Se servesc cu ketchup picant si un sos de usturoi cremos. Asa scap de zecile de mililitri de ulei in plus si tot obtin acea crusta aurie pe care o caut. Va recomand sa folositi cartofi albi cu coja subtire, ca sa ii puteti praji cu totul, fiindca textura lor este mult mai buna astfel.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Cand sunt cartofii noi in sezon, dau fuga la piata si cumpar niste cartofi noi micuti special pentru reteta asta. Mie imi plac mai mult asa, parca sunt mai dulci decat cartofii obisnuiti, iar coaja lor subtire ramane fina dupa rumenire. Va recomand cartofi albi cu coja subtire, ca sa ii puteti praji cu totul fara sa ii curatati. Cartofii noi, micuti, de sezon sunt preferatii mei, fiindca au coaja fina si un gust mai dulce. Cauta cartofi fermi, fara pete verzi si fara coltisori incoltiti. Taie-i cuburi de marime egala, ca sa se fiarba si sa se rumeneasca uniform.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ulei de masline<\/strong> &#8212; patru linguri sunt suficiente pentru rumenire. Foloseste un ulei de masline cu gust bun, fiindca aroma lui se simte in farfurie. Incinge-l bine inainte sa adaugi cartofii: daca tigaia nu e destul de fierbinte, cartofii absorb uleiul in loc sa se rumeneasca, si raman mai degraba moi decat crocanti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Boia rosie afumata<\/strong> &#8212; ingredientul care face diferenta. Boiaua afumata (pimenton de la Vera, in versiunea spaniola) da aroma caracteristica de patatas bravas. Nu o inlocui cu boia dulce obisnuita, fiindca pierzi nota afumata. Daca o ai si in varianta picanta, poti doza singura intensitatea, dar versiunea afumata dulce merge perfect alaturi de chili.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Chili praf<\/strong> &#8212; da picanteala discreta cartofilor. O lingurita e suficienta pentru un picant moderat. Daca gatesti pentru cineva sensibil la iute, redu-l la jumatate sau scoate-l de tot &#8212; boiaua afumata singura tot da gust.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Usturoi<\/strong> &#8212; doi catei pisati intra in sosul cremos. Pentru cea mai buna aroma, piseaza-l proaspat, nu folosi usturoi granulat. Daca vrei un gust mai bland, poti calma usturoiul lasandu-l cateva minute in maioneza inainte de servire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Maioneza vegana<\/strong> &#8212; baza sosului de usturoi. Doua linguri amestecate cu usturoi pisat dau un dressing cremos, similar cu aioli, dar complet vegetal. Alege o maioneza vegana cu gust neutru, ca sa lasi usturoiul si cartofii in prim-plan.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjel proaspat<\/strong> &#8212; nu e doar decor. Cele 3 linguri de patrunjel maruntit adauga prospetime si o nota verde care echilibreaza cartofii rumeniti si sosul gras. Daca ii fierbi prea mult, se desfac in tigaie cand ii rumenesti. Vrei sa se inmoaie putin pe dinauntru, dar sa isi pastreze forma de cub.<\/li>\n<li><strong>Lasa-i sa se raceasca inainte de prajire.<\/strong> Cartofii reci si zvantati se rumenesc mult mai bine. Daca ii arunci uzi si fierbinti in tigaie, aburul impiedica formarea crustei aurii.<\/li>\n<li><strong>Nu-i misca prea des.<\/strong> Lasa-i 2-3 minute pe fiecare parte inainte sa amesteci, ca sa prinda culoare. Stii ca sunt gata cand marginile sunt aramii si crocante, iar cuburile sfaraie in ulei.<\/li>\n<li><strong>Incinge bine tigaia.<\/strong> Adauga cartofii doar dupa ce uleiul e fierbinte. Asa se sigileaza rapid la exterior in loc sa absoarba ulei.<\/li>\n<li><strong>Pune ketchup-ul si sosul de usturoi la final.<\/strong> Toarna-le peste cartofii fierbinti chiar inainte de servire, ca sa nu inmoaie crusta.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Substitutii si variatii<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>La cuptor sau la air fryer.<\/strong> Daca vrei si mai putin ulei, rumeneste cartofii in cuptor la 220\u00b0C sau in air fryer, intorcandu-i la jumatate, pana sunt aurii.<\/li>\n<li><strong>Versiune autentica, in baie de ulei.<\/strong> Pentru gustul traditional spaniol, prajeste cartofii in ulei mult, asa cum cere reteta originala. Daca iti raman, pastreaza-i intr-un recipient inchis la frigider 2-3 zile. Pentru a-i reincalzi, evita cuptorul cu microunde, fiindca ii face moi &#8212; pune-i mai degraba din nou in tigaie sau in air fryer cateva minute, ca sa isi recapete crocanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Poti pregati cativa pasi in avans: fierbe cartofii cu cateva ore inainte si tine-i la frigider, gata de rumenit cand ai nevoie de ei. Sosul de usturoi din maioneza vegana si usturoi pisat se face si el din timp si se pastreaza la rece pana la servire.
