Se gateste intr-o singura tigaie, fara capac, si iese cremoasa, dar cu boabele intregi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Eu sunt sincera cu voi: in opinia mea, paella autentica ramane cea cu fructe de mare. Tocmai de aceea, cand am facut aceasta paella vegetariana, nu am vrut sa elimin pur si simplu ingredientele cu carne din reteta si sa ma opresc acolo. Am vrut sa imi iasa cat mai bine atat textura de fructe de mare, cat si aroma lor. Raspunsul a venit rapid cand mi-am amintit de reteta mea de scoici vegane, facute cu &#8220;fratele&#8221; mai mare al ciupercilor Pleurotus, king oyster.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Asa am ajuns sa folosesc doar cozile ciupercilor Pleurotus, partea tare, taiate in discuri mici care, dupa ce se rumenesc, capata o muscatura ferma surprinzator de apropiata de cea a scoicilor. Foaia de Nori uscata si faramitata aduce nota aceea sarata, de mare, iar rezultatul mi-a placut la nebunie. Eu folosesc doar cozile, partea tare si carnoasa, taiate in discuri mici, fiindca ele isi pastreaza forma si capata acea muscatura ferma de scoica. Restul ciupercii il pastrez pentru burgerii vegani pulled &#8220;pork&#8221;. Cand le cumperi, alege ciuperci ferme, cu palaria intacta si fara pete umede sau inchise la culoare; cele moi vor lasa prea multa apa in tigaie.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Orez Arborio<\/strong> &#8211; este orezul cu bob scurt si bogat in amidon folosit la risotto, iar aici lucreaza in favoarea ta: elibereaza amidon care leaga paella si o face cremoasa, dar boabele raman intregi. Nu il spala inainte de gatit, fiindca tocmai amidonul de la suprafata dai cremozitatea. Daca nu gasesti Arborio, orice orez cu bob rotund si scurt merge.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Sofran<\/strong> &#8211; condimentul care da culoarea aurie si parfumul inconfundabil de paella. Un singur praf este suficient, fiindca este foarte puternic. Pentru aroma maxima, eu il las sa fiarba in lichid impreuna cu vinul si boiaua, ca sa apuce sa isi cedeze culoarea si gustul in tot orezul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Foaie de Nori<\/strong> &#8211; alga uscata folosita de obicei la sushi, pe care o usuc putin si o faramitez peste paella. Ea este secretul aromei de mare: are acel gust iodat, sarat, care convinge papilele ca mananca ceva pescaresc. Pastreaz-o intr-un loc uscat, fiindca absoarbe rapid umezeala si isi pierde din crocanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ardei rosii Capia<\/strong> &#8211; feliati, aduc dulceata si culoare. Ii caleste impreuna cu ceapa si usturoiul, ca sa se inmoaie si sa isi elibereze zaharurile inainte de a adauga lichidul. Alege ardei carnosi, grei in mana si cu pielita lucioasa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Vin alb uscat<\/strong> &#8211; deglazeaza tigaia si adauga aciditate care echilibreaza dulceata ardeilor si a mazarii. Foloseste un vin pe care l-ai bea si tu; alcoolul se evapora in cele 10 minute de fierbere si ramane doar aroma.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Masline verzi umplute si rosii uscate<\/strong> &#8211; aduc sarea si umami-ul care intregesc profilul de mare. Maslinele dau o nota sarata persistenta, iar rosiile uscate concentreaza un gust intens, aproape dulce-acrisor. Daca le inghesui in tigaie sau le adaugi prea devreme cu legumele, vor fierbe in propria apa si vor iesi moi, nu rumene.<\/li>\n<li><strong>Nu te grabi cu sofranul si boiaua.<\/strong> Lasa lichidul cu vin, boia, chili si sofran sa dea in clocot, apoi micsoreaza flacara si lasa 10 minute. Acest pas extrage culoarea si aroma condimentelor inainte sa adaugi orezul.<\/li>\n<li><strong>Gateste fara capac.<\/strong> Paella se face descoperita, ca lichidul sa se reduca treptat si orezul sa se imbibe. Amesteca o singura data, dupa primele 10 minute, ca sa distribui uniform boabele, apoi netezeste suprafata si lasa-l in pace.<\/li>\n<li><strong>Lasa paella sa se odihneasca 5 minute.<\/strong> Dupa ce opresti focul, repausul lasa orezul sa absoarba ultimul lichid si sa se aseze. Orezul se va intari putin la rece, asa ca atunci cand o reincalzesti adauga o lingura-doua de supa de legume sau apa si incalzeste-o la foc mic, acoperita, ca boabele sa se reumfle fara sa se usuce. Poti gati legumele si condimentele cu o zi inainte si pastra ciupercile rumenite separat, urmand sa adaugi orezul si lichidul abia in ziua servirii, ca sa pastrezi textura perfecta a boabelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca ti-a placut combinatia de ciuperci si arome care imita fructele de mare, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/scoici-vegane-cu-piure-de-mazare\/\">scoicile vegane cu piure de mazare<\/a>, sursa de inspiratie pentru aceasta paella. Cozile de Pleurotus le poti folosi aici, iar restul ciupercii in <a href=\"https:\/\/gourmandelle.com\/ro\/burger-vegan-pulled-pork\/\">burgerii vegani pulled &#8220;pork&#8221;<\/a>.
