Ai toata aroma robusta a retetei autentice, dar fara niciun ingredient de origine animala, deci e perfecta pentru zilele de post sau pentru orice masa vegana consistenta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cuvantul &#8220;cacciatore&#8221; inseamna de fapt &#8220;vanator&#8221; in italiana, iar reteta clasica este o tocana gatita in stil vanatoresc, cu ierburi aromatice, ceapa, rosii, ardei grasi si vin. Exact asta imi place cel mai mult la reteta: da senzatia unei tocane bogate, &#8220;de duminica&#8221;, dar ramane usoara si potrivita pentru post. Sosul se ingroasa frumos in jurul feliilor de soia, iar maslinele kalamata si vinul rosu ii dau acel gust profund, mediteranean, care o scoate din categoria &#8220;mancare de post fara pretentii&#8221;.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele cheie si de ce conteaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Vedeta retetei este texturatul de soia felii, care inlocuieste puiul. Secretul nu e soia in sine, ci baita de condimente in care se inmoaie: apa, supa de legume, boia afumata, praf de usturoi si ceapa, coriandru, mustar praf, chimion si putin zahar brun. Feliile de soia se inmoaie in lichidul condimentat, apoi se rumenesc separat in tigaie inainte sa ajunga in sos. Rumenirea pe ambele parti creeaza o crusta usoara prin reactia Maillard, deci soia capata gust si o textura mai ferma, in loc sa ramana spongioasa. Se pastreaza la frigider intr-un recipient inchis 3-4 zile si se incalzeste usor pe aragaz, cu putina apa sau supa de legume daca sosul s-a ingrosat prea mult. Se congeleaza foarte bine pana la 2-3 luni, asa ca poti face o portie dubla si sa ai o masa de post gata pregatita.
