Reteta este vegana, gata in aproximativ o ora si este perfecta ca aperitiv sau gustare.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi plac la nebunie crochetele. Au o textura perfecta &#8212; crocante pe dinafara, moi si cremoase pe dinauntru &#8212; care te face sa vrei sa le mananci una dupa alta. Recunosc ca nu sunt tocmai un preparat de dieta, dar din cand in cand merita din plin! Reteta aceasta este inspirata din croquetas spaniole, pe care le-am veganizat folosind branza vegana si tarate de psyllium in loc de ou.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Le-am facut prima data cand exploram retete spaniole si am ramas uimita cat de simplu este procesul. Cateva ingrediente de baza, putin timp la frigider si rezultatul este spectaculos. Foloseste cartofi cu pasta fainoasa (de exemplu soiuri pentru fiert) &#8212; acestia fac un piure mai cremos si mai usor de modelat. Se decojesc, se taie bucati mari si se fierb aproximativ 20 de minute pana se inmoaie bine.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Branza vegana rasa<\/strong> &#8212; adauga cremozitate si gust sarat amestecului de cartofi. Alege o varianta care se topeste bine; branzeturile vegane pe baza de caju sau tapioca functioneaza excelent in aceasta reteta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Spanacul proaspat<\/strong> &#8212; o cana de spanac proaspat adauga culoare, nutrienti si o nota subtila de gust. Nu este nevoie sa il fierbi in prealabil &#8212; se va inmuia usor cand il amesteci in piureul cald de cartofi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Patrunjelul maruntit<\/strong> &#8212; doua linguri de patrunjel proaspat adauga prospetime si o aroma erbacee care completeaza bine restul ingredientelor.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Taratele de psyllium<\/strong> &#8212; inlocuitorul de ou in aceasta reteta vegana. Combinate cu apa, formeaza un gel lipicios care tine crochetele imbracate si ajuta pesmetul sa adere perfect. Doua linguri sunt suficiente pentru intreaga cantitate.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Pesmetul Panko<\/strong> &#8212; pesmetul japonez cu granule mari este cheia crustei extra-crocante. Panko absoarbe mai putin ulei decat pesmetul clasic si creeaza o textura mai aerata si mai crocanta.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Mustarul si usturoiul<\/strong> &#8212; intra in amestecul umed (alaturi de psyllium) si adauga profunzime de gust crustei. O lingura de mustar si un catel de usturoi presat sunt suficiente.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> &#8212; doua linguri se adauga in piureul de cartofi pentru a face amestecul mai cremos si mai usor de modelat.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Lasa crochetele la frigider cel putin 30 de minute<\/strong> inainte de a le pane. Amestecul rece este mult mai ferm si mai usor de acoperit cu pesmet fara sa se desfaca.<\/li>\n<li><strong>Prajeste uleiul la 180\u00b0C<\/strong> &#8212; daca temperatura este prea mica, crochetele absorb prea mult ulei si devin grase; daca e prea mare, se ard la exterior inainte sa se incalzeasca bine in interior. Foloseste un termometru de bucatarie daca ai unul.<\/li>\n<li><strong>Nu aglomera tigaia<\/strong> &#8212; praji crochetele in reprize de 4-5 bucati ca sa nu scada temperatura uleiului. Efectul de legare este similar.<\/li>\n<li><strong>Pesmetul Panko<\/strong> &#8212; poti folosi pesmet clasic daca nu ai Panko, insa crusta va fi mai putin aerata. Pentru o varianta fara gluten, foloseste pesmet din orez sau migdale macinate.<\/li>\n<li><strong>Umplutura<\/strong> &#8212; poti adauga ciuperci sotate, ardei copt maruntit sau chiar fasole neagra in amestecul de cartofi pentru variatii de gust interesante.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>In avans:<\/strong> poti forma crochetele si le poti tine acoperite la frigider pana la 24 de ore inainte de a le pane si praji. Amestecul de cartofi (neformat) se poate pastra la frigider pana la 2 zile.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Crochetele prajite<\/strong> se pastreaza la frigider intr-un recipient inchis pana la 2 zile. Reincalzeste-le la cuptor sau in air fryer la 180\u00b0C timp de 8-10 minute pentru a recapata crusta crocanta &#8212; nu le pune la microunde, altfel devin moi.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Congelare:<\/strong> crochetele formate si panate (dar neprajite) se pot congela pe o tava timp de 2 ore, dupa care se transfera intr-o punga de congelare. Se prajesc direct din congelator in ulei incins la 180\u00b0C, adaugand circa 1-2 minute extra la timp.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Daca iti plac retetele cu cartofi, incearca si <a href=\"https:\/\/gourmandelle.com\/ro\/draniki-chiftele-cu-cartofi-si-ciuperci\/\">draniki &#8212; chiftele cu cartofi si ciuperci<\/a>, <a href=\"https:\/\/gourmandelle.com\/ro\/tortilla-cu-cartofi\/\">tortilla cu cartofi<\/a> sau <a href=\"https:\/\/gourmandelle.com\/ro\/batata-harra-cartofi-picanti-libanezi\/\">batata harra &#8212;
