Se face rapid, e naturala si vegana, iar gustul afumat al vinetelor o transforma intr-un aperitiv racoritor, perfect alaturi de lipii calde. Am facut in trecut si o reteta similara, <a href=\"https:\/\/gourmandelle.com\/ro\/mutabal-salata-de-vinete-cu-tahini\/\">mutabal<\/a>, pe care multi o confunda cu baba ganoush. Sunt insa doua preparate diferite: mutabal este varianta mai simpla, cu tahini si uneori iaurt, pe cand baba ganoush nu contine tahini, ci verdeturi, rosie si uneori melasa de rodii. Daca ar fi sa aleg, desi imi plac amandoua, preferata mea ar fi baba ganoush. E mai fresh!<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce este baba ganoush si cu ce difera de salata de vinete<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Baba ganoush este, in esenta, o salata de vinete coapte imbogatita cu verdeturi si legume proaspete. Diferenta fata de salata de vinete clasica din bucataria romaneasca sta in doua lucruri: vinetele se coc pe flacara pentru gustul afumat pronuntat, iar amestecul primeste menta, patrunjel, ceapa, rosie si suc de lamaie. Asa rezulta un dip mai aromat si mai racoritor, cu note citrice si mediteraneene, nu doar cremos. Fata de mutabal, care mizeaza pe tahini si textura ultra-fina, baba ganoush pastreaza prospetimea verdeturilor si o urma de aciditate de la lamaie si rosie.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\" decoding=\"async\" width=\"1200\" height=\"1753\" src=\"https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe.jpg\" alt=\"Baba Ganoush reteta cu vinete\" class=\"wp-image-203121\" srcset=\"https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe.jpg 1200w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe-600x877.jpg 600w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe-308x450.jpg 308w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe-701x1024.jpg 701w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe-768x1122.jpg 768w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe-657x960.jpg 657w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe-739x1080.jpg 739w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe-821x1200.jpg 821w, https:\/\/gourmandelle.com\/wp-content\/uploads\/2018\/03\/baba-ganoush-recipe-150x219.jpg 150w\" sizes=\"auto, (max-width: 1200px) 100vw, 1200px\" \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele si de ce conteaza fiecare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta se bazeaza pe ingrediente simple, dar fiecare are un rol clar in echilibrul final:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Vinete medii<\/strong> &#8212; alege-le ferme, cu pielita lucioasa si fara pete moi; vinetele prea mari tind sa aiba multe seminte si un gust amarui.<\/li><li><strong>Usturoi<\/strong> &#8212; da caracterul; cei 4 catei pisati se simt, dar echilibreaza foarte bine gustul afumat.<\/li><li><strong>Suc de lamaie<\/strong> &#8212; aciditatea taie din onctuozitate si aduce prospetime; adauga-l treptat si potriveste dupa gust.<\/li><li><strong>Menta si patrunjel proaspat<\/strong> &#8212; verdeturile sunt semnatura acestui preparat fata de o salata de vinete obisnuita.<\/li><li><strong>Ceapa si rosie<\/strong> &#8212; tocate marunt, aduc textura si un plus de savoare proaspata.<\/li><li><strong>Ulei de masline<\/strong> &#8212; leaga totul si adauga catifelare; putin in plus deasupra, la servire, face diferenta.<\/li><li><strong>Melasa de rodii (optional)<\/strong> &#8212; cateva picaturi dau un contrast dulce-acrisor autentic, specific bucatariei din Orientul Mijlociu.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cum coci vinetele pentru gustul afumat<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul unui baba ganoush bun sta in coacerea vinetelor. Eu prefer varianta pe aragaz, direct pe flacara, pentru ca asa capata acel gust afumat inconfundabil pe care cuptorul nu il reda la fel de bine. Spala si usuca vinetele, apoi infige o furculita in ele de cateva ori, ca sa nu plesneasca de la aburul din interior. Acopera ochiul de aragaz cu folie de aluminiu ca sa nu il murdaresti, aseaza vinetele direct pe flacara medie si lasa-le 20-30 de minute, intorcandu-le pe fiecare parte o data la 5 minute pentru o coacere uniforma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Vinetele sunt gata cand pielita e complet innegrita si arsa, iar miezul e moale de tot, aproape ca se surpa la atingere. Scoate-le pe un tocator si curata pielita cat inca sunt fierbinti (ai grija, foloseste un cleste sau asteapta sa se mai raceasca). Nu te ingrijora daca raman mici urme de pielita arsa &#8212; ele adancesc gustul afumat. Merge minunat alaturi de alte preparate cu vinete de pe blog, daca vrei sa faci o masa completa in stil mediteranean: incearca-l langa <a href=\"https:\/\/gourmandelle.com\/ro\/humus-cu-vinete-marinate-la-borcan\/\">humus cu vinete marinate<\/a>, <a href=\"https:\/\/gourmandelle.com\/ro\/chiftelute-de-vinete-linte\/\">chiftelute de vinete cu linte<\/a> sau alaturi de <a href=\"https:\/\/gourmandelle.com\/ro\/crema-de-vinete-coapte-mousse\/\">crema de vinete coapte<\/a>, pentru un contrast frumos de texturi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru pastrare, tine baba ganoush intr-un recipient inchis ermetic, la frigider, si consuma-l in 2-3 zile. Aromele se aseaza si mai bine dupa cateva ore de racire, asa ca il poti pregati chiar cu o zi inainte.
