Este o reteta vegetariana satioasa, plina de aroma, perfecta cand vrei un fel principal cald si consistent, dar fara carne. Mai jos gasesti si varianta vegana (de post), fara oua sau lactate, cu ou de in si branza vegana.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Aceasta reteta usoara de vinete Parmigiana este de departe reteta mea preferata cu vinete. Este vegetariana, insa eu am facut mai jos si varianta vegana (de post), fara oua sau lactate, folosind seminte de in si branza vegana ca inlocuitori. Este genul de preparat care satura fara sa fie greu, se face intr-o singura tava mare si arata spectaculos cand il aduci la masa. In plus, se adapteaza usor: aceeasi metoda functioneaza perfect atat pentru varianta vegetariana cu parmezan si ou, cat si pentru cea vegana, de post.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Ingredientele de care ai nevoie<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Reteta se sprijina pe cateva ingrediente simple, iar felul in care le alegi conteaza mult pentru rezultatul final:<\/p>\n\n\n\n<ul class=\"wp-block-list\"><li><strong>Vanata<\/strong> &#8212; alege una mare, ferma, cu coaja lucioasa si fara pete moi. Vanatele proaspete au mai putine seminte si un gust mai dulce, mai putin amar.<\/li><li><strong>Faina, ou si pesmet<\/strong> &#8212; cele trei straturi ale panarii. Faina ajuta oul sa adere la felie, oul leaga pesmetul, iar pesmetul da crusta crocanta. Pentru varianta vegana, oul se inlocuieste cu un ou de in (1 lingura de seminte de in macinate + 4 linguri de apa).<\/li><li><strong>Condimente italienesti uscate<\/strong> &#8212; busuioc, oregano, rozmarin si cimbru, amestecate in pesmet, aromeaza fiecare felie inca dinainte de coacere.<\/li><li><strong>Sos de rosii (marinara)<\/strong> &#8212; baza umeda care leaga straturile. Un sos bun, cu putin usturoi si busuioc, face diferenta.<\/li><li><strong>Branza rasa<\/strong> &#8212; parmezan ras pentru varianta vegetariana sau branza vegana rasa pentru varianta de post. De aceea feliile se presara cu sare si se lasa sub greutate cel putin 30 de minute: sarea trage apa la suprafata, iar presiunea o elimina. Vanata astfel pregatita nu mai lasa apa in tava, se panneaza mai bine si iese crocanta, nu leoarcaita. Coacerea feliilor in cuptor la 200\u00b0C, nu prajirea in ulei, le rumeneste uniform si le pastreaza mai usoare, iar acoperirea tavii cu folie in prima parte a gratinarii lasa straturile sa se patrunda inainte sa rumenim branza deasupra.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi ca sa iasa perfecte<\/h2>\n\n\n\n<ul class=\"wp-block-list\"><li>Nu sari peste pasul cu sarea. Cele 30 de minute de scurgere sunt cheia unei texturi bune &#8212; fara ele, vinetele raman apoase.<\/li><li>Aseaza feliile intr-un singur strat pe tava, fara sa se suprapuna, ca sa se rumeneasca uniform si sa devina crocante.<\/li><li>Pentru varianta vegana, lasa amestecul de in cu apa sa stea cateva minute pana se formeaza gelul lipicios &#8212; abia atunci va lega pesmetul ca un ou.<\/li><li>Nu inneca preparatul in sos. Sunt un preparat versatil care merge la fel de bine intr-o cina de familie sau ca fel principal cand ai invitati.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Pastrare si pregatire din timp<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Vinetele Parmigiana se pastreaza foarte bine la frigider, in recipient inchis, 3-4 zile, iar aroma se intensifica dupa o zi. Le reincalzesti la cuptor, acoperite, ca sa nu se usuce crusta. Poti panna si coace feliile de vanata din timp, apoi sa asamblezi tava chiar inainte de gratinare &#8212; asa reduci mult din munca in ziua servirii.
