Se face din lapte de cocos rece, avocado copt, unt de cacao si cacao pudra, mixate intr-un mousse fin care se lasa la frigider peste noapte si se serveste cu frisca de cocos, ciocolata rasa si fructe de padure. A aparut prima oara in 1951 in SUA, insa, datorita denumirii, am decis sa o includ in lista retetelor frantuzesti. Reteta originala are o umplutura ca de budinca, foarte fina, si un blat de tarta. Eu am facut o varianta vegana, de post, care are mai mult o textura ca de mousse de ciocolata, si am eliminat si blatul complet. Este o abordare mai minimalista si clar mult mai usoara decat reteta originala.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele si de ce conteaza fiecare<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta se sprijina pe cateva ingrediente-cheie, fiecare cu un rol precis in textura finala. Iata la ce sa fii atenta cand le alegi si le pregatesti:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Laptele de cocos rece<\/strong> &#8212; cheia intregului mousse. Pune cutia la frigider peste noapte, apoi foloseste doar partea cremoasa, groasa, de deasupra. Apa de cocos ramasa dedesubt nu se foloseste aici, altfel mousseul iese prea lichid.<\/li><li><strong>Avocado copt<\/strong> &#8212; da cremozitate si un plus de finete. Trebuie sa fie bine copt si moale, ca sa se mixeze fara cocoloase; unul tare va lasa bucatele in crema.<\/li><li><strong>Untul de cacao<\/strong> &#8212; se topeste si, la racire, se intareste usor, ceea ce ajuta mousseul sa se lege si sa isi tina forma dupa noaptea la frigider.<\/li><li><strong>Cacao pudra si ciocolata neagra rasa<\/strong> &#8212; aduc gustul intens de ciocolata. Partea cremoasa a laptelui de cocos, mixata separat pana devine pufoasa, aduce aer si volum. Avocado adauga o cremozitate densa si catifelata. Untul de cacao topit, incorporat treptat, se raceste in amestecul rece si se intareste discret, dand mousseului fermitate fara sa il faca greu. De aceea contaza ca laptele si crema de cocos sa fie reci ca gheata: grasimea rece se bate mai bine si tine structura, exact ca la o frisca clasica.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Trucuri ca sa iasa perfect<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Raceste laptele si crema de cocos peste noapte.<\/strong> Fara acest pas, partea cremoasa nu se separa si nu se bate ca lumea.<\/li><li><strong>Incorporeaza untul de cacao treptat.<\/strong> Adaugat prea repede sau prea fierbinte in amestecul rece, se poate lega in fire mici. Poti tine mini-torturile in forme, acoperite, la frigider timp de 2-3 zile. Frisca de cocos se pastreaza separat, tot la rece, si o adaugi abia la servire, ca sa ramana pufoasa. Ciocolata rasa si fructele de padure le pui in ultimul moment, ca sa arate proaspete. Daca vrei sa il pregatesti pentru mai mult timp, mousseul se poate si congela; scoate-l la frigider cu cateva ore inainte de servire ca sa se dezghete usor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut ideea de mousse cremos din avocado si ciocolata, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/mousse-de-ciocolata\/\">reteta mea de mousse de ciocolata<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/trufe-cremoase-de-ciocolata-avocado-curmale\/\">trufele cremoase de ciocolata cu avocado si curmale<\/a>. Acopera-l cu un strat generos de frisca de cocos si orneaza cu ciocolata neagra rasa si cateva fructe de padure &#8212; zmeura, afine sau mure merg minunat, pentru ca aciditatea lor echilibreaza bogatia ciocolatei.
