{"id":20299,"date":"2018-03-20T16:51:59","date_gmt":"2018-03-20T14:51:59","guid":{"rendered":"https:\/\/gourmandelle.com\/?p=20299\/"},"modified":"2026-06-15T17:19:39","modified_gmt":"2026-06-15T15:19:39","slug":"tarte-tatin-cu-pere","status":"publish","type":"post","link":"https:\/\/gourmandelle.com\/ro\/tarte-tatin-cu-pere\/","title":{"rendered":"Tarte Tatin cu pere"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Tarte Tatin cu pere este o tarta intoarsa, frantuzeasca, in care perele se caramelizeaza intr-un sirop de zahar brun si cidru, apoi se coc sub o foaie de aluat foietaj si se rastoarna in farfurie. Aceasta versiune este complet vegana si de post: caramelul se face fara unt, cu ulei de cocos, iar rezultatul e aromat, cu pere moi si margini rumenite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tarte Tatin nu a fost deloc o reteta necunoscuta mie, insa nu am gatit-o niciodata pana acum. M-am bucurat de ea cand am gustat-o la prieteni si prin restaurante, dar, nefiind un mare fan al dulciurilor, nu am fost tentata sa o incerc si eu &#8212; pana acum. Iar surpriza a fost cat de putin lucru cere de fapt: amesteci caramelul direct in tigaie, asezi perele, pui foietajul deasupra si lasi cuptorul sa faca restul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mi-a placut atat de mult ideea de tarta intoarsa, incat deja imi fac planuri pentru o varianta sarata. Cauta un zahar brun inchis (dark brown sugar), nu unul deschis, daca vrei un caramel cu mai multa profunzime. Cu cat zaharul are mai multa melasa, cu atat aroma finala va fi mai bogata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cidru de mere<\/strong> &#8212; lichidul ajuta zaharul sa se dizolve uniform fara sa se arda si aduce o nota usor acrisoara care echilibreaza dulceata caramelului. Cidrul de mere se potriveste natural cu perele. Adauga-l de la inceput, impreuna cu zaharul, ca sa ai timp sa amesteci pana la dizolvarea completa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos solid<\/strong> &#8212; el inlocuieste untul din reteta clasica si da caramelului onctuozitate. Foloseste-l solid, asa cum cere reteta, si adauga-l peste pere dupa ce ai oprit focul, ca sa se topeasca lin in caramelul cald. Uleiul de cocos rafinat are gust neutru; cel virgin va aduce o usoara nota de cocos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pere medii<\/strong> &#8212; alege pere coapte, dar inca ferme la atingere, ca sa nu se desfaca in caramel in timpul coacerii. Perele prea moi se vor terciui, iar cele prea tari nu vor avea timp sa se inmoaie. Decojeste-le, scoate samburii si taie-le in jumatati, asa cum cere reteta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ghimbir proaspat, cardamon, cuisoare si seminte de vanilie<\/strong> &#8212; acestea sunt sufletul aromatic al caramelului. Ghimbirul proaspat ras da o nota vie, cardamonul si cuisoarele aduc caldura de sezon rece, iar semintele de vanilie rotunjesc totul. Adauga-le in caramel si gateste un minut, ca aromele sa se deschida inainte de a pune perele.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Foaie de aluat foietaj<\/strong> &#8212; foloseste o foaie gata facuta, lasata sa ajunga la temperatura camerei ca sa fie maleabila. Cele mai multe foietaje din comert pe baza de ulei vegetal sunt vegane, dar verifica eticheta daca tii post strict, fiindca unele contin unt. Aranjeaza-le stranse, intr-un singur strat, fiindca se vor micsora putin la coacere.<\/li>\n<li><strong>Nu te grabi cu caramelul.<\/strong> Amesteca la foc mediu pana zaharul s-a dizolvat complet &#8212; vei sti ca e gata cand amestecul e omogen si lichid, fara cristale pe fundul tigaii. Daca ramane granulos, caramelul va fi nisipos dupa coacere.<\/li>\n<li><strong>Indeasa marginile aluatului in tigaie.<\/strong> Foloseste o lingura de lemn sau o spatula de silicon ca sa impingi marginile foietajului pe langa pere. Asa, dupa rasturnare, aluatul va forma un bordur care tine caramelul si fructele la locul lor.<\/li>\n<li><strong>Respecta racirea de 20 de minute inainte de rasturnare.<\/strong> Daca rastorni tarta imediat, caramelul fierbinte e foarte lichid si poate stropi. Lasata sa se aseze, tarta se desprinde mai usor si caramelul se ingroasa exact cat trebuie.<\/li>\n<li><strong>Rastoarna printr-o miscare hotarata.<\/strong> Pune un platou mare peste tigaie si intoarce sigur, dintr-o singura miscare. Ezitarea e cea care lasa perele sa alunece.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Alte fructe in loc de pere.<\/strong> Reteta clasica de tarte Tatin se face cu mere caramelizate, dar merg la fel de bine si piersicile, caisele sau ananasul. Daca ramane, acopera-o si tine-o la frigider pana la 2-3 zile. Pentru a-i reda textura, incalzeste feliile cateva minute in cuptor, nu la microunde, ca aluatul sa redevina crocant.
