Totul fierbe incet la cuptor in vin rosu sec, alaturi de ciuperci, morcovi, ceapa si un bouquet garni de cimbru, rozmarin si dafin. Rezultatul este o mancare bogata, aromata si suprinzator de apropiata la gust si textura de reteta clasica, dar 100% pe baza de plante.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu o sa iti vina sa crezi cat de aproape este aceasta varianta de reteta originala cu carne. Din aceeasi zona provin preparate cunoscute precum escargot (melci), coq au vin sau pain d&#8217;epices. In varianta clasica este o tocanita de carne de vita gatita lung in vin rosu de Burgundia si aromata cu ceapa, usturoi, ciuperci si bouquet garni, cu bucatele de bacon presarate la final.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In versiunea de fata pastrez exact aceleasi arome si aceeasi tehnica de gatit lent la cuptor, dar inlocuiesc carnea cu texturat de soia si baconul cu tofu afumat. Asa obtii toata profunzimea preparatului original, intr-o forma potrivita pentru post si pentru o alimentatie pe baza de plante.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie si ce rol are fiecare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are trei componente care se pregatesc separat si se unesc la final: &#8220;carnea&#8221; din soia, &#8220;baconul&#8221; din tofu si tocanita propriu-zisa. Iata la ce sa fii atenta cand cumperi si pregatesti ingredientele:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Texturat de soia felii<\/strong> &#8212; baza pentru &#8220;carne&#8221;. Se inmoaie intr-un amestec de supa de legume, apa fierbinte si condimente (boia afumata, usturoi si ceapa granulate, coriandru, mustar praf, chimion, chili, putin zahar brun), care ii dau gust si culoare. Inmuierea peste noapte face diferenta la textura.<\/li><li><strong>Tofu afumat<\/strong> &#8212; feliat marunt si rumenit cu boia afumata, tine loc de bacon si aduce acea nota afumata, usor crocanta.<\/li><li><strong>Vin rosu sec<\/strong> &#8212; inima retetei. Aciditatea si taninurile lui construiesc profunzimea sosului, exact ca in versiunea clasica. Inmuierea texturatului de soia intr-un amestec condimentat, de preferat peste noapte, permite bucatilor sa absoarba lichidul si aromele in adancime, asa incat sa nu ramana fade in interior. Iar rumenirea separata a soiei, a ciupercilor si a &#8220;baconului&#8221; din tofu inainte de fierbere declanseaza reactia Maillard: suprafata se caramelizeaza, se formeaza compusi de aroma si preparatul capata acel gust prajit, savuros, care lipseste daca arunci totul direct in oala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Fierberea lenta la cuptor, cu capac, este a treia cheie. Caldura constanta si uniforma din toate directiile lasa vinul, bouquet garni-ul si legumele sa se combine treptat intr-un sos catifelat, fara sa fie nevoie sa stai langa aragaz si sa amesteci.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca sa iasa perfect<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Nu grabi inmuierea soiei.<\/strong> Minimum o ora, ideal peste noapte &#8212; cu cat sta mai mult in amestecul condimentat, cu atat &#8220;carnea&#8221; iese mai gustoasa si mai suculenta.<\/li><li><strong>Rumeneste bine, in reprize.<\/strong> Prajeste tofu, ciupercile si soia separat, fara sa aglomerezi tigaia. Cel mai adesea il servesc cu piure de cartofi cremos, cu cartofi natur sau cu o felie buna de paine ca sa nu ramana nimic in farfurie. Merge la fel de bine peste taitei sau paste late, iar o salata verde simpla, cu vinegreta, echilibreaza perfect intreaga masa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele de post cu care poti face din nou preparate clasice in varianta vegana, iti recomand si <a href=\"https:\/\/gourmandelle.com\/ro\/paste-bolognese-vegane-de-post\/\">pastele bolognese vegane de post<\/a> &#8212; alta reteta cu sos consistent, numai buna pentru o cina in familie. Iar daca vrei sa continui cu ceva aromat si condimentat, arunca o privire si peste <a href=\"https:\/\/gourmandelle.com\/ro\/pui-tikka-masala-vegetarian\/\">pui tikka masala vegetarian<\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum pastrezi si reincalzesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Vestea buna e ca aceasta tocanita este chiar mai gustoasa a doua zi, dupa ce aromele au avut timp sa se aseze. O pastrezi la frigider, intr-un recipient inchis, 3-4 zile. La reincalzire, foloseste foc mic si adauga un strop de supa de legume sau apa daca sosul s-a ingrosat prea mult intre timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Se preteaza foarte bine si la congelare: portioneaza dupa ce s-a racit complet si tine la congelator pana la 2-3 luni. O dezgheti peste noapte la frigider si o reincalzesti incet.
