Secretul care le tine legate sunt taratele de psyllium, care inlocuiesc oul. Ai nevoie de numai 4 ingrediente de baza si le poti servi cu un sos de fructe de padure sau cu toppingul tau preferat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A inceput luna dedicata <strong>bucatariei frantuzesti<\/strong> aici pe blog si am vrut sa dau startul cu o reteta relativ simpla, clatitele de post. Este pentru prima oara cand am facut clatite fara ou si chiar am fost incantata de cat de bine au iesit. Marturisesc ca aveam emotii, pentru ca un aluat de clatite fara ou poate sa se rupa usor in tigaie, dar nu a fost cazul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ati mai incercat retetele mele pana acum, probabil ati mai auzit de taratele de psyllium. Sunt secretul din spatele acestor clatite si motivul pentru care aluatul se comporta atat de bine la intors. Eu prefer laptele de soia pentru ca are cel mai mult proteine dintre laptele vegetal si da clatitelor un plus de structura, dar merge si lapte de ovaz, de migdale sau de orez. Cauta unul neindulcit si fara aroma de vanilie, altfel iti va influenta gustul clatitelor. Daca folosesti un lapte foarte subtire, aluatul poate iesi mai fragil.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina alba de grau<\/strong> este faina obisnuita, de tip 000 sau 650, pe care o ai deja in camara. Cantareste-o, nu o masura cu cana, pentru ca o cana de faina indesata poate avea cu 30-40 de grame mai mult si iti ingroasa aluatul. Daca ai un cantar de bucatarie, cele 130 g iti garanteaza aceeasi textura subtire de fiecare data.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa minerala<\/strong> nu e doar pentru lichefiat. Bulele de dioxid de carbon aereaza usor aluatul si ajuta clatitele sa iasa mai fragede. Adaug-o la final si foloseste-o cat e inca cu bule, nu una care a stat deschisa de cateva zile si si-a pierdut efervescenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> sunt eroul retetei. Cand intra in contact cu lichidul, formeaza un gel care leaga aluatul exact cum ar face-o oul, asa ca clatitele se intorc fara sa se rupa. O singura lingura e suficienta. Cauta tarate de psyllium fine, macinate; daca ai cojile intregi, macina-le putin inainte, altfel raman granuloase in aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos<\/strong> este pentru prajit. Imi place pentru ca rezista bine la caldura si da o aroma fina, dar daca nu vrei deloc gust de cocos, foloseste ulei de cocos rafinat, care e neutru. Pune doar putin in tigaie, intins uniform; prea mult ulei face clatitele unsuroase si neuniforme.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zmeura si murele congelate<\/strong> formeaza sosul de fructe. Cele congelate sunt ideale aici pentru ca lasa mai multa zeama cand le incalzesti, exact ce iti trebuie pentru un sos. Un aluat odihnit se intinde mai usor in tigaie si nu se rupe.<\/li>\n<li><strong>Incinge bine tigaia inainte de prima clatita.<\/strong> Greseala clasica e sa torni aluatul intr-o tigaie calduta. Tigaia trebuie sa fie fierbinte si bine unsa, altfel prima clatita se lipeste si se rupe. Stii ca e gata cand o picatura de apa sfaraie la contact.<\/li>\n<li><strong>Toarna aluatul cu tigaia luata de pe foc.<\/strong> Asa ai timp sa rotesti tigaia si sa intinzi aluatul uniform inainte sa inceapa sa se prinda. Apoi pune-o inapoi pe foc.<\/li>\n<li><strong>Intoarce clatita la momentul potrivit.<\/strong> Stii ca e gata de intors cand marginile se desprind singure, suprafata nu mai e lucioasa si apar bule mici. Daca o intorci prea devreme, se rupe.<\/li>\n<li><strong>Ai grija la cantitatea de aluat per clatita.<\/strong> Un strat subtire e cheia clatitelor reusite. Daca pui prea mult, ies groase si se intorc mai greu.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alt lapte vegetal.<\/strong> Daca nu ai lapte de soia, merge la fel de bine lapte de ovaz, de migdale sau de orez. Cel de ovaz da clatitelor o nuanta usor mai dulce si o textura mai cremoasa.<\/li>\n<li><strong>Alte fructe pentru sos.<\/strong> In loc de zmeura si mure poti folosi capsuni, afine sau un mix de fructe de padure. Dupa ce s-au racit, asaza-le una peste alta intr-o cutie etansa si tine-le la frigider 2-3 zile. Le reincalzesti cateva secunde in tigaia incinsa sau la microunde. Daca vrei sa le pregatesti in avans, poti face un teanc mai mare si sa il congelezi: pune o foaie de hartie de copt intre ele ca sa nu se lipeasca, iar la nevoie le dezgheti la temperatura camerei. Sosul de fructe se pastreaza separat la frigider intr-un borcan, pana la o saptamana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac clatitele in toate variantele, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-pufoase-vegane-fara-gluten\/\">clatitele pufoase vegane fara gluten<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/clatite-americane-cu-cacao\/\">clatitele americane cu cacao<\/a>. O singura lingura este suficienta pentru cantitatea din reteta.
