesc la capete, dand forma aceea caracteristica de barcuta. Rezultatul seamana cu pizza, dar are textura proprie &#8212; aluat pufos pe dinauntru si margine crocanta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele care fac diferenta<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Aluatul e cat se poate de simplu: faina, drojdie uscata, putin zahar care hraneste drojdia, apa calduta, ulei de masline si sare. Restul magiei sta in umplutura. Ciupercile tocate marunt (500 g) sunt baza si dau saturatie, in timp ce ceapa si cei patru catei de usturoi construiesc aroma de fundal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Boiaua afumata si chimionul macinat sunt cele doua condimente care transforma umplutura dintr-un simplu sote de legume intr-o compozitie cu adevarat turceasca &#8212; da-le timp sa-si elibereze aroma in tigaie. Pentru cei carora le plac preparatele picante, ardeiul iute tocat marunt e optional, asa ca poti regla intensitatea cum vrei. Primul: lasarea aluatului la dospit o ora intr-un loc cald, pana isi dubleaza volumul &#8212; asta dezvolta glutenul si gazele care dau pufosenia. Daca grabesti pasul, aluatul ramane dens. Al doilea: umplutura se gateste separat, inainte de coacere. Sotarea ciupercilor si a legumelor scoate excesul de apa, ca pidele sa nu iasa umede, iar condimentele apuca sa se intrepatrunda. Astfel, in cuptor mai are loc doar coacerea aluatului, nu si gatitul umpluturii.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca sa iasa perfecte<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Verifica drojdia inainte de a o folosi: dupa cele 5 minute in apa calduta cu zahar trebuie sa faca spuma. Daca nu spumeaza, e moarta si aluatul nu va creste.<\/li><li>Apa sa fie calduta, nu fierbinte. Daca vrei sa le faci parte dintr-un meniu mai amplu, le poti aseza langa o salata simpla cu un <a href=\"https:\/\/gourmandelle.com\/ro\/dressing-pentru-salata\/\"><strong>dressing pentru salata<\/strong><\/a> proaspat care sa echilibreze aromele bogate ale umpluturii. Pentru o masa in stil turcesc, le poti combina cu alte preparate orientale, cum ar fi niste <a href=\"https:\/\/gourmandelle.com\/ro\/oua-turcesti\/\"><strong>oua turcesti<\/strong><\/a>. Sunt perfecte si ca <a href=\"https:\/\/gourmandelle.com\/ro\/idei-rapide-pentru-pranzul-la-birou-retete\/\"><strong>idee pentru pranzul la birou<\/strong><\/a>, pentru ca se mananca bine si la temperatura camerei.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pastrare si pregatire din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Pidele se pastreaza cel mai bine in frigider, intr-un recipient inchis, 2-3 zile. Le incalzesti in cuptor sau intr-o tigaie ca sa-si recapete crocanta marginii &#8212; microundele le inmoaie. Daca vrei sa le pregatesti din timp, poti gati umplutura cu o zi inainte si o tii la rece, iar a doua zi te ocupi doar de aluat. Aluatul, odata copt, suporta si congelarea: lasa pidele sa se raceasca complet, infasoara-le bine si tine-le la congelator pana la o luna.
