Sunt reteta italieneasca de aperitiv originara din Sicilia, iar varianta de mai jos este complet vegana (de post): in loc de ou, orezul se leaga cu tarate de psyllium. E felul perfect prin care transformi orezul ramas de la un risotto sau pilaf intr-un snack pe care toata lumea il rapeste de pe platou.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Numele lor inseamna &#8220;portocale micute&#8221; si descrie perfect aspectul rotund si crusta portocalie data de pesmetul prajit. Eu folosesc cele mai bune rezultate cu risotto sau pilaf ramas de cateva zile in frigider, pentru ca amidonul s-a asezat si bilutele se modeleaza mult mai usor fara sa se desfaca la prajit. Orezul cald, proaspat fiert, e prea lipicios si moale, asa ca daca nu ai resturi, fierbe orezul cu o zi inainte si lasa-l sa se raceasca bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Pentru umplutura ai nevoie de o branza care se topeste frumos in centru. Folositi un brand cu branza vegana care se topeste (nu tofu!) sau testati <a href=\"https:\/\/gourmandelle.com\/ro\/branza-mozzarella-vegana\/\">reteta mea de mozzarella vegana<\/a>. Daca nu tii post, poti folosi si mozzarella obisnuita, taiata cubulete. Important e sa ramana o branza care se intinde, ca sa ai acel miez cremos in momentul in care musti din biluta.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum legi bilutele fara ou<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">In varianta clasica, arancini se trec prin ou batut inainte de pesmet. Aici taratele de psyllium amestecate cu apa preiau exact acest rol: psyllium-ul formeaza un gel lipicios care prinde pesmetul de biluta si tine crusta lipita in timpul prajitului. Asta face reteta potrivita si pentru post, si pentru cei care nu consuma oua.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Lucreaza cu trei boluri, asa cum se face si la panarea clasica: primul cu faina, al doilea cu gelul de psyllium (2 linguri tarate la 6 linguri apa), iar al treilea cu pesmet Panko amestecat cu fulgi de drojdie inactiva. Faina usuca suprafata orezului ca gelul sa se prinda, gelul lipeste pesmetul, iar pesmetul Panko da acea crusta extra-crocanta. Orezul nu se mai lipeste de palme si bilutele ies netede si compacte.<\/li><li>Inchide bine branza in mijloc. Aplatizeaza orezul in palma, pune cubul de branza la centru si strange orezul peste el ca sa nu ramana fisuri prin care sa curga branza topita la prajit.<\/li><li>Tine temperatura uleiului la aprox. 170 grade C. Prea fierbinte si crusta se arde inainte sa se incalzeasca miezul; prea rece si bilutele absorb ulei si raman moi. Daca nu ai termometru, arunca un firimitur de pesmet: trebuie sa sfaraie imediat, nu sa se arda.<\/li><li>Nu aglomera tigaia. Prajeste in transe mici si intoarce bilutele ocazional ca sa se rumeneasca uniform pe toate partile.<\/li><li>Dupa prajire, scurge-le pe prosop de hartie ca sa absoarba uleiul in exces si sa ramana crocante.<\/li><\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Cu ce le servesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Arancini se servesc calde, cu un sos de rosii alaturi pentru inmuiat si patrunjel proaspat tocat deasupra. Un sos marinara simplu este alegerea clasica, dar merg minunat si cu un sos rag\u00f9 mai consistent, ca cel pe care il fac la <a href=\"https:\/\/gourmandelle.com\/ro\/paste-bolognese-vegane-de-post\/\">pastele Bolognese vegane<\/a>. Pune-le pe un platou ca aperitiv la o masa cu prietenii sau alaturi de o salata verde pentru un pranz lejer.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum le pastrezi si le reincalzesti<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Arancini sunt cei mai buni proaspat prajiti, cat sunt inca crocanti si cu miezul moale. Daca ti-au ramas, pastreaza-i intr-un recipient inchis in frigider 2-3 zile. Pentru reincalzire, evita cuptorul cu microunde, care le inmoaie crusta; pune-le in schimb in cuptor la aprox. 180 grade C sau in airfryer cateva minute, pana redevin crocante la exterior.
