Se framanta, se odihnesc 30 de minute, apoi se coc la 180C pana se rumenesc usor. Rezultatul: biscuiti fragezi, parfumati si fara gluten.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu am mai folosit nautul in deserturi, asa ca nu mi s-a parut nimic neobisnuit la aceasta reteta. Faina de naut are aceeasi gandire ca leguminoasa intreaga: aduce o dulceata pamantie, usor de nuca, care se imbina perfect cu floralul apei de trandafiri si cu cardamomul. Asa am ajuns sa reproduc acasa biscuitii persani pe care ii vezi prin cofetariile din Orientul Mijlociu.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca te intrebi de unde ai mai vazut un astfel de aluat fin, fara ou si fara unt: secretul sta in uleiul de masline si in faina de naut, care impreuna dau o textura sfaramicioasa, ca de fursec persan clasic. Apropo, va place noul meu ibric de cupru din pozele de mai jos? Ea da biscuitilor gustul lor pamantiu, usor de nuca, si textura sfaramicioasa. Cand o cumperi, alege una macinata fin si cat mai proaspata, pentru ca faina de naut veche capata un gust amarui. Daca poti, miroase-o sau verifica data: trebuie sa aiba o aroma curata, de leguminoasa. Pastreaz-o intr-un recipient etans, ferit de umezeala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> inlocuieste untul si face ca aluatul sa fie vegan si fraged. Pentru un gust mai neutru, care lasa floralul trandafirului si cardamomul in prim-plan, alege un ulei de masline extravirgin mai bland, nu unul intens, iute si amarui. Masoara-l cu atentie: prea mult ulei face aluatul greu de format, prea putin il usuca.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cardamomul<\/strong> este condimentul care da personalitate biscuitilor. Cel mai bun este cardamomul rasnit chiar de tine din pastai verzi proaspete, pentru ca uleiurile aromate se evapora repede dupa macinare. Daca folosesti cardamom rasnit deja, cumpara-l in cantitate mica si pastreaza-l intr-un borcan inchis la culoare, departe de caldura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa de trandafiri<\/strong> aduce nota florala specifica deserturilor persane. Este un ingredient puternic, asa o lingura este suficienta: prea multa face biscuitii sa para parfumati ca un sapun. Cauta apa de trandafiri alimentara, pura, fara coloranti sau arome adaugate, in magazinele cu produse orientale sau la raionul de cofetarie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fisticul<\/strong> se presara deasupra inainte de coacere si aduce culoare, crocant si o aroma usor dulce. Foloseste fistic crud, necojit si nesarat, apoi toaca-l grosier ca sa-si pastreze textura. Aluatul de naut nu are gluten care sa-l lege, asa ca framantarea indelungata il omogenizeaza si il face suficient de compact ca sa formezi o minge.<\/li>\n<li><strong>Presara suprafata cu faina de naut, nu de grau.<\/strong> Cand intinzi aluatul la 5 mm, foloseste tot faina de naut, ca sa pastrezi reteta fara gluten si gustul curat.<\/li>\n<li><strong>Atentie la rumenire.<\/strong> Stii ca sunt gata cand marginile incep sa se coloreze usor, in 15-20 de minute. Biscuitii din faina de naut trec repede de la copti la arsi, asa ca stai langa cuptor in ultimele minute.<\/li>\n<li><strong>Lasa-i sa se raceasca pe tava.<\/strong> Cand ies din cuptor sunt inca moi si fragili. Se intaresc pe masura ce se racesc, asa ca rezista tentatiei de a-i muta imediat.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alte nuci in loc de fistic.<\/strong> Daca nu ai fistic, presara migdale, fulgi de cocos sau seminte de susan deasupra. Aroma se schimba, dar crocantul ramane.<\/li>\n<li><strong>Mai putin zahar.<\/strong> Cele 150 g de zahar dau un biscuit clasic de dulce. Poti reduce putin cantitatea daca preferi un desert mai discret, dar nu o elimina complet, pentru ca ajuta si la textura.<\/li>\n<li><strong>Joaca-te cu aromele.<\/strong> Pe langa cardamom, poti adauga un praf de scortisoara sau putina coaja de lamaie pentru un alt profil parfumat.<\/li>\n<li><strong>Forme diferite.<\/strong> Foloseste forme de biscuiti dupa ocazie: rotunde, in forma de floare sau decupaje festive. Fiind biscuiti uscati, copti, isi mentin textura fragezi cateva zile bune. Daca vrei sa-i pregatesti in avans, poti face aluatul cu o zi inainte: invelit bine in folie si tinut la frigider, va trebui doar sa-l lasi sa ajunga la temperatura camerei inainte sa-l intinzi.
