Nu ai nevoie de branza, oua sau smantana ca sa obtii acea textura bogata, asemanatoare ricottei. Mai jos iti explic de ce conteaza fiecare pas si cum sa eviti greselile clasice.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cand sa faci reteta asta<\/h2>\n\n\n\n<ul class=\"wp-list wp-block-list\">\n<li>Cand vrei un fel principal vegan care impresioneaza la o masa cu invitati, dar nu cere tehnica de restaurant.<\/li>\n<li>Cand ai pofta de paste consistente, dar vrei ceva mai interesant decat o farfurie obisnuita cu sos.<\/li>\n<li>Cand gatesti pentru cineva care nu mananca lactate sau oua si vrei totusi acel gust cremos de ricotta.<\/li>\n<li>Cand vrei sa pregatesti din timp si sa coci la cuptor exact inainte de servire.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pastele tip tub (Paccheri sau Cannelloni)<\/strong> sunt esentiale aici, pentru ca forma lor larga si goala pe interior tine umplutura. Fierbe-le strict al dente, adica cu un minut sau doua mai putin decat scrie pe pachet. Pastele continua sa se gateasca in cuptor, in sos, asa ca daca le fierbi complet de la inceput vor iesi prea moi si se vor rupe cand le umpli.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Caju crud inmuiat peste noapte<\/strong> este baza cremei. Inmuierea timp de cateva ore inmoaie nucile si le permite sa se transforme intr-o pasta fina la robot, fara urme granuloase. Daca ai uitat sa le inmoi, le poti fierbe 15 minute in apa, apoi le scurgi. Folosirea cajuului crud, nu prajit, pastreaza gustul neutru care imita ricotta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Tofu<\/strong> aduce structura si proteina in umplutura. Scurge-l bine inainte sa il pui in robot, ca sa nu lase prea multa apa si sa dilueze crema. Impreuna cu caju da acea textura densa, dar pufoasa, tipica unei umpluturi de ricotta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Fulgii de drojdie inactiva<\/strong> sunt cei care fac diferenta intre o crema fada si una cu gust de branza. Au o aroma usor saraturoasa, asemanatoare cu parmezanul, si sunt ingredientul clasic pentru a da nota umami in retetele vegane.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanacul<\/strong> se caleste scurt cu ceapa inainte de a fi adaugat in crema. Calirea elimina excesul de apa si concentreaza gustul, astfel incat umplutura sa ramana cremoasa, nu apoasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Rosiile proaspete curatate si zdrobite<\/strong> formeaza sosul. Le gatesti cu ceapa, usturoi si busuioc pana se leaga intr-un sos parfumat. Asa raman intregi cand le umpli si ajung la textura ideala dupa coacere.<\/li>\n<li><strong>Lasa pastele sa se raceasca putin inainte sa le umpli.<\/strong> Tuburile fierbinti se rup usor. Cand nu mai frig la atingere, sunt mai usor de manevrat.<\/li>\n<li><strong>Pulseaza crema, nu o transforma in piure complet.<\/strong> Dupa ce adaugi spanacul gatit, da doar cateva pulsuri scurte la robot. Vrei o textura cu corp, nu o pasta complet neteda.<\/li>\n<li><strong>Aseaza pastele intr-un singur strat.<\/strong> Daca le stivuiesti, cele de jos raman reci, iar cele de sus se usuca. Un singur strat asigura coacere uniforma.<\/li>\n<li><strong>Acopera bine pastele cu sos.<\/strong> Sosul de rosii pastreaza pastele umede in cuptor. Zonele neacoperite se usuca si se intaresc.<\/li>\n<\/ul>\n\n\n\n<p class=\"wp-block-paragraph\">Greseala cea mai frecventa este graba la fierbere: paste prea moi se rup la umplere si se faramiteaza in tava. A doua greseala este o umplutura prea apoasa, fie de la tofu nescurs, fie de la spanac care nu a fost calit suficient. Le reincalzesti in cuptor, acoperite cu folie, ca sa nu se usuce. Poti pregati totul din timp: umple pastele si aranjeaza-le in tava cu sos, apoi tine tava la frigider si coace-le la cuptor exact inainte de servire, adaugand cateva minute la timpul de coacere fiindca pleci de la rece.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Crema de tofu si caju se poate face si cu o zi inainte si tine la frigider. Sosul de rosii la fel. Asa, in ziua mesei nu iti ramane decat sa asamblezi si sa coci.
