Eu il fac in varianta vegana, cu fulgi de drojdie inactiva in loc de parmezan, pentru o textura matasoasa si un gust intens, aromat. Se serveste cald, ca fel principal.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Orezul este unul dintre ingredientele care nu imi lipseste niciodata din camara. Fac adesea pilafuri, risotto, diverse umpluturi pentru legume si il adaug chiar si in ciorbe. Reteta de azi combina doua dintre ingredientele mele preferate: orezul si ciupercile, intr-un fel de mancare pe care il pregatesc cand am pofta de ceva cald si reconfortant.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A fost inspirata de traditionala reteta italieneasca de risotto, care nu este vegana si contine de obicei unt si parmezan. Eu am folosit fulgi de drojdie inactiva pentru a inlocui cu succes parmezanul si am adaugat si putin vin alb pentru un plus de savoare. Boabele lui scurte si rotunde sunt bogate in amidon, iar acest amidon, eliberat treptat in timp ce amesteci, este cel care face risottoul cremos. Cauta pe eticheta mentiunea &#8220;arborio&#8221; sau &#8220;orez pentru risotto&#8221; si nu il spala inainte de gatit, pentru ca ai indeparta tocmai amidonul de care ai nevoie. Carnaroli este o alternativa la fel de buna, daca o gasesti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ciuperci<\/strong> &#8212; merg foarte bine ciupercile champignon taiate felii, asa cum apar in reteta. Cand le cumperi, alege ciuperci ferme, uscate la atingere, cu palaria inchisa; cele cu pete umede sau lamele foarte deschise sunt deja trecute. Nu le tine in apa, ci sterge-le cu un servetel umed, fiindca absorb lichidul ca un burete si nu se mai rumenesc cum trebuie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Supa de legume<\/strong> &#8212; cele 5 cani de supa sunt lichidul care gateste orezul si ii da gust, deci conteaza sa fie aromata. Daca folosesti cub sau supa concentrata, gusteaz-o intai si ajusteaza sarea la final, fiindca se mai concentreaza pe masura ce orezul absoarbe lichidul. Tine supa calda intr-o oala alaturata: adaugata fierbinte, nu intrerupe fierberea orezului si ajuta la o gatire uniforma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vin alb<\/strong> &#8212; cele o treime de cana de vin alb adauga aciditate si savoare si echilibreaza gustul pamantiu al ciupercilor. Alege un vin sec, pe care l-ai bea si la pahar; vinurile dulci dezechilibreaza preparatul. Se adauga dupa orez si se lasa sa se evapore un minut, ca alcoolul sa dispara si sa ramana doar aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgi de drojdie inactiva<\/strong> &#8212; acestia inlocuiesc parmezanul si dau acea nota savuroasa, usor branzoasa, fara niciun produs lactat. Se adauga la final, dupa ce ai luat cratita de pe foc, ca sa isi pastreze aroma. Pentru varianta vegetariana poti folosi in schimb parmezan ras, asa cum se face in mod traditional.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Nucsoara<\/strong> &#8212; jumatatea de lingurita de nucsoara este un detaliu mic care face diferenta: aduce o caldura discreta care merge superb cu ciupercile si cu cremozitatea orezului. Daca o ai intreaga si o razi pe loc, aroma este si mai intensa.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Adauga supa treptat, nu toata deodata.<\/strong> Reteta cere intai 3 cani, apoi restul dupa ce orezul a absorbit primul lichid. Acest ritm forteaza boabele sa elibereze amidonul incet, iar asta este secretul texturii cremoase. Daca torni toata supa odata, obtii mai degraba un pilaf decat un risotto.<\/li>\n<li><strong>Amesteca des, dar nu obsesiv.<\/strong> Amestecul ajuta orezul sa elibereze amidonul, insa o agitatie continua poate sparge boabele. O amestecare la fiecare minut-doua este suficienta.<\/li>\n<li><strong>Stii ca e gata cand textura devine matasoasa si cremoasa.<\/strong> Orezul trebuie sa fie fiert, dar inca putin ferm la mijloc, iar daca tragi lingura prin compozitie, aceasta se inchide lent la loc. Daca s-a uscat, mai adauga un polonic de supa calda.<\/li>\n<li><strong>Caleste ciupercile pana se rumenesc, nu pana lasa apa.<\/strong> Gatite cele 6 minute la foc mediu, ciupericle isi concentreaza gustul. Daca iti ramane, pune-l intr-un recipient etans si pastreaza-l la frigider 2-3 zile. La reincalzire are tendinta sa se intareasca, asa ca adauga putina supa de legume sau apa si amesteca la foc mic pana redevine cremos. Nu il recomand pentru congelare, fiindca textura matasoasa se pierde la decongelare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru a castiga timp, poti calii ceapa si ciupericle in avans si le poti tine la frigider, urmand sa adaugi orezul si supa abia la masa. Daca iti place orezul in toate formele, arunca o privire si peste <a href=\"https:\/\/gourmandelle.com\/ro\/risotto-cu-parmezan-conopida\/\">risotto cu parmezan si conopida<\/a> sau peste <a href=\"https:\/\/gourmandelle.com\/ro\/pilaf-cu-ciuperci\/\">pilaful cu ciuperci<\/a>. Iar daca esti fan ciuperci, ai putea iubi si <a href=\"https:\/\/gourmandelle.com\/ro\/paste-cu-ciuperci-pleurotus\/\">pastele cu ciuperci pleurotus<\/a>.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Nu uitati sa imi lasati un comentariu in cazul in care testati aceasta reteta.
