In varianta clasica este o tarta sarata cu blat subtire, umpluta cu o crema de oua, smantana si branza, peste care se adauga bacon. Provocarea mea a fost sa pastrez exact senzatia aceea cremoasa si bogata, dar fara nimic de origine animala. Iar tofu afumat, taiat felii mici si subtiri exact cum se taie baconul in reteta originala, face o treaba excelenta pe partea de aroma afumata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca va place ideea de tarta sarata fara oua, sa stiti ca eu am facut in trecut doua retete de quiche fara crusta, in cazul in care vreti sa incercati si alte variante. Aici insa miza era crusta clasica de quiche, frageda si untoasa, plus o umplutura care sa stea bine la feliere. Foloseste o faina obisnuita pentru tarte si cantareste-o, nu o masura &#8220;cu ochiul&#8221; &#8212; un surplus de faina face aluatul tare. Cand robotul de bucatarie amesteca, vrei un mix faramicios, ca de nisip umed, nu o pasta lipicioasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos<\/strong> trebuie sa fie mai moale, dar nu lichid &#8212; aceasta consistenta este cheia. Daca e topit, se absoarbe complet in faina si pierzi fragezimea; daca e prea tare, nu se distribuie uniform. Tine borcanul la temperatura camerei pana capata textura de unt moale inainte sa il folosesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa foarte rece<\/strong> nu e un detaliu intamplator. Apa rece tine grasimea solida in timp ce lucrezi aluatul, iar asta inseamna o crusta mai fulgoasa si mai frageda. Eu tin paharul cu apa cateva minute la congelator inainte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de naut<\/strong> este vedeta umpluturii. Amestecata cu apa, formeaza o crema care se &#8220;coaguleaza&#8221; la caldura, exact ca ouale batute. Cauta o faina fina, fara cocoloase, si amesteca foarte bine pana dispare orice grunji inainte sa o torni peste legume.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat<\/strong> aduce aroma de bacon. Alege un tofu ferm, afumat, si feliaza-l in bucatele mici si subtiri &#8212; asa se distribuie uniform si fiecare imbucatura prinde din nota afumata. Daca tofu pare umed, tampoaneaza-l cu un servet inainte.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Prazul<\/strong> &#8212; se foloseste doar partea alba, cea mai dulce si mai frageda. Feliaza-l si spala-l bine intre straturi, fiindca prazul ascunde adesea pamant. Calit usor, devine dulce si matasos si echilibreaza gustul mai pamantiu al spanacului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanacul<\/strong> intra proaspat, in frunze, si se lasa pe foc doar cateva minute, cat sa se inmoaie. Cele 450 g par mult, dar spanacul scade dramatic la caldura. Important: nu il fierbe in apa, ci doar il calesti, ca sa nu lase prea multa zeama in umplutura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> sunt secretul gustului &#8220;branzos&#8221;. Nu ii confunda cu drojdia de panificatie &#8212; acestia nu dospesc nimic, ci dau o aroma umami, nuci-branzoasa, indispensabila in bucataria vegana. Pe langa ei, <strong>branza vegana rasa<\/strong> formeaza crusta aurie de deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; curcuma, nucsoara, piper alb si cimbru &#8212; nu sunt optionale. Curcuma da culoarea galbuie de &#8220;oua&#8221;, nucsoara este aroma clasica din orice quiche cu spanac, iar piperul alb si cimbrul rotunjesc totul. Nu sari peste acest pas &#8212; asa eviti baza cruda si umeda. Intepaturile lasa aburul sa iasa, ca aluatul sa nu se umfle.<\/li>\n<li><strong>Scurge bine legumele calite.<\/strong> Cea mai frecventa greseala la quiche este umplutura apoasa. Dupa ce calesti prazul si spanacul, lasa-le sa se scurga si sa se raceasca putin inainte sa le pui in crusta, ca sa nu inmoaie crema de naut.<\/li>\n<li><strong>Amesteca crema de naut pana e perfect omogena.<\/strong> Orice cocolos de faina ramane grunjos dupa coacere. Bate energic faina cu apa pana arata ca o smantana subtire, abia apoi adauga uleiul si condimentele.<\/li>\n<li><strong>Stii ca e gata cand<\/strong> deasupra s-a format o crusta aurie, iar crema nu mai tremura in centru daca misti usor forma. Daca marginile crustei se rumenesc prea repede, acopera-le cu putina folie de aluminiu.<\/li>\n<li><strong>Lasa quiche-ul sa se odihneasca<\/strong> 10-15 minute dupa ce il scoti din cuptor. Crema de naut continua sa se intareasca pe masura ce se raceste, iar feliile vor iesi curate, in loc sa se desfaca.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fara crusta:<\/strong> daca vrei o varianta mai usoara si mai rapida, poti renunta complet la blat si coace doar umplutura intr-o forma unsa, ca o frittata de naut.<\/li>\n<li><strong>Alte legume:<\/strong> prazul si spanacul se pot inlocui sau completa cu ciuperci calite, rosii uscate, ardei copt sau brocoli marunt. Il poti servi rece, direct din frigider, sau reincalzit la cuptor cateva minute la 160\u00b0C, ca sa redevina crusta crocanta &#8212; evita microundele, care inmoaie blatul. Pentru preparare in avans, poti coace crusta orb cu o zi inainte si o tii acoperita, apoi adaugi umplutura si o coci a doua zi.
