In varianta mea vegana, de post, blatul pufos din gris se face cu lapte de migdale, sirop de agave si zahar de cocos, apoi se imbiba intr-un sirop de lamaie cu apa de flori de portocal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am decis sa testez aceasta reteta dupa ce, cercetand retetele populare din Orientul Mijlociu, am descoperit Revani si Basbousa &#8212; doua prajituri cu gris delicioase, cu mici diferente intre ele. Am luat cate un pic de la fiecare, am veganizat reteta si am renuntat la zaharul alb in favoarea siropului de agave si a zaharului de cocos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Iaurtul si untul sunt ingrediente din reteta originala, insa eu am facut-o fara, in varianta de post, si a iesit foarte bun. Griul este faina grunjoasa obtinuta din grau dur, iar granulatia lui este cea care da prajiturii textura caracteristica, usor nisipoasa si densa. Cauta gris cu granulatie medie, nu fina ca faina; cel prea fin tinde sa lege blatul ca pe o budinca tare. Granulele de gris se umfla cand absorb lichidul si apoi siropul, de aceea prajitura ramane umeda fara sa devina cleioasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de migdale<\/strong> &#8212; lichidul care hidrateaza griul si inlocuieste laptele si iaurtul din varianta clasica. Alege un lapte de migdale neindulcit, ca sa controlezi tu dulceata din sirop si zahar de cocos. Daca ai doar lapte vegetal indulcit, redu putin alti indulcitori.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zahar de cocos si sirop de agave<\/strong> &#8212; duo-ul de indulcitori care apare atat in blat, cat si in sirop. Zaharul de cocos are o aroma usor caramelizata si o culoare inchisa, care da blatului o nuanta aurie. Siropul de agave este lichid si se dizolva usor, ideal pentru siropul de imbibat. Foloseste-le pe amandoua in cantitatile din reteta, ca echilibrul dintre dulce si aciditate sa fie corect.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos<\/strong> &#8212; inlocuieste untul din reteta originala si aduce fragezime. Foloseste-l moale, lasat la temperatura camerei, nu topit lichid si nu rece-solid, ca sa se incorporeze uniform in compozitie. Cu el ungi si forma de tort, ca prajitura sa se desprinda usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tarate de psyllium<\/strong> &#8212; liantul vegan al retetei. Psyllium-ul absoarbe lichidul si formeaza un gel care leaga compozitia in locul oualor. Adauga-l odata cu restul ingredientelor si lasa amestecul cateva minute, ca sa apuce sa-si faca efectul de legare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Coaja de portocale si apa de flori de portocal<\/strong> &#8212; sufletul aromat al prajiturii. Rade doar partea portocalie a cojii, nu si albul de dedesubt, care e amar. Apa de flori de portocal este intensa, asa ca lingura din reteta este suficienta; in plus, ea merge in sirop, ca parfumul sa patrunda in toata prajitura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fistic si migdale tocate<\/strong> &#8212; finisajul crocant de deasupra. Se presara la final, peste prajitura deja insiropata, ca sa ramana crocante. Contrastul de temperatura ajuta blatul sa absoarba siropul uniform, fara sa devina cleios.<\/li>\n<li><strong>Fa testul cu scobitoarea.<\/strong> Stii ca blatul e gata cand e auriu deasupra si scobitoarea infipta in mijloc iese curata, fara aluat lipit pe ea. Cuptoarele difera, asa ca verifica spre minutul 30.<\/li>\n<li><strong>Ai rabdare la absorbtie.<\/strong> Dupa ce torni siropul, las-o aproximativ 20 de minute sa-l absoarba complet. Pastreaza cantitatea de lichid din reteta.<\/li>\n<li><strong>Alti indulcitori.<\/strong> Siropul de agave poate fi inlocuit cu sirop de artar sau de orez; zaharul de cocos cu un alt zahar nerafinat. Aroma finala se va schimba usor.<\/li>\n<li><strong>Alte fructe oleaginoase deasupra.<\/strong> In loc de fistic si migdale poti folosi nuca, alune sau caju tocate &#8212; alege ce ai la indemana, pastrand finisajul crocant.<\/li>\n<li><strong>Mai mult parfum de citrice.<\/strong> Daca iti place puternic aromat, mareste putin coaja de portocala rasa; apa de flori de portocal o lasi insa la o lingura, pentru ca e intensa.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Prajitura cu gris se pastreaza foarte bine si chiar castiga in savoare dupa o zi, pe masura ce siropul patrunde si mai adanc in blat &#8212; motiv pentru care este o reteta excelenta de pregatit din timp. Tine-o acoperita, la frigider, 3-4 zile; scoate-o cu putin inainte de servire, ca sa nu fie rece. Tocmai pentru ca este insiropata, nu se usuca asa repede ca prajiturile uscate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac deserturile pe baza de gris, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/gris-cu-lapte-si-dulceata-coacaze\/\">gris cu lapte si dulceata de coacaze<\/a> sau, pentru o varianta sarata, <a href=\"https:\/\/gourmandelle.com\/ro\/budinca-sarata-cu-gris-upma\/\">budinca sarata cu gris (Upma)<\/a>. Iar daca te-au cucerit deserturile insiropate cu parfum de Orient, nu rata <a href=\"https:\/\/gourmandelle.com\/ro\/portokalopita-prajitura-cu-portocale\/\">Portokalopita &#8212; prajitura cu
