Reteta de mai jos este una vegana (de post), fara oua sau lapte, si se serveste cu sos de ciocolata sau cu dulce de leche. Eu le-am facut cu amestec de zahar si scortisoara pentru ca asa imi plac cel mai mult, dar daca vrei sa ramai fidela versiunii spaniole clasice, le poti tavali doar in zahar pudra.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Despre ingrediente<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Faina<\/strong> este coloana vertebrala a aluatului. Cele 150 g de faina alba se trec prin sita inainte de a fi combinate cu lichidele, ca sa nu ramana cocoloase si ca aluatul sa fie neted. Trecerea prin sita aereaza faina, iar asta ajuta churros sa iasa mai usori, nu compacti.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Apa fierbinte<\/strong> este cea care leaga totul. Acesta este de fapt un aluat oparit, asemanator cu cel pentru choux: apa adusa la fierbere gelatinizeaza partial amidonul din faina, iar asta da churros structura aceea elastica la interior si crusta crocanta la exterior. Tocmai de aceea lichidul trebuie sa fie fierbinte, nu caldut.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Uleiul de cocos topit<\/strong> tine loc de unt si aduce grasimea care face aluatul fraged. Pentru ca este o reteta vegana, nu folosim unt obisnuit; o lingura de ulei de cocos topit (sau unt vegan) este suficienta. Adauga-l dupa ce ai oprit focul, ca sa nu se separe.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Praful de copt<\/strong> da un plus de aerare, iar <strong>extractul de vanilie<\/strong> si <strong>varful de sare<\/strong> rotunjesc gustul. Sarea, desi pare in dezacord cu un desert, scoate in evidenta dulceata si echilibreaza aluatul.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\"><strong>Zaharul pudra si scortisoara<\/strong> formeaza invelisul final. Daca nu ai termometru, arunca o bucatica mica de aluat &#8212; trebuie sa sfaraie si sa urce la suprafata in cateva secunde.<\/li><li><strong>Prajeste in serii mici.<\/strong> Daca aglomerezi oala, temperatura uleiului scade brusc si churros nu mai ies crocanti. Lasa loc intre ele.<\/li><li><strong>Stii ca sunt gata cand<\/strong> sunt aurii uniform si au crusta vizibil ferma &#8212; de obicei in jur de un minut. Cel mai des ii servesc cu un sos de ciocolata in care sa-i pot inmuia, dar merg minunat si alaturi de <a href=\"https:\/\/gourmandelle.com\/ro\/dulceata-de-lapte-dulce-de-leche\/\"><strong>dulce de leche<\/strong><\/a>, acel caramel cremos care le scoate si mai mult in evidenta dulceata. Daca ii faci pentru musafiri, pune ambele sosuri pe masa si lasa-i pe fiecare sa aleaga.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">Cum se pastreaza<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Churros sunt la apogeu in prima ora dupa prajire, cat crusta este inca crocanta. Daca ti-au ramas, ii poti pastra intr-un recipient inchis la temperatura camerei o zi, dar isi vor pierde din textura. Cel mai bine ii reincalzesti cateva minute in cuptor sau in air fryer la 180\u00b0C, ca sa redevina crocanti &#8212; microundele ii inmoaie. Aluatul crud nu se preteaza la pastrare indelungata, asa ca ideal este sa prajesti tot deodata si sa servesti pe loc.<\/p>\n\n\n\n<figure class=\"wp-block-image size-full\"><img loading=\"lazy\"
