Se gateste la tigaie sub capac, pana capata o crusta aurie pe ambele parti. Iese pufoasa, satioasa si complet de post.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Imi place la nebunie cum mi-a iesit aceasta reteta de tortilla cu cartofi! In timp ce cautam retete pe care sa le veganizez ca parte din provocarea bucatariei spaniole din aceasta luna, am descoperit ca tortilla spaniola &#8212; aceasta cu cartofi &#8212; este complet diferita de tortilla pe care o stiam eu, cea mexicana, care e de fapt o lipie. Asa ca sa nu le incurcati asa cum am facut eu pana acum.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">De obicei acest amestec se prajeste in putin ulei si se serveste rece, ca aperitiv. Totusi, eu prefer sa o mananc cat inca e fierbinte, cu niste smantana vegana pe deasupra. Cand o amesteci cu apa, amidonul si proteinele din naut formeaza o pasta care se inchega la caldura, exact ca un ou batut. Cauta faina cu o culoare galben-pal uniforma si miros proaspat, putin ierbos; daca miroase ranced, e veche si va da un gust amar. Tine-o intr-un recipient inchis, ferit de umezeala, fiindca atrage usor apa.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Cartofii<\/strong> sunt corpul tortillei. Aici merg cei mari, decojiti si feliati subtire, ca sa fiarba uniform si sa se lege bine in amestec. Feliile subtiri, de grosimea unei monede, se patrund repede si nu lasa bucati tari in mijloc. Alege cartofi fermi, fara pete verzi sau coltisori &#8212; petele verzi inseamna expunere la lumina si dau un gust amarui.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Ceapa<\/strong> feliata subtire aduce dulceata si profunzime. Secretul e sa o calesti pana devine translucida inainte sa adaugi cartofii &#8212; asa pierde gustul intepator de ceapa cruda si lasa in loc o aroma dulceaga. Daca o lasi prea putin pe foc, se va simti crud in felia finala.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de masline<\/strong> apare in doua roluri: putin in umplutura, pentru calit, si o cantitate mai generoasa la prajit, pentru crusta aurie. Pentru gatit la tigaie nu iti trebuie cel extravirgin de calitate maxima &#8212; pastreaza-l pe acela pentru salate &#8212; ci unul bun de prajit, care suporta caldura.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Condimentele<\/strong> &#8212; sare, piper alb, boia dulce si praf de usturoi &#8212; dau caracter amestecului de &#8220;oua&#8221;. Piperul alb se topeste in compozitie fara sa lase puncte negre, iar boia dulce ajuta si la culoarea aurie. Adauga-le in blender odata cu faina de naut, ca sa se distribuie uniform.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Sfaturi<\/h2>\n\n\n\n<ul class=\"wp-block-list\">\n<li><strong>Scurge bine si raceste cartofii inainte sa-i amesteci.<\/strong> Daca ii torni fierbinti si zemosi peste compozitia de naut, o dilueaza si tortilla nu se mai leaga. Lasa-i sa se zvante cateva minute &#8212; asa amestecul ramane gros.<\/li>\n<li><strong>Blenduieste amestecul de naut pana e neted si lipicios, vreo 2 minute.<\/strong> Aceasta textura lipicioasa e semnul ca proteinele s-au activat si vor lega tortilla. Daca ramane apos, mai lasa-l in blender.<\/li>\n<li><strong>Gateste sub capac la foc mediu, nu mare.<\/strong> Capacul tine aburul inauntru si gateste tortilla pana in mijloc, in timp ce focul mediu ii rumeneste baza fara sa o arda. Stii ca e gata sa o intorci cand marginile devin aurii si se desprind usor de tigaie.<\/li>\n<li><strong>Intoarce-o cu ajutorul unei farfurii mari.<\/strong> Pune o farfurie peste tigaie, rastoarna tortilla pe ea, apoi aluneca-o inapoi in tigaie pe partea cealalta. Ai grija sa nu te frigi cu uleiul fierbinte. Mai 5 minute si ai crusta uniforma pe ambele fete.<\/li>\n<li><strong>Nu sari peste calirea cepei.<\/strong> Greseala clasica e sa adaugi ceapa cruda direct in amestec &#8212; ramane intepatoare si aspra. Laptele vegetal da o textura ceva mai cremoasa amestecului de &#8220;oua&#8221;; ai grija sa fie neindulcit, ca sa nu strice gustul savuros.<\/li>\n<li><strong>Joaca-te cu condimentele.<\/strong> Boiaua dulce poate fi inlocuita partial cu boia afumata pentru o aroma mai intensa, sau adauga putin turmeric pentru o culoare si mai galbena, apropiata de cea a oualor.<\/li>\n<li><strong>Adauga legume.<\/strong> Poti strecura in compozitie ardei copt taiat cubulete sau spanac calit, pentru o tortilla mai colorata si mai consistenta.<\/li>\n<li><strong>Schimba garnitura.<\/strong> In loc de smantana vegana, merge si cu un sos de iaurt vegetal cu usturoi sau pur si simplu cu patrunjel proaspat tocat din belsug deasupra.<\/li>\n<\/ul>\n\n\n\n<h2 class=\"wp-block-heading\">Depozitare si preparare in avans<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Tortilla cu cartofi se pastreaza foarte bine la frigider, intr-un recipient inchis, 3-4 zile. O poti manca rece, feliata, ca aperitiv, sau o reincalzesti scurt la tigaie ca sa-si recapete crusta.
