Sunt o reteta de post usoara, sanatoasa si surprinzator de apropiata de scoicile St. Jacques: ciupercile imita textura, iar algele si uleiul de in dau acea aroma &#8220;oceanica&#8221; pe care o cautam. Nu era vegetarian, dar aveau o multime de preparate vegetariene, chiar si burgeri veggie. \ud83d\ude42 Ce mi-a atras atentia a fost meniul special: scoici St. Jacques cu piure de mazare si pancetta prajita. Suna foarte fancy, iar cei de langa noi fix asta si-au comandat. Asa ca atunci mi-a venit ideea sa fac scoici de post! Da, e posibil sa faci scoici vegane, iar ciupercile King Oyster sunt perfecte pentru asta: au o textura ideala pentru a imita scoicile si chiar si forma lor ajuta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie si de ce conteaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta are trei parti simple, dar fiecare ingredient are un rol clar. Iata ce sa cauti la cumparaturi si de ce:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Ciuperci King Oyster (500 g)<\/strong> &#8212; alege exemplare groase si drepte, ca sa scoti cilindri uniformi de cca 2 cm. Tulpina compacta este cea care da textura &#8220;carnoasa&#8221; de scoica; palaria o pastrezi pentru alte mancaruri.<\/li><li><strong>2 foi de alge Nori<\/strong> &#8212; ele dau mirosul de mare. Ciupercile prind aroma marii direct de la alge in timpul marinarii.<\/li><li><strong>2 linguri ulei de in<\/strong> &#8212; l-am ales in locul uleiului normal pentru ca are deja o aroma &#8220;oceanica&#8221; care intareste iluzia de fructe de mare.<\/li><li><strong>500 g mazare congelata, 3 catei usturoi, \u00bd pahar lapte de soia neindulcit, 1 lingura ulei de masline<\/strong> &#8212; baza piureului. Algele Nori sunt bogate in compusi care dau gustul si mirosul caracteristic de mare, iar ciupercile, fiind poroase, absorb usor aceste arome cand stau presate intre foi. De aceea e bine sa le lasi la marinat peste noapte: cu cat stau mai mult, cu atat mirosul &#8220;de peste&#8221; se prinde mai bine de ele. Daca te grabesti, le poti lasa si doar cateva ore, insa nu se va simti la fel de intens. Piureul de mazare se pastreaza la frigider 2-3 zile intr-un recipient inchis si se incalzeste usor inainte de servire, eventual cu putin lapte de soia daca s-a ingrosat. Scoicile sunt cele mai bune proaspat prajite, asa ca lasa rumenirea lor si prajirea tofu-ului afumat pentru momentul mesei.
