In varianta mea fac vinetele vegane: adaug soia granule pentru consistenta si presar branza vegana rasa la final. Daca esti vegetarian sau pur si simplu vrei un fel de mancare consistent care nu este cu nimic mai prejos decat o reteta cu carne, vinetele umplute sunt alegerea perfecta. Preparatul este popular nu doar in Turcia, ci si in Bulgaria, Grecia, Macedonia, Israel, Armenia, Albania si in mai multe tari arabe, fiecare cu mica lui variatie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta originala se face cu MULT ulei de masline, uneori chiar cu carne tocata in umplutura. Eu am pastrat profilul de arome, dar nu am adaugat cantitati industriale de ulei &#8212; mi se pare ca vinetele oricum absorb suficient si ies cremoase fara sa inoate in ulei. Tot din experienta iti spun ca soia granule e ideala aici: in ziua in care am facut reteta nu am gasit granule si am folosit cuburi, insa iti recomand sa folosesti granulele, pentru ca se inmoaie mai uniform si se integreaza mai bine in umplutura.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">E perfecta cand ai nevoie de<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li>un pr\u00e2nz sau o cina vegana consistenta, fara carne, dar la fel de satioasa<\/li>\n<li>sezonul vinetelor, cand sunt ieftine si pline de gust<\/li>\n<li>o masa care se incalzeste perfect a doua zi &#8212; aromele se aseaza si devin mai bune<\/li>\n<li>cand vrei sa impresionezi cu o reteta cu poveste, otomana si autentica<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vinetele<\/strong> sunt vedeta. Alege-le ferme, grele in mana, cu pielita lucioasa si codita verde si proaspata &#8212; semn ca sunt tinere si au mai putine seminte amare. Vinetele moi sau zbarcite vor avea miez spongios si gust amarui. Pentru aceasta reteta le tai longitudinal in jumatate si le scobesti miezul la aproximativ 3 cm adancime, ca sa ai loc pentru umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Soia granule<\/strong> dau corpolenta umpluturii si o fac satioasa fara carne. Se inmoaie in apa clocotita 10 minute, apoi se scurg bine. Granulele se hidrateaza mai uniform decat cuburile si preiau aromele din umplutura ca un burete, asa ca nu sari peste pasul de inmuiere.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile<\/strong> formeaza baza umpluturii. Curata-le si marunteste-le marunt, ca sa se topeasca in tigaie si sa lege totul intr-un sos. Vara, rosiile coapte natural fac diferenta; iarna, niste rosii bine coapte sau chiar din conserva functioneaza.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa si usturoiul<\/strong> sunt fundatia de aroma. Cele doua cepe maruntite se soteaza la inceput in ulei de masline, pana se inmoaie si devin dulci, iar usturoiul zdrobit se adauga dupa, ca sa nu se arda. Reteta foloseste atat usturoi proaspat, cat si usturoi pudra, pentru un strat dublu de gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; boia dulce, chimion macinat, menta uscata si patrunjelul proaspat &#8212; dau acel profil specific oriental. Chimionul si boia aduc caldura, menta uscata raceste si parfumeaza, iar patrunjelul tocat adauga prospetime la final. Ca multe preparate orientale, este chiar mai bun a doua zi, dupa ce aromele se aseaza. Il poti incalzi in cuptor la foc mic sau il poti servi rece, cum se obisnuieste de altfel in Turcia. Poti pregati umplutura cu o zi inainte si umple vinetele chiar inainte de coacere, ca sa castigi timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa explorezi si alte arome din aceeasi zona, arunca o privire peste retetele mele din <a href=\"https:\/\/gourmandelle.com\/ro\/bucataria-orientului-mijlociu\/\">bucataria Orientului Mijlociu<\/a>.
