{"id":20161,"date":"2018-03-07T19:01:10","date_gmt":"2018-03-07T17:01:10","guid":{"rendered":"https:\/\/gourmandelle.com\/?p=20161\/"},"modified":"2026-06-11T15:49:43","modified_gmt":"2026-06-11T13:49:43","slug":"ceapa-umpluta-rumenita-la-cuptor","status":"publish","type":"post","link":"https:\/\/gourmandelle.com\/ro\/ceapa-umpluta-rumenita-la-cuptor\/","title":{"rendered":"Ceapa umpluta rumenita la cuptor"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Ceapa umpluta rumenita la cuptor este o reteta vegana, de post, inspirata din bucataria libaneza: straturi de ceapa alba oparita, rulate in jurul unei umpluturi de orez basmati cu granule de soia texturat, rosii si condimente calde precum scortisoara, ienibahar, chimion si coriandru, apoi rumenite in tigaie si gatite la foc mic pana se patrund complet.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu as putea sa traiesc fara ceapa si usturoi. Pur si simplu simt ca aceste doua ingrediente dau gust oricarui fel de mancare sarat, asa ca adaug ceapa in 95% dintre retetele sarate pe care le gatesc. Tocmai de aceea m-am entuziasmat atat de tare cand am descoperit aceasta reteta libaneza in care ceapa nu mai e doar un suport pentru gust, ci devine vedeta din farfurie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta originala de ceapa umpluta libaneza se face cu carne tocata, pe care eu am inlocuit-o cu granule de texturat de soia. Imi place sa transform retetele clasice in variante vegetale care pastreaza acelasi miez aromat, fara sa pierd nimic din satietate. Cepele mari au si straturi mai groase, care se desprind intregi fara sa se rupa. Eu folosesc trei cepe albe mari; cele albe sunt mai dulci si mai blande dupa oparire decat cele galbene, asa ca nu acopera condimentele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orez basmati<\/strong> &#8212; basmati e ideal aici pentru ca boabele raman separate si usor afanate dupa gatire, nu lipicioase. Important: pune orezul la inmuiat intr-un bol cu apa inainte de a-l amesteca in umplutura. Inmuierea il ajuta sa se gateasca uniform in interiorul rulourilor de ceapa, unde nu primeste la fel de multa caldura ca intr-o oala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Granule de soia texturat<\/strong> &#8212; acestea inlocuiesc carnea tocata din reteta originala. Inmoaie-le bine inainte de a le folosi (in reteta intra o cana si jumatate de granule deja inmuiate). Daca le pui uscate, vor trage din umezeala umpluturii si vor ramane tari. Stoarce-le usor de excesul de apa, ca umplutura sa nu fie apoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Scortisoara, ienibahar, chimion si coriandru<\/strong> &#8212; acest cvartet de condimente e sufletul retetei si semnatura aromelor libaneze. Cate o lingurita din fiecare e suficient ca sa parfumeze toata umplutura. Daca le ai macinate proaspat, cu atat mai bine: condimentele macinate isi pierd din intensitate in cateva luni, asa ca verifica daca inca miros puternic inainte sa le folosesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pasta de rosii si rosia decojita<\/strong> &#8212; pasta de rosii aduce concentrare si culoare, iar rosia proaspata decojita si maruntita aduce umezeala si prospetime. Ca sa decojesti usor rosia, crestez-o in cruce la baza si oparesc-o cateva secunde; coaja se desprinde apoi singura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vin alb sau otet<\/strong> &#8212; cele trei linguri de vin alb (sau otet) se adauga in tigaie peste ceapa rumenita si dau o nota acra-aromata care echilibreaza dulceata cepei caramelizate. Aceasta taietura laterala permite straturilor sa se desfaca intregi dupa oparire, in loc sa ramana prinse unul in altul.<\/li>\n<li><strong>Oparire pana cand straturile se separa usor.<\/strong> Fierbe cepele aproximativ 10 minute. Stii ca sunt gata cand straturile incep sa alunece unul de pe altul fara sa se rupa. Daca le scoti prea devreme, straturile crapa cand incerci sa le rulezi.<\/li>\n<li><strong>Nu supraumple straturile.<\/strong> O lingura de umplutura per strat e suficient. Daca pui prea mult, rulourile nu se inchid si umplutura se imprastie in tigaie.<\/li>\n<li><strong>Aseaza rulourile cu partea taiata in jos.<\/strong> In tigaie, pune-le intr-un singur strat, cu cusatura in jos, ca sa se sigileze la rumenire si sa nu se desfaca. Rumeneste-le doua minute, pana prind o crusta aurie.<\/li>\n<li><strong>Ai rabdare la final.<\/strong> Dupa ce adaugi vinul sau otetul, acopera tigaia si lasa la foc mic 20-30 de minute, intorcand cepele o data dupa primele 10 minute. Pastreaza aceeasi cantitate de umplutura ca sa ai destul pentru toate straturile.<\/li>\n<li><strong>Alt tip de orez:<\/strong> daca nu ai basmati, merge si orez cu bob lung. Evita orezul cu bob rotund, care devine prea lipicios in umplutura.<\/li>\n<li><strong>Acrirea:<\/strong> daca tii post strict, foloseste otet in loc de vin alb. Aromele de condimente se aseaza si chiar se intensifica peste noapte, asa ca e o reteta excelenta de gatit in avans. Reincalzeste-o usor in tigaie, cu un strop de apa sau ulei, ca sa nu se usuce orezul, sau cateva minute in cuptor, acoperita. Umplutura de orez cu granule de soia se poate pregati cu o zi inainte si tinuta la rece, urmand sa rulezi si sa rumenesti cepele cand vrei sa servesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut tehnica de a rumeni ceapa la cuptor, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/ceapa-verde-rumenita-la-cuptor-zaatar-masline\/\">ceapa verde rumenita la cuptor cu zaatar si masline<\/a>.
