Acelasi gust bogat si aceeasi textura matasoasa, dar complet fara lactate si oua.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gratinarea este o metoda de gatit inventata de francezi: un ingredient capata o crusta aurie, usor crocanta, cu ajutorul branzeturilor, oualor, untului sau al pesmetului. Preparatele gratinate se gatesc de obicei in vase putin inalte, ca sa aiba o textura mai crocanta. Eu am folosit pentru aceasta reteta de cartofi gratinati un vas termorezistent de sticla, un vas de Jena cam de 23 x 13 cm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Mie mi-a placut la nebunie cum, fara nicio picatura de smantana sau de lapte de vaca, crema de cocos se ingroasa pana ajunge exact ca un sos clasic, iar tofu afumat strecurat printre straturi aduce acea nota savuroasa care de obicei vine de la branza. Daca tot esti aici, trebuie sa incerci si preferatele mele: gratinul de linte cu legume si caserola de paste cu branza vegana.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img post, fara lactate si fara oua;<\/li>\n<li>o garnitura impresionanta pentru masa de duminica sau de sarbatori, care arata mult mai pretentioasa decat efortul real;<\/li>\n<li>o reteta din ingrediente accesibile, in care cartofii ieftini devin un preparat festiv;<\/li>\n<li>o varianta vegana a unui clasic frantuzesc, cand vrei confort food fara sa renunti la textura cremoasa;<\/li>\n<li>un preparat care se pregateste in avans si se coace cand ai nevoie de el, ideal cand primesti musafiri.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Cremoasa fara lactate.<\/strong> Crema groasa de cocos plus r\u00e2ntasul de faina si ulei de cocos dau exact onctuozitatea unui gratin clasic, fara smantana sau lapte de vaca.<\/li>\n<li><strong>Acelasi gust, textura identica.<\/strong> Felii subtiri de cartofi care se topesc in gura, sub o crusta aurie de branza vegana topita.<\/li>\n<li><strong>De post si vegana.<\/strong> Toate ingredientele sunt vegetale, asa ca se incadreaza perfect intr-un meniu de post sau vegan.<\/li>\n<li><strong>Savoare de la tofu afumat.<\/strong> Stratul de tofu afumat maruntit aduce acea nota umami care de obicei vine de la branza maturata.<\/li>\n<li><strong>Ingrediente accesibile.<\/strong> Cartofi, usturoi, cimbru si o conserva de lapte de cocos transforma un buget mic intr-un preparat de sarbatoare.<\/li>\n<li><strong>Se pregateste din timp.<\/strong> Poti asambla tava cu cateva ore inainte si o bagi la cuptor fix cand ai \/><\/figure>\n\n\n\n<h2 class=\"wp-block-heading\">Note despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofi<\/strong> &#8212; folosesc 1 kg de cartofi noi sau cartofi pentru copt. Pentru un gratin reusit alege soiuri cu continut mai mare de amidon, fiindca acestea elibereaza amidon care ajuta sosul sa se lege si sa devina cremos. Spala-i foarte bine si lasa-le coaja &#8212; aici sta o parte din textura si din savoarea rustica. Taie-i in felii subtiri si egale, ideal cu o razatoare speciala (mandolina): grosimea uniforma e secretul ca toate feliile sa se gateasca la fel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Lapte de cocos la conserva, doar crema<\/strong> &#8212; 800 ml, si conteaza mult sa folosesti doar partea groasa, crema care se aseaza deasupra. Pune conserva la frigider cu cateva ore inainte: crema se solidifica si o poti separa usor de apa de la baza. Cu cat crema e mai groasa, cu atat sosul iese mai onctuos. Cauta conserve cu un continut ridicat de grasime (peste 60%), nu varianta diluata &#8220;light&#8221;.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu afumat maruntit<\/strong> &#8212; 100 g, strecurat ca strat intermediar. El aduce nota savuroasa si afumata care da senzatia de branza maturata. Marunteste-l cu mana sau cu furculita in firimituri mici, ca sa se distribuie uniform printre cartofi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza vegana rasa<\/strong> &#8212; 200 g, dintre cele care se topesc cu adevarat, de exemplu Valsoya. Aici e diferenta intre un gratin cu crusta frumoasa si unul cu o pojghita uscata: nu orice branza vegana se topeste, asa ca verifica pe ambalaj mentiunea ca se topeste. O parte intra intre straturi, iar restul se adauga la final, dupa ce scoti folia, ca sa se rumeneasca deasupra.