Tofu silken inlocuieste ouale si laptele, iar afinele si visinele dau aciditate. Se coace in ~45 de minute la 180C.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Clafoutis-ul a fost mereu unul dintre cele mai simple deserturi pe care le poti face cand vrei ceva cald, cu fructe, dar fara sa te complici cu blaturi, creme separate sau decoratiuni. In varianta traditionala se face cu cirese amare si un aluat bogat in oua si lapte. Aici am pastrat ideea de baza, dar am trecut totul in registru vegan: tofu silken preia rolul oualor si al laptelui, iar rezultatul ramane exact ce trebuie sa fie un clafoutis &#8211; umed la mijloc, abia legat, plin de fructe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place sa folosesc afine si visine impreuna pentru ca se echilibreaza: afinele aduc dulceata si culoare, iar visinele acea aciditate usor acrisoara care taie din dulce si aminteste de clafoutis-ul clasic cu cirese amare. afine, visine sau orice ai la indemana;<\/li>\n<li>un desert cald, reconfortant, pe care il poti servi direct din vas, cu iaurt sau inghetata.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">De ce o sa iti placa aceasta reteta<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Se face dintr-un singur aluat turnat.<\/strong> Pui fructele in vas, torni aluatul mixat la blender peste ele si coci &#8211; nu ai de asamblat straturi sau de batut albusuri.<\/li>\n<li><strong>Tofu silken face toata treaba oualor.<\/strong> Mixat cu lapte de migdale, devine o crema care se leaga la cuptor si tine fructele suspendate, exact ca un clafoutis clasic.<\/li>\n<li><strong>Este vegan si de post.<\/strong> Niciun produs de origine animala, deci il poti face si in perioadele de post fara compromisuri la textura.<\/li>\n<li><strong>Poate fi fara gluten.<\/strong> Cu faina de orez si tapioca obtii aceeasi consistenta umeda, fara gluten.<\/li>\n<li><strong>Indulcit cu zahar de cocos.<\/strong> Aroma caramelizata a zaharului de cocos se potriveste bine cu fructele acrisoare si da un gust mai rotund decat zaharul alb.<\/li>\n<li><strong>Se adapteaza la orice fruct.<\/strong> Afine, visine, cirese, prune, pere &#8211; Tofu silken are un continut mare de apa si o textura cremoasa care, mixata, se transforma intr-un aluat neted &#8211; el preia rolul oualor si al laptelui din reteta clasica. Cauta-l la cutie (tip Mori-Nu) sau in zona refrigerata; daca folosesti tofu ferm vei obtine un aluat sfaramicios, nu cremos.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Afinele<\/strong> dau dulceata si culoarea intensa a desertului. Poti folosi afine proaspete sau congelate; daca le folosesti congelate, nu le dezgheta inainte &#8211; asaza-le direct in vas, altfel lasa prea multa zeama si coloreaza tot aluatul. Alege afine ferme, lucioase, fara urme de zeama in cutie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Visinele<\/strong> aduc aciditatea care echilibreaza dulceata si fac legatura cu clafoutis-ul traditional facut cu cirese amare. Daca le folosesti proaspete, scoate-le sambarii; daca le ai la borcan, scurge-le bine de sirop ca sa nu adaugi lichid in plus in aluat.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de orez<\/strong> face desertul fara gluten si pastreaza textura umeda specifica unui clafoutis. Daca nu ai nevoie de varianta fara gluten, poti folosi faina normala de grau in aceeasi cantitate. Faina de orez alb da un rezultat mai fin decat cea integrala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina de tapioca<\/strong> are rol de liant: ajuta aluatul vegan sa se lege si da o usoara elasticitate, mai ales important cand lucrezi cu faina de orez, care nu are gluten. O singura lingura este suficienta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul de cocos<\/strong> indulceste si adauga o nota caramelizata. Il poti inlocui cu orice alt indulcitor pe care il folosesti de obicei, dar tine cont ca zaharul de cocos da o culoare mai inchisa aluatului.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Laptele de migdale<\/strong> subtiaza crema de tofu pana ajunge la consistenta de aluat turnabil. Poti folosi orice lapte vegetal neindulcit; cele cu aroma neutra (migdale, ovaz) sunt cele mai potrivite ca sa nu acopere gustul fructelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos<\/strong> da textura si ajuta desertul sa nu se lipeasca. Foloseste putin si pentru uns vasul, asa cum cere reteta &#8211; ungerea buna a formei e ce iti permite sa servesti clafoutis-ul direct din vas, fara sa se prinda.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Mixeaza tofu si laptele pana devin complet cremoase, inainte de a adauga restul.<\/strong> Daca lasi bucati de tofu, raman in aluatul copt si strica textura neteda. Abia dupa ce baza e cremoasa adaugi faina, zaharul, tapioca, uleiul, vanilia si sarea.<\/li>\n<li><strong>Aseaza fructele intr-un singur strat pe fundul vasului, apoi torni aluatul peste ele.<\/strong> Asa fructele raman distribuite uniform si fiecare felie are si fruct, si crema.<\/li>\n<li><strong>Nu coace prea mult.<\/strong> Un clafoutis bun ramane umed la mijloc &#8211; se intareste pe masura ce se raceste. Schimba doar fructele, aluatul ramane acelasi.<\/li>\n<li><strong>Faina de grau in loc de faina de orez.<\/strong> Daca nu tii cont de gluten, foloseste aceeasi cantitate de faina normala de grau; vei obtine o textura putin mai legata.<\/li>\n<li><strong>Alt indulcitor.<\/strong> Zaharul de cocos poate fi inlocuit cu zahar brun, sirop de artar sau orice indulcitor preferi, ajustand dupa gust.<\/li>\n<li><strong>Alt lapte vegetal.<\/strong> Laptele de migdale poate fi inlocuit cu lapte de ovaz, soia sau cocos &#8211; alege unul neutru ca sa nu acopere gustul fructelor.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Clafoutis-ul se pastreaza acoperit la frigider 2-3 zile. Textura se intareste la rece, asa ca il poti incalzi cateva minute in cuptor sau la microunde inainte de servire, ca sa redevina moale la mijloc. Il poti pregati si cu cateva ore inainte si servi la temperatura camerei &#8211; este unul dintre acele deserturi care se simt bine si calde, si racite.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac deserturile cu fructe acrisoare, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/tarta-cu-visine\/\">tarta cu visine<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/placinta-cu-afine\/\">placinta cu afine<\/a>.
