In varianta clasica, cassoulet-ul francez se face cu fasole alba, carnati de porc si sorici, dar aici totul e din plante &#8212; fasolea fiarta la foc mic ramane vedeta, iar ciupercile si bulionul aduc gustul rotund, savuros. Asadar, iata versiunea mea de cassoulet vegetarian. Imi place totul la aceasta mancare de fasole &#8212; textura, aromele, felul in care totul se imbina perfect. Am fost cam lenesa si nu am vrut sa fac si carnatii vegani, insa daca aveti timp va recomand din suflet sa preparati <a href=\"https:\/\/gourmandelle.com\/ro\/mititei-vegani\/\"><strong>mititeii mei vegani<\/strong><\/a> si sa ii adaugati pur si simplu peste mancarea de fasole.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ce este cassoulet-ul si cum il facem de post<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cassoulet este un fel de mancare foarte popular in sud-vestul Frantei, gatit lent, in mod traditional cu fasole alba, carnati de porc, sorici si condimente. Este practic o mancare de fasole cu carne, coapta pana capata o crusta la suprafata. In versiunea aceasta de post pastram tot ce face cassoulet-ul memorabil &#8212; fasolea cremoasa, baza aromata de legume, coacerea finala &#8212; dar inlocuim carnea cu ciuperci Champignon si o crusta de pesmeti crocanti. Bulionul (pasta de rosii) aduce culoare si un gust umami placut, iar frunza de dafin si crengutele de cimbru parfumeaza intreaga mancare. Pentru pesmetii de deasupra ai nevoie de paine integrala &#8212; eu am folosit una cu seminte &#8212; ulei de masline, usturoi praf, sare si piper.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se prepara pas cu pas<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Incepe cu doua linguri de ulei de masline intr-o cratita mare, pe foc mediu. Caleste ceapa, usturoiul, morcovii si telina in jur de 10 minute, pana legumele devin fragede. Adauga vinul alb, adu la fierbere si mai lasa 5 minute, apoi pune ciupercile, fasolea strecurata, supa de legume sau apa, bulionul, frunza de dafin si cimbrul. Cand da in clocot, micsoreaza focul si lasa la fiert aproximativ o ora sau pana fasolea e gatita. Potriveste de sare si piper la final &#8212; fasolea absoarbe sarea, asa ca merita gustata inainte de servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In timp ce fierbe fasolea, incinge cuptorul la 200C si pregateste pesmetii. Marunteste painea, asaz-o intr-un singur strat pe o tava tapetata cu hartie de copt, stropeste-o cu ulei de masline, usturoi praf, sare si piper si coace 7 minute, pana devine uscata si crocanta. Scoate pesmetii si lasa-i deoparte sa se raceasca. Coacerea pesmetilor separat, inainte de a-i pune peste mancare, garanteaza ca raman crocanti si nu se inmoaie in sos &#8212; iar trecerea scurta la cuptor la final rumeneste crusta si leaga cele doua texturi. Combinatia intre fasolea cremoasa dedesubt si crusta crocanta deasupra este exact ce face cassoulet-ul clasic atat de placut, doar ca in varianta complet vegetala.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce se serveste si idei de variatii<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Cassoulet-ul este satios de unul singur, dar se completeaza frumos cu alte preparate vegetale de sezon. Pastreaza mancarea de fasole intr-un recipient inchis in frigider timp de 3-4 zile; aroma se intensifica de la o zi la alta, asa ca a doua zi e adesea si mai buna. Un mic pont pentru meal prep &#8212; tine pesmetii separat, intr-un borcan la temperatura camerei, si pune-i deasupra abia inainte de servire, ca sa ramana crocanti. Poti congela partea de fasole pana la 3 luni; pesmetii insa se fac cel mai bine proaspeti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ai ramas cu putina mancare pe fundul cratitei, arunca un intr-un preparat nou.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca incerci acest cassoulet de post, spune-mi cum ti-a iesit crusta de pesmeti si daca ai adaugat mititei sau tofu deasupra &#8212;