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi, cimbru proaspat si nucsoara<\/strong> &#8212; 5 catei de usturoi pisati, 2 lingurite de cimbru proaspat si o jumatate de lingurita de nucsoara sunt trio-ul aromatic clasic al unui Dauphinoise. Nucsoara, mai ales, e ingredientul-semnatura: rasa proaspat din nuca intreaga e mult mai parfumata decat cea macinata din comert.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de cocos si faina<\/strong> &#8212; 2 linguri din fiecare formeaza un r\u00e2ntas, baza care ingroasa sosul. O mandolina iti da felii egale care se gatesc in acelasi timp; daca folosesti cutitul, ai rabdare si mentine aceeasi grosime.<\/li>\n<li><strong>Tine feliile in apa rece pana le folosesti.<\/strong> Asa nu se oxideaza si nu se inchid la culoare, iar surplusul de amidon de la suprafata se spala. Scurge-le bine inainte de a le aseza in tava.<\/li>\n<li><strong>Incalzeste sosul de cocos pana da in clocot, apoi opreste focul.<\/strong> Sosul cald patrunde mai repede printre straturi si scurteaza timpul de coacere. Cand incepe sa se ingroase dupa r\u00e2ntas, e semn ca e gata.<\/li>\n<li><strong>Coace acoperit, apoi descoperit.<\/strong> Primele 45 de minute sub folie de aluminiu lasa cartofii sa fiarba la abur in sos si sa se gateasca pana in mijloc; ultimele 15-20 de minute fara folie, cu branza deasupra, dau crusta aurie. Vei sti ca sunt gata cand un cutit intra usor prin straturi, fara rezistenta.<\/li>\n<li><strong>Lasa tava sa se odihneasca 10 minute inainte de a portiona.<\/strong> Sosul se aseaza, iar feliile se taie curat in loc sa se imprastie pe farfurie.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Fara tofu afumat?<\/strong> Inlocuieste-l cu ciuperci calite si scurse bine sau cu putina drojdie inactiva (nutritional yeast) presarata printre straturi, pentru aceeasi nota savuroasa.<\/li>\n<li><strong>Alt tip de crema vegetala.<\/strong> In locul cremei de cocos poti folosi smantana vegetala de gatit (din soia sau ovaz), daca nu vrei nota usor dulceaga a cocosului. Se reincalzesc cel mai bine la cuptor, la 180C, acoperite cu folie ca sa nu se usuce, pana sunt fierbinti in mijloc. La microunde se incalzesc rapid, dar isi pierd putin din crusta crocanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru preparare in avans poti asambla toata tava cu cateva ore inainte, o tii la frigider acoperita si o bagi la cuptor fix inainte de masa. Daca vrei sa o congelezi, e gata coapta: lasa-o sa se raceasca complet, portioneaza si congeleaza pana la 2 luni, apoi dezgheata peste noapte la frigider inainte de a o reincalzi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu cartofi la cuptor, mai incearca <a href=\"https:\/\/gourmandelle.com\/ro\/cartofi-noi-la-cuptor-legume-de-primavara\/\">cartofii noi la cuptor cu legume de primavara<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/cartofi-acordeon-hasselback\/\">cartofii acordeon Hasselback<\/a>. Lasa-le pe foc mediu pana dau in clocot, apoi opreste focul.<\/div><\/li><li id=\"wprm-recipe-163020-step-0-3\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Spala cartofii foarte bine, dar lasa-le coaja. Taie cartofii felii subtiri folosind o razatoare speciala (mandolina) sau cutitul. Pune feliile intr-un bol si acopera-le cu apa rece.<\/div><\/li><li id=\"wprm-recipe-163020-step-0-4\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Intr-o tigaie, topeste uleiul de cocos. Adauga faina, amestecand continuu. Adauga treptat sosul de lapte de cocos, amestecand continuu pana da in clocot si incepe sa se ingroase, apoi opreste focul.<\/div><\/li><li id=\"wprm-recipe-163020-step-0-5\" class=\"wprm-recipe-instruction\" style=\"list-style-type: decimal;\"><div class=\"wprm-recipe-instruction-text\">Aranjeaza 1\/3 din feliile de cartofi intr-un strat in tava de copt. Toarna peste 1\/3 din sosul de lapte de cocos si presara o cana de branza vegana rasa. Pune deasupra inca 1\/3 din feliile de cartofi, acopera-le cu stratul de tofu maruntit si cu inca o treime din cantitatea de sos de lapte de cocos.
