In aceasta varianta vegana de post, am inlocuit carnea tocata cu tofu afumat maruntit la robot, iar la final adaug spanac proaspat pentru un plus de prospetime.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cautand inspiratie pentru retete pe Pinterest, am dat peste <a href=\"https:\/\/www.yellowblissroad.com\/tortellini-soup-with-italian-sausage-spinach\/\" target=\"_blank\" rel=\"noopener\">reteta<\/a> creata de Kristin de la Yellow Bliss Road, care m-a inspirat sa gatesc si eu o supa cu tortellini, insa in varianta mai sanatoasa, vegana (de post). Reteta originala continea carnea tocata de la carnati, pe care eu am inlocuit-o cu tofu afumat, maruntit la robot si mixat cu condimente. Asa pastrez gustul afumat si textura &#8220;carnoasa&#8221; din varianta clasica, dar fara niciun ingredient de origine animala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In cazul in care nu cunoasteti diferitele tipuri de paste italienesti, tortellini sunt acele paste in forma de buric, carora li se mai spune si ombilico in italiana. Sunt de obicei umplute cu carne tocata, branza sau ciuperci\/spanac in variantele vegane. Eu folosesc tortellini cu ciuperci, ca sa ramana totul de post. Cauta un tofu ferm, presat bine, nu unul moale (silken), pentru ca acela se va dezintegra in robot in loc sa capete textura granuloasa de carne tocata. Daca tofuul tau pare umed, infasoara-l intr-un prosop curat si apasa-l cateva minute inainte sa-l maruntesti, ca sa scapi de excesul de apa si sa se rumeneasca mai bine in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tortellini cu ciuperci<\/strong> sunt vedeta din farfurie. Ii gasesti refrigerati, congelati sau uscati, in diverse marimi. Verifica eticheta sa fie cu ciuperci sau spanac (deci de post), pentru ca multe variante au branza sau oua in compozitie. Nu ii fierbe separat: adaugati direct in supa, absorb din aroma bazei de rosii si se gatesc in 6-8 minute.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile decojite si zdrobite din conserva<\/strong> dau corp si aciditate supei. Alege o conserva cu rosii intregi sau zdrobite de calitate, fara prea multe adaosuri; cu cat rosiile sunt mai bune, cu atat baza supei este mai dulce si mai rotunda la gust. Le completez cu o lingura de pasta de tomate, care intensifica culoarea si gustul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele uscate<\/strong> (chimion, boia dulce, coriandru, piper, busuioc, oregano) construiesc stratul de aroma. Chimionul, boiaua si coriandrul merg in mixul de tofu ca sa imite gustul carnatilor, iar busuiocul si oregano se adauga in supa pentru nota italiana. Daca ai busuioc proaspat, va recomand sa-l folosesti la final, alaturi de verdeata.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanacul proaspat<\/strong> se adauga ultimul, dupa ce ai oprit focul. Caldura supei il oparesta usor, exact cat sa se inmoaie, dar sa ramana verde si vioi. Daca mixezi prea mult, obtii un piure si se pierde efectul &#8220;carnos&#8221;.<\/li>\n<li><strong>Rumeneste bine mixul de tofu.<\/strong> Lasa ceapa si usturoiul sa devina translucide, apoi adauga tofuul condimentat si gateste-l pana incepe sa se rumeneasca pe margini. Asa scoti maximum de aroma afumata.<\/li>\n<li><strong>Lasa supa sa fiarba 10 minute inainte de paste.<\/strong> Acest timp e cel in care rosiile, pasta de tomate si condimentele se leaga si baza isi pierde gustul de &#8220;conserva&#8221;.<\/li>\n<li><strong>Nu fierbe tortellini prea mult.<\/strong> Sunt gata in 6-8 minute, cand se ridica la suprafata si sunt moi, dar inca isi tin forma. Lasati prea mult, devin moi si se pot sparge.<\/li>\n<li><strong>Adauga spanacul cu focul oprit.<\/strong> Amesteca-l, pune capacul si lasa-l 1-2 minute la caldura reziduala: se inmoaie perfect, fara sa se fiarba excesiv.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Varianta cremoasa:<\/strong> daca ai pofta de o textura cremoasa, paseaza ingredientele cu blenderul (exceptand tortellini si tofu), apoi readu pastele in supa.<\/li>\n<li><strong>Alte verdeturi:<\/strong> spanacul poate fi inlocuit cu kale, mangold sau alta verdeata pe care o ai la indemana. Tine cont ca pastele continua sa absoarba lichid, asa ca a doua zi supa va fi mai densa; cand o reincalzesti, adauga putina supa de legume sau apa ca sa revina la consistenta dorita. Reincalzeste-o la foc mic, amestecand usor, ca tortellini sa nu se sparga.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca vrei sa o pregatesti in avans, iti recomand sa gatesti baza de supa cu tofu si rosii, dar sa adaugi tortellini si spanacul abia cand o servesti, ca sa ramana pastele al dente si verdeata proaspata. Pentru congelare, tot baza fara paste se comporta cel mai bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac supele consistente de acest gen, mai incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/supa-toscana\/\">supa toscana<\/a>, <a href=\"https:\/\/gourmandelle.com\/ro\/supa-lasagna\/\">supa lasagna<\/a> sau o <a
