Este o reteta de Paste care imita aspectul si textura unui rulou de &#8220;carne&#8221; folosind tofu afumat si paste de porumb, imbracat intr-o crusta de ierburi aromatice si servit cu un sos cremos pe baza de iaurt de soia. Rezultatul arata spectaculos pe masa de sarbatoare si este complet vegetal, potrivit pentru cei care tin post sau vor o alternativa fara carne.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Am facut coaste de miel&#8230; fara miel! Nu imi vine sa cred ca mi-a iesit atat de bine. Tin minte ca imi placea carnea de miel la nebunie, iar tatal meu facea friptura de miel perfecta de fiecare data (multi nu stiu sa o gateasca, asa ca ba le iese tare, ba are un gust ciudat, ba miroase urat). Dupa ce am &#8220;veganizat&#8221; <a href=\"https:\/\/gourmandelle.com\/ro\/friptura-vegana-fara-seitan\/\"><strong>friptura fara seitan<\/strong><\/a> si o multime de alte retete populare pe baza de carne, a venit vremea sa incerc si mielul. Toful afumat aduce gustul si aroma care amintesc de o friptura, iar pastele de porumb, fierte pana devin moi si lipicioase, tin totul legat si dau o textura densa, care se poate modela. Amestecul se paseaza cu blenderul vertical pana devine o pasta compacta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Culoarea rozacee, care face iluzia de carne, vine din <strong>sucul proaspat de sfecla<\/strong>, iar taratele de <strong>psyllium<\/strong> sunt liantul care intareste pasta si o ajuta sa isi tina forma la prajit si la cuptor. Condimentele &#8212; boia dulce, cimbru, rozmarin macinat, usturoi pudra, piper negru si carob &#8212; construiesc profilul de aroma &#8220;de friptura&#8221;. Are un motiv: cand amidonul din porumb se gatteste in exces si se raceste putin, devine cleios si leaga pasta ca un liant natural. Combinat cu psyllium-ul, care absoarbe umezeala si formeaza un gel, obtii un rulou care se taie frumos si nu se sfarama la prajit. Daca ai lasa pastele al dente, compozitia ar ramane faramicioasa si nu ai putea sa ii dai forma cilindrica.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Crusta de ierburi si &#8220;oasele&#8221;<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ce transforma un simplu rulou intr-un fel de mancare care arata a coaste de miel este crusta verde de ierburi aromatice. Se amesteca <strong>chives<\/strong>, <strong>menta<\/strong> si <strong>cimbru proaspat<\/strong>, tocate marunt, cu pesmet si ulei de masline, apoi se preseaza cu mainile pe partea de sus si pe margini, dupa ce ruloul a fost uns cu putin ulei. Uleiul ajuta pesmetul si ierburile sa se lipeasca si sa se rumeneasca la cuptor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">&#8220;Oasele&#8221; sunt partea distractiva: se folosesc bucati din partea alba de praz sau de ceapa verde, stropite cu sos de soia si pudrate cu putin carob ca sa capete o culoare uniforma, care imita osul. Se infig in rulou dupa coacere. Se amesteca <strong>iaurt natural de soia<\/strong> cu mustar, un catel de usturoi pisat si putin piper verde la borcan. Iese cremos, usor picant si racoritor, exact contrastul de care are nevoie ruloul cald si condimentat. Sa nu ziceti ca nu v-am anuntat si sa nu imi trimiteti mesaje dupa ce ati schimbat X, Y si Z ingredient si sa va mirati de ce nu v-a iesit. Daca vrei sa completezi meniul de sarbatoare cu inca un fel principal fara carne, arunca un ochi si peste <a href=\"https:\/\/gourmandelle.com\/ro\/friptura-vegana-fara-seitan\/\"><strong>friptura vegana fara seitan<\/strong><\/a>.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza si se pregatesc din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Ruloul se pastreaza foarte bine la frigider, intr-un recipient inchis, cateva zile. De fapt, poti profita de asta: modeleaza pasta si tine-o la rece, iar in ziua mesei doar o prajesti, o imbraci in crusta de ierburi si o coci. Sosul de iaurt se face proaspat, dar poate sta si el la frigider o zi. La reincalzire, foloseste cuptorul, nu microundele, ca sa pastrezi crusta crocanta.
