Este o varianta fara carne, fara prajeli si fara sosuri greoaie, gata in mai putin de o ora.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Trebuie sa recunosc ca pe vremea cand mancam carne imi placea sa ma bucur din cand in cand de o saorma. Este preparatul de fast-food preferat al multor romani, si pe buna dreptate. Asa ca am vrut sa fac o varianta mai sanatoasa a clasicei saorma, fara prajeli, fara sosuri greoaie si, bineinteles, fara carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Secretul st\u0103 in ciupercile Portobello: marinate cu boia afumata si chimion, apoi rumenite la cuptor, capata o textura carnoasa si o aroma adanca, fumegoasa, care imita surprinzator de bine senzatia unei saorma clasice. Alege ciuperci mari, ferme, cu palaria intacta si fara pete moi sau zone umede; lamelele de dedesubt trebuie sa fie uscate, nu vascoase. Cu cat ciuperca e mai groasa, cu atat textura coapta va fi mai carnoasa. Daca nu gasesti Portobello, ciupercile pleurotus tinere functioneaza si ele, dar Portobello dau cea mai apropiata senzatie de carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia afumata<\/strong> &#8212; este ingredientul care face diferenta intre o ciuperca obisnuita si una care are gust de saorma. Cauta boia afumata adevarata (afumata pe lemn de stejar), nu boia dulce obisnuita coloranta &#8212; ar trebui sa miroasa a fum chiar si din borcan. O greseala frecventa este sa o inlocuiesti cu boia dulce: pierzi exact aroma care defineste preparatul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chimion, coriandru si celelalte condimente<\/strong> &#8212; impreuna formeaza profilul oriental al marinadei. Daca le ai sub forma de seminte, prajeste-le scurt intr-o tigaie uscata si macina-le proaspat: caldura elibereaza uleiurile aromate si aroma este vizibil mai intensa decat la pudra cumparata de mult.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Iaurt vegan<\/strong> &#8212; baza sosului alb. Alege un iaurt vegan nedulce si cat mai gros (cel pe baza de soia sau de cocos cu textura densa merge cel mai bine); unul prea apos va lasa sosul sa curga din lipie. Sucul de lamaie il acreste placut si echilibreaza aroma fumegoasa a ciupercilor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Hummus<\/strong> &#8212; se intinde pe lipie inainte de orice altceva si are rol dublu: aduce cremozitate si, in acelasi timp, sigileaza lipia astfel incat sa nu se umezeasca de la legume. Un hummus de casa, cu tahini, este mult mai aromat decat cel cumparat, dar oricare varianta merge.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaatar<\/strong> &#8212; amestecul de cimbru, susan si sumac presarat peste hummus aduce o nota acrisoara si parfumata care leaga totul. Daca nu l-ai mai folosit, presara-l usor la inceput &#8212; sumacul poate fi destul de puternic.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lipii mari, rosii, castravete si salata<\/strong> &#8212; alege lipii cat mai mari si flexibile, ca sa poti rula fara sa se rupa. Stii ca sunt gata cand marginile s-au inchis la culoare si s-au intarit putin.<\/li>\n<li><strong>Lasa ciupercile sa-si piarda apa.<\/strong> Portobello elimina mult lichid la copt; coace-le intr-un singur strat, nu ingramadite, altfel se vor fierbe in propriul suc in loc sa se rumeneasca.<\/li>\n<li><strong>Incalzeste lipiile inainte de rulare.<\/strong> O lipie rece se rupe; tine-o cateva secunde pe o tigaie uscata sau in cuptor si devine moale si flexibila.<\/li>\n<li><strong>Nu supraincarca lipia.<\/strong> Tentatia e mare, dar o saorma prea plina nu se ruleaza si se desface. Ciupercile coapte se tin la frigider, intr-un recipient inchis, 3-4 zile; le reincalzesti scurt in tigaie sau in cuptor inainte de servire, ca sa-si recapete textura. Sosul alb se pastreaza la fel, 3-4 zile, intr-un borcan inchis. Legumele le tai proaspat in ziua in care servesti, ca sa ramana crocante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru o saorma reusita, asambleaza-o abia in momentul in care o mananci &#8212; daca o lasi rulata, lipia se umezeste de la legume si sos. Daca pregatesti pentru mai multe persoane, aseaza toate componentele pe masa si lasa fiecare sa-si ruleze propria portie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut aceasta reteta
